These wings are always a hit! I grill them up before a party and keep them hot in a low oven. I always use Frank's RedHot® sauce. It's got lots of flavor and isn't too spicy.

½ cup soy sauce
½ cup Italian-style salad dressing
3 pounds chicken wings, cut apart at joints, wing tips discarded
¼ cup butter
1 teaspoon soy sauce
¼ cup hot pepper sauce (such as Frank's RedHot®), or to taste

Steps:

  • Combine 1/2 cup soy sauce, Italian dressing, and chicken wings in a large, zip-top bag. Close bag and refrigerate 4 hours to overnight.
  • Preheat an outdoor grill for medium heat. In a small saucepan, melt the butter. Stir in the 1 teaspoon soy sauce and the hot pepper sauce. Turn off heat and reserve.
  • Remove the chicken wings from the marinade and pat dry. Cook the wings on the preheated grill, turning occasionally, until the chicken is well browned and no longer pink, 25 to 30 minutes.
  • Place grilled wings in a large bowl. Pour butter sauce over wings; toss to mix well.

20 chicken wings
2 tablespoons olive oil, or more as needed
3 teaspoons garlic salt
3 teaspoons ground black pepper

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Tuck in the chicken wing flaps so the wing forms a triangle.
  • Combine olive oil with some of the garlic salt and pepper in a large bowl. Add a few chicken wings and turn to coat with seasonings. Add more wings, remaining garlic salt, and remaining pepper and turn to coat. Repeat until all wings are coated. Place on the preheated grill.
  • Grill until wings are well browned, tender, and no longer pink at the bone and juices run clear, turning several times and rearranging them so they cook evenly, 30 to 40 minutes.

10 whole chicken wings, cut into drumettes and flappers (learn how to do it here)
1/2 cup to 3/4 cup BBQ sauce

Steps:

  • Oil your grill racks and then prepare your grill for direct grilling over medium heat, about 350ºF. Keep one burner off or on low in case some wings are cooked before others.
  • Put the wings in a single layer on the grill over the heat. Cook the wings for about 20-25 minutes total. Start by leaving them on there, lid closed, for a few minutes. Then use big tongs to have look underneath them all. Some tend to get darker faster due to hot spots on the grill. If some are starting to char too much, flip those over. Keep monitoring and flipping as they all darken. If a few pieces seem to be dark before others, shift them to a cooler part of the grill. They'll keep cooking but not browning.
  • After about 18 minutes of flipping and moving them around as needed, use an instant read thermometer in the center of a few wings to make sure that they've all reached 165ºF. If some aren't quite there, give them another 5 minutes. What you want are wings that are nicely charred on all sides and cooked through.
  • Use tongs to transfer fully-cooked wings to a bowl. Add BBQ sauce. Start with 1/2 cup. Toss. If it's a strong-tasting sauce, don't add more. If it's milder, add up to another 1/4 cup.

1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
3 pounds whole chicken wings
6 tablespoons unsalted butter
1/3 cup hot sauce
1 tablespoon apple cider vinegar
1 tablespoon honey

Steps:

  • In a small bowl, combine the salt, pepper and garlic powder. In a large bowl, toss the wings with the salt mixture to evenly coat.
  • Preheat a gas grill to medium heat (about 350 degrees F).
  • Place the wings on the grill, crowding them together so that they are all touching (this goes against the conventional wisdom of giving meat room so it doesn't steam; you want them to steam so that they stay moist). Grill, flipping the wings every 5 minutes, for a total of 20 minutes of cooking.
  • In the meantime, heat the butter, hot sauce, vinegar and honey in a saucepan over low heat and whisk to combine.
  • In a clean large bowl, toss the wings with the sauce. Turn the heat up on the grill to medium high. Use tongs to remove the wings from the sauce and put them back on the grill until the skins crisp, 1 to 2 minutes per side. Put the wings back in the bowl with the sauce, toss and serve.

The marinade is simply wonderful and so easy. If you bite into one of these hot off the grill the rest may not make it into the house! Make extras because the kids will eat them cold the next day. I marinated the wings for 6 hours to overnight. I also use 1 tablespoon of fresh ginger finely grated instead of ground ginger.

My brother and I came about this recipe through trial and error, and bouncing ideas off each other. We love it! This recipe is more about technique than ingredients. Frozen wings are required or they will overcook. The indirect cook time helps dry the sauce so they are not sloppy. You'll still need napkins, but much less mess on the face and hands.

½ stick butter
4 pounds frozen chicken wings, or more to taste

Steps:

  • Warm hot sauce and butter in a saucepan over low heat. Mix well after butter has melted.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Grill wings over direct heat until no longer sticking to the grate, 10 to 15 minutes. Do not peel off wings that are still sticking. Turn wings over and grill until halfway done on the second side, about 10 minutes more.
