HOME FRIES WITH ONIONS

Home Fries With Onions image

The recipe has been handed down at least three generations and it always gets oohs and aahs from my family when I decide to make it. I either serve it with steak or ham chops. Be careful when cooking the potatoes as they sometimes pop right out of the skillet. One of those screen covers would work really well.

Time 1h45m

Yield 4 serving(s)

Number Of Ingredients 4

14 1/2 ounces canned sliced potatoes
1/8 teaspoon garlic powder
3 tablespoons margarine
1 large sweet onion

Steps:

  • Open cans and remove water.
  • Dump potatoes out on a paper towel and blot excessive moisture off.
  • Slice the onion and then chop it the other direction.
  • In a skillet on medium-high heat melt 1-tablespoon of margarine.
  • Saute the onion until tender.
  • Remove onion from skillet and set aside.
  • Add another tablespoon of margarine and melt it.
  • Spread melted margarine so it coats bottom of the skillet.
  • Place potato slices on to the skillet so each piece is touching the surface.
  • As potatoes brown (golden), turn them over.
  • (Since I double the recipe, I remove the browned potatoes and add more.
  • uncooked ones to the skillet as they all don't fit in the pan at once.).
  • Add the rest of the margarine to the skillet.
  • After all of the potatoes have reached a golden brown on both sides, add.
  • sauteed onions and fold into potatoes.
  • Sprinkle garlic powder over cooking potatoes.
  • Heat the onions & potatoes for another 20 minutes, flipping them every 5-minutes.
  • Serve. Yum!

Time 45m

Yield 2

Number Of Ingredients 9

3 large russet potatoes, peeled and quartered
2 tablespoons olive oil
1 tablespoon butter
Salt and freshly ground black pepper to taste
¼ teaspoon paprika
cayenne pepper to taste
1 pinch garlic powder
1 pinch onion powder
1 tablespoon Chopped fresh chives

Steps:

  • Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
  • Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.
  • As potatoes brown, toss them and keep turning them every few minutes until they are crusty and crispy-edged and a rich reddish-brown color, 10 to 12 minutes. If potatoes seem to be cooking too quickly, reduce heat to medium. Serve topped with chopped chives.

Kosher salt
5 slices bacon (about 4 1/2 ounces)
3 tablespoons vegetable oil, like soy, peanut, or corn

Freshly ground black pepper
1 tablespoon chopped fresh parsley leaves, optional

Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on 1 side, about 4 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, about 6 minutes or until well browned. Stir in the onions, heat through, and sprinkle with the parsley and cayenne, if desired. Transfer to a warm platter and crumble the bacon on top, serve. Copyright 2005 Television Food Network, G.P. BRIT'S CHEESY ONION HOME FRIES

Brit's Cheesy Onion Home Fries image

This twist on a breakfast favorite comes from my daughter Brittany, who is a cheese and onion lover. Great for lunch and as a dinner side also!

Provided by Karen..

Categories     Breakfast

Time 35m

Yield 6-8 serving(s)

Number Of Ingredients 7

4 large russet potatoes
4 tablespoons butter or 4 tablespoons canola oil, divided use
1/2 teaspoon salt, to taste
1/8 teaspoon fresh ground black pepper
2 cups shredded sharp cheddar cheese, divided use
1 small onion, sliced thin
parsley (to garnish) (optional)

Steps:

  • Microwave potatoes as you would for a baked potato, but cook until*slightly* underdone- 4 take 12-14 minutes on my microwave (or use leftover baked/cooked potatoes).
  • When cool enough to handle, quarter potatoes and then cut into about 1 inch pieces (we leave the skins on).
  • Heat 2 tbl of butter or oil in a large non-stick skillet (or if you just cooked bacon in the pan, you can reserve some of the bacon grease and use that to fry in).
  • On medium heat, add onions and cook until 1 or 2 minutes before adding potatoes, salt and pepper, stirring to combine.
  • Let cook for a few minutes, flipping or stirring gently, until onions are tender and potatoes are to desired crispness.
  • If necessary, add additional butter or oil to prevent sticking.
  • Remove home fries from pan and transfer into microwavable casserole dish.
  • Sprinkle with one cup of cheese and fold in gently.
  • Sprinkle remaining cup of cheese on top and microwave for 1 to 2 minutes until cheese is melted.
  • Sprinkle a bit of parsley on top, if desired.
