Creamy Herbed Tomato-Arugula Pasta Salad with Bacon image

This is the creamy, delicious dish you get when you cross a BLT with a pasta salad.

Kosher salt and freshly ground black pepper
8 slices bacon, finely chopped
1/3 cup mayonnaise
1/4 cup chopped fresh basil
3 tablespoons sour cream
2 tablespoons finely chopped fresh chives
2 tablespoons chopped fresh parsley
1 1/2 tablespoons fresh lemon juice
8 ounces dried ziti
3 cups loosely packed arugula
3 medium vine ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Put the bacon in a large, cold skillet then cook over medium heat, stirring occasionally, until crisp, about 10 minutes. Transfer to a paper-towel-lined plate to drain. Set aside.
  • Whisk together the mayonnaise, basil, sour cream, chives, parsley, lemon juice, 1/2 teaspoon salt and a few grinds pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the arugula and tomatoes to the bowl and toss to combine. Season with salt and pepper and top with the bacon. The pasta salad is best if served right away.

  • Stir together tomatoes, sugar, and herbs in a large bowl until combined well. Cook pasta in boiling salted water until al dente, then drain. Add hot pasta to tomato mixture. Cook garlic in olive oil in a 1-quart saucepan over moderately high heat, stirring, 1 minute. Add garlic with oil to pasta and tomatoes and toss to combine. Season with salt and pepper.

1 ounce fresh basil leaf, chopped to yield 1/2 cup
12 ounces fresh cherry tomatoes, halved to yield 2 cups
12 ounces farfalle pasta, fusilli

Steps:

  • Whisk together vinegar, capers and garlic.
  • Add oil in a slow, steady stream, whisking until emulsified.
  • Stir in herbs, mozzarella, and tomatoes.
  • Let stand at room temperature for 15 to 30 minutes, stirring occasionally.
  • Meanwhile, cook pasta in a large pot of boiling water, according to package directions.
  • Reserve 1/4 cup pasta water and drain pasta in a colander.
  • Immediately add hot pasta and reserved cooking water to marinated mozzarella mixture.
  • Let stand 1 minute to soften cheese.
  • Gently toss pasta and cheese mixture.
  • Season with salt and pepper to taste.
  • Serve immediately, sprinkled with pine nuts.

10 plum tomatoes
1 tablespoon olive oil
3/4 teaspoon salt, divided
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1 medium green pepper, chopped
4 ounces part-skim mozzarella cheese, cubed
1/4 cup chopped onion
1/4 cup fat-free red wine vinaigrette dressing
3 cups cooked spiral pasta

Steps:

  • Core tomatoes and cut in half lengthwise. Place cut side up on a broiler pan; brush with oil. Combine 1/4 teaspoon of salt, basil, thyme and pepper; sprinkle over tomatoes. Turn tomatoes cut side down. Bake at 425° for 30-35 minutes or until edges are well browned. Cool slightly., Peel off skins and discard.   • In a large pot of boiling salted water, cook pasta until al dente according to package instructions. Drain and rinse pasta under cold water; leave in colander and set aside.
