Steps:
- In a large pan add the olive oil, garlic, artichokes, spices and water.
- Cook covered, stirring occasionally on low medium heat, until almost all the water evaporates and the artichokes are almost tender, approximately 15-20 minutes.
- Add the chopped Italian sausage a little water and cook on medium heat stirring occasionally until cooked through and tender.
- While the sausage is cooking, boil the pasta until al dente.
- To the pan add the cooked pasta and 1/4 cup of pasta water, cook tossing on high heat for about 30 seconds. Serve immediately sprinkled with parmesan cheese if desired. Enjoy!

Steps:
- Heat half the oil in a heavy saucepan over medium heat, and cook the sausages, using a fork to break up the meat, until they are browned, about 8 minutes.
- Add the garlic and cook an additional minute or two.
- Remove the sausage meat to a plate using a slotted spoon.
- Add the artichokes and remaining oil to the same pan that you cooked the sausages in, and cook over medium high heat until lightly browned, stirring as needed, about 12 minutes.
- Return the sausage to the pan and add the wine, and half a cup of water.
- Season with salt and pepper, and cook partly covered until the artichokes are very tender and the liquid has reduced and thickened.
- Heat a large pot of salted water to a boil.
- Cook your pasta of choice according to the package instructions until it is "al dente".
- Reserve a small cup of the pasta water, and drain the pasta.
- Return the pasta to the pot and add the sausage and artichoke mixture along with the parsley.
- Toss continuously over high heat, adding some pasta water to help loosen the mixture until it is piping hot, 2 or 3 minutes.
- Serve in individual bowls topped with grated Pecorino Romano cheese.
HERBY PROVENCAL BAKED PASTA WITH SOPRESSATA
Artichoke hearts, roasted red peppers and black olives are tossed with herby tomato sauce, pasta, sopressata and cheese and baked up bubbly.

- Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Heat the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the basil sprigs and stir in the chopped basil and parsley. Season with salt and pepper.
- Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and transfer it to a large bowl.
- Add the tomato sauce, artichokes, red peppers, sopressata, olives, half of the mozzarella and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. - Heat oven to 425 degrees and bring a large pot of heavily salted water to a boil. Cook fusilli according to package directions until 3 minutes shy of al dente. Reserve 3 cups pasta water, then drain.
- Meanwhile, in a large oven-proof skillet, heat oil in a large skillet over medium heat. Cook scallion whites until softened, about 5 minutes, then add garlic and cook another 1 minute. Stir in red-pepper flakes, and cook another 30 seconds.
- Whisk in 1 1/2 cups pasta water, cream cheese and goat cheese, and simmer, whisking, until smooth. - Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain pasta, reserving 1 cup pasta cooking liquid; return pasta to pot.

- Preheat oven to 350 degrees Fahrenheit.
- Cook the pasta according to package directions. Drain and set aside.
- Set a large oven-safe skillet over medium heat. Add olive oil. Once the oil, is hot, add onions and sauté until translucent, about 5 minutes. Add in garlic and sauté until fragrant, about 30 seconds.
- Add in the milk, half and half, Italian seasoning, and crushed red pepper.
- Simmer over medium heat until warmed through, but don't let the mixture boil as you don't want to scorch the milk.
- Once the milk is hot, add in 2-1/2 cups shredded cheese and stir to combine. You want the cheese to fully melt in a creamy sauce.
- Add in the cooked pasta and chopped artichokes and stir to fully combine. Taste the mixture and season with a desired amount of kosher salt and pepper.
- If you do not have an oven-safe skillet, transfer the pasta mixture to an 8-inch by 8-inch baking dish. Otherwise, you can bake the pasta right in the skillet.
- Top with remaining 1/2 cup of cheese and add to the oven. Bake until the top of the pasta is browned and bubbly, 10-15 minutes. Remove from the oven and serve hot.
- Note: You can also opt to first cook the pasta in the pan with water, drain and set aside. Then make the recipe as written. This helps cut down on dishes.

- Grill 6 sausages until cooked through (whilst making sauce)
- Pour 200ml of boiling water into a large pan, and add 1/2 chopped onion. Mix and add 2 tsp of Extra virgin olive oil. And 2 tbsp of Soya sauce.
- Add full can of chopped tomatoes and Mix well.
- Half fill a cup with boiling water and add 2 heaped tbsp of gravy granules and mix using a fork. Then pour into pan of sauce.
- Add oregano, chives, pepper, basil and any other herbs to your taste. these are optional however give the sauce a mixed flavour.
- Chop the grilled sausages to the size you want (we chopped ours quite small) and add to the sauce. Leave to simmer for about 10 minutes whilst preparing the pasta.
- Pour about a litre of boiling water into a pan and add pasta. Add salt and pepper and leave to boil at a moderate heat for 10 mins.
- Serve straight away.
