Honey mellows the bite of bourbon in this warming winter cocktail spiced with cinnamon and cloves.

Ingredients

4 ounces bourbon
2 tablespoons honey
2 tablespoons fresh lemon juice, plus 2 thinly sliced lemon rounds for serving
2 cinnamon sticks
4 whole cloves

Steps:

Bring 2 cups water to a boil in a small saucepan or tea kettle. Remove from heat and divide between two mugs. Divide bourbon, honey, lemon juice, cinnamon sticks, and cloves between mugs. Let stand 5 minutes, then stir and serve, garnished with lemon rounds.

Ingredients

2 tablespoons honey
6 tablespoons bourbon (or better yet, Apple Bourbon, in which case you'll use 1 tablespoon honey)
3x1/2" strip of lemon peel
1 cinnamon stick

Steps:

Stir 2 tablespoons honey and 1 cup hot water in a 2-cup measuring cup until honey dissolves. Add 6 tablespoons bourbon (or better yet, Apple Bourbon, in which case you'll use 1 tablespoon honey; for recipe, see below). Divide between 2 Toddy glasses. Twist a 3x1/2" strip of lemon peel over each drink, then add to glass. Stir each with a cinnamon stick and serve.
To make Apple Bourbon, combine a 750-milliliter bottle of bourbon, 4 cored, sliced Fuji apples, and 4 cinnamon sticks in a pitcher. Cover; chill for 3 days. Strain and sip or use in recipe above.

Brandy or Scotch also work well in a hot toddy, but the vanilla sweetness of good bourbon was our favorite-this time, at least.

1 wedge lemon
1 (2 inch) piece cinnamon stick
1 thin slice lemon

Steps:

Heat water in a glass measuring cup in the microwave for 2 minutes.
Place honey in a large mug. Add hot water and bourbon; stir until honey is dissolved. Squeeze lemon wedge into the mug and discard. Stir with cinnamon stick; leave in the mug. Drop the thin slice of lemon into the mug for garnish.
