How to Cook Beans and Chickpeas from Scratch image

Adapted from Cook's Illustrated's The Science of Good Cooking See post above if you wish to cook your beans in an Instant Pot or slow cooker.

1 lb. dried chickpeas or beans
3 tablespoons + 1.5 teaspoon kosher salt
1 small onion, halved through the core
1 bay leaf
1/4 cup olive oil
a few sprigs thyme, optional
1 clove garlic, smashed, optional
1 teaspoon, crushed red pepper flakes, optional

Steps:

  • Place the chickpeas or beans in a large bowl and cover with water by at least 3 inches. Add the 3 tablespoons of salt and stir to dissolve. Let sit at room temperature overnight or for 8 to 10 hours at least.
  • Drain, rinse and place in a large pot with the remaining 1.5 teaspoons of salt and the remaining ingredients. Cover with water by three inches. Bring to a boil, then lower heat and cook at a gentle simmer for about 45 minutes or until the beans are cooked through. Note: Add water as need to ensure the beans/chickpeas are completely covered with water the entire time. Also, times will vary considerably depending on the type and age of your beans. It may take more or less than 45 minutes.
  • Let beans cool in their cooking liquid. Discard thyme sprigs, bay leaf, and onion. Store beans in their cooking liquid for 5 to 7 days in the fridge or up to 3 months in the freezer.

2 tablespoons vegetable oil
2 onions, minced
2 cloves garlic, minced
2 teaspoons fresh ginger root, finely chopped
6 whole cloves
2 (2 inch) sticks cinnamon, crushed
1 teaspoon ground cumin
1 teaspoon ground coriander
salt
1 teaspoon cayenne pepper
1 teaspoon ground turmeric
2 (15 ounce) cans garbanzo beans
1 cup chopped fresh cilantro

Steps:

  • Heat oil in a large frying pan over medium heat, and fry onions until tender.
  • Stir in garlic, ginger, cloves, cinnamon, cumin, coriander, salt, cayenne, and turmeric. Cook for 1 minute over medium heat, stirring constantly. Mix in garbanzo beans and their liquid. Continue to cook and stir until all ingredients are well blended and heated through. Remove from heat. Stir in cilantro just before serving, reserving 1 tablespoon for garnish.

  • Prepare the chickpeas for cooking. Simply look through the beans and discard any rocks or anything that does not look like a chickpea.
  • Soak the chickpeas. You can either soak them overnight or try the quick soaking method. To soak overnight, put the chickpeas in a large bowl and add plenty of water to cover the chickpeas by a good 3 inches. Set aside for 24 hours. For the quick soak method, put the chickpeas in a pot and add 6 cups of water. Bring to a boil and cook for 2 minute. Turn the heat off, cover and let the chickpeas soak for 1 hour. Drain.
  • In a 2 1/2-quart slow cooker, put the chickpeas, 1/2 teaspoon baking soda, 7 cups water, a big pinch of kosher salt, bay leaf, and garlic. Cover and cook on high heat for 4 hours, or low heat for 6 to 8 hours, or until tender.
  • Add the chickpeas and 6 cups of water to the pressure cooker. Seal the lid shut. Select High Pressure and cook for 50 minutes. Allow the pressure cooker to naturally release for 10 minutes, then vent the remaining pressure and when the release valve drops, safely open the lid. (Be sure to review the pressure cooker manual before use and follow all safety precautions).
