MUSCOVADO SOY BISCUITS

Steps:
- Preheat oven to 400 degrees.with rack in center. In a medium bowl, sift together 1 1/2 cups flour, baking powder, baking soda, and salt. Add 1/2 cup chilled butter; using a pastry blender or your hands, combine until mixture is crumbly. Stir in enough apple juice to form dough moist enough to drop from a spoon.
- In a small bowl, stir together 1/2 cup flour, cinnamon, and sugar. Add remaining 3 tablespoons butter; mix until well combined.
- Drop a heaping tablespoon of dough on a parchment-lined baking sheet; crumble 1/2 teaspoon of topping into center. Top with another heaping tablespoon of dough; sprinkle on 1/2 teaspoon of topping. Repeat with remaining ingredients, spacing 2 inches apart. Bake until lightly browned, about 10 minutes. Serve with honey butter.
BUTTERMILK BISCUITS WITH HONEY BUTTER
Sweet honey butter, seasoned with a kiss of flaky sea salt, is the ultimate topping for these light-as-air biscuits.

- For the biscuits:
- Position rack in middle of oven and preheat to 425°F. Whisk sugar, baking powder, kosher salt, baking soda, and 3 cups flour in a large bowl. Cut in butter using a pastry cutter or 2 butter knives until pea-sized lumps form. Stir in buttermilk until a shaggy dough forms.
- Gather dough into a ball. On a lightly floured surface, press into an 8" square. Fold sides over like a letter. Turn 90º and fold sides again, forming a small square. Press or roll to an 8" square and repeat once, adding flour as needed to prevent sticking.
- Pat dough into a scant 3/4" round. Cut out rounds with 2 1/2" cutter; transfer to a parchment-lined rimmed baking sheet. Gather scraps and repeat patting and cutting (you should have 14). Freeze until chilled, about 15 minutes.
- Bake biscuits, rotating sheet halfway through, until golden brown, 22-24 minutes.
- For the Honey Butter:
- Stir butter, honey, and 2 tsp. sea salt in a medium bowl until well combined.
- Top biscuits with Honey Butter and sprinkle with sea salt; serve warm or at room temperature.

HONEY BUTTER BISCUITS
Calling all honey butter biscuits lovers! This recipe for cream cheese biscuits drenched in honey butter glaze is so delightful, flaky, and perfect in every way!

- To make your honey butter biscuits, start by preheating your oven to 450 degrees.
- Prepare a baking sheet by lining it with parchment paper. Set it aside.
- In a large mixing bowl, add the flour, baking powder, baking soda, and salt and whisk to combine.
- Add the chilled cream cheese and butter and cut them into the flour mixture using a pastry blender or a fork.
- Continue cutting the mixture until it resembles coarse sand with pea-sized pieces of butter and cream cheese remaining.
- Add in the buttermilk and stir until just combined.
- Turn the dough out onto a clean countertop and knead until a ball of dough forms.
- Use a rolling pin to roll the dough out to about ¾ inches in thickness.
- Use a 2-inch biscuit cutter to cut out 8 biscuits from your dough.
- Place the biscuits on the prepared baking sheet and bake in the preheated oven for about 11-12 minutes or until the edges start to turn golden brown.
- While the biscuits bake, whisk together the butter and the honey in a medium-sized saucepan over medium heat.
- Continue stirring your glaze until the butter is melted.
- Remove the glaze from the heat and set aside until the biscuits are fully baked.
- Remove the biscuits from the oven and immediately brush them with the glaze generously.
- Split the biscuits open and serve warm with extra honey butter glaze.
