HUNGARIAN FRIED LáNGOS

Hungarian Fried Lángos image

Lángos is a Hungarian fried bread made of flour and yeast, and sometimes added mashed potatoes. It's often topped with garlic, sour cream, or cheese.

Provided by Barbara Rolek

Categories     Appetizer     Side Dish     Snack     Bread

Time 1h56m

Number Of Ingredients 10

1 large potato (freshly mashed and kept warm)
2 1/2 teaspoons instant yeast (rapid-rise or bread machine yeast)
1 teaspoon sugar
1 3/4 cups all-purpose flour
1 tablespoon vegetable oil
3/4 teaspoon salt
1/2 cup milk
Canola oil (for frying)
2 cloves garlic (halved)
Garnish: Salt to taste

Steps:

  • Gather the ingredients.
  • Place the freshly mashed warm potato alongside the yeast, sugar, flour, oil, 3/4 teaspoon salt, and milk in a big mixing bowl or stand mixer.
  • Using the paddle attachment, combine the ingredients until they are well moistened. If mixing by hand, start the process by mixing with a wooden spoon.
  • Switch to the dough hook and knead for 5 to 7 minutes or until smooth and elastic. If mixing by hand, give yourself an extra 5 minutes of working the dough, until it's smooth and not sticking to your hands.
  • Transfer the dough to a greased bowl, cover, and let rise until doubled in size, approximately 1 hour.
  • Divide dough into 4 equal portions. Shape each piece into a smooth ball and place it on a lightly floured board. Cover and let rest another 20 minutes.
  • In a large skillet, heat an inch of canola oil to 350 F.
  • Flatten and stretch each dough ball to a disc 8 inches in diameter. Make 1 or more slits in the center of the stretched dough with a sharp knife. The slits are traditional but also keep the dough from puffing up in the middle.
  • Fry one lángos at a time for about 2 minutes per side or until golden. Drain on paper towels. Serve hot, rubbed with a cut garlic clove and sprinkled with salt to taste.

It won't keep for long, since the dough doesn't contain any fat, but the problem seldom arises, since it will be gone in no time. The recipe is from the Swedish magazine "Allt Om Mat".

HUNGARIAN CHRISTMAS BREAD

Provided by Charmie777

Categories     Yeast Breads

Time 2h20m

Yield 2 loaves

Number Of Ingredients 15

1 (1/4 ounce) package dry yeast
1 teaspoon sugar
2/3 cup warm water
1 cup butter, at room temperature
1/4 cup sugar
1/2 teaspoon salt
2 tablespoons grated lemon peel
1/4 cup non-fat powdered milk
2 1/2-3 1/2 cups unbleached flour
1 cup ground poppy seed
1 cup sugar
1/2 cup raisins
1/2 cup milk
1 egg, beaten with
1 teaspoon water

Steps:

  • In a small cup, dissolve the yeast and sugar in the water. Let stand for a few minutes.
  • Meanwhile, combine the butter, sugar, salt, 1 tbsp lemon peel, and.
  • milk in a large mixing bowl. Then add 2-1/2 cups of flour alternately with the yeast mixture. Blend the dough well.
  • Turn the dough out onto a floured board. Knead for about 10 minutes until the dough is smooth and not sticky.
  • Add more flour as necessary. Put the dough into a greased bowl, turning so the top is greased. Let rise in a warm, draft-free place until doubled in bulk, about 1 hour.
  • While the dough is rising, prepare the filling:.
  • Combine the poppy seeds, sugar, raisins, milk, and the rest of the lemon peel in the top half of a double boiler. Cook it over hot water until the mixture is of spreading consistency. Stir constantly. It should thicken in about 10 minutes. Remove from heat and cool to room temperature.
  • Punch the dough down, divide in half, and roll each piece into a long rectangle about 1/4-inch thick.
  • Spread the filling on top of each piece, then roll up. Pinch the seams together so the filling can't come out.
  • Place the rolls on a large greased baking sheet and brush with the glaze.
  • Cover the rolls with wax paper laid across water glasses so the paper doesn't touch the dough. Let rise again for 30 minutes.
  • Apply a second coat of glaze.
  • Bake the loaves in a preheated 325 F oven for about an hour. If the top browns too rapidly, cover loosely with aluminum foil. Cool on a wire rack.

HUNGARIAN FOOD & THE 85 DISHES YOU SHOULD KNOW - OFFBEAT ...

From offbeatbudapest.com
Estimated Reading Time 7 mins
  • Túrós batyu: Like in Italy, France, and Scandinavia, many people in Hungary start their days with a morning pastry instead of a full breakfast dish.
  • Chocolate bun (kakaós csiga): Apart from the túrós batyu, above, kakaós csiga is the other beloved morning pastry in Hungary. If you have a sweet tooth, you'll find this rich chocolate bun shaped in a spiral to be a real treat, especially if you eat it while still warm.
  • Plum jam (szilvalekvár): Be it a simple topping to a toasted bread, a rich garnish to foie gras, or a filling of palacsinta, fruit preserves appear in countless Hungarian dishes.
  • Lángos: Many Hungarians associate this disc of deep-fried bread dough with summer vacations spent at Lake Balaton, but thankfully lángos is available year-round.
  • Liptauer (körözött): Named after the curd cheese of Liptov, in today's Slovakia, Liptauer is an orange-hued spread favored by people across the former Austro Hungarian Empire.
  • Cured sausage (kolbász): Cured meats are dear to the hearts of Hungarian people and perhaps none more so than kolbász, which they traditionally prepared during the winter pig slaughter.
  • Szalámi: Traditional salami is a relatively recent type of preserved sausage in Hungary, dating back to the 19th century. Compared to kolbász, above, szalámi is thicker, aged longer, and usually made without paprika, hence the absence of an orange-red hue to it.
  • Szalonna: “Szalonna” is an umbrella term for all cuts of preserved pork that come from right under the animal’s skin, be it fatback, pork belly, or jawl.
  • Bread spread with lard (zsíroskenyér): The tradition of spreading flavorful fat on crusty bread is alive and well in Hungary, too. While northern Europe has buttered toast, in Hungary creamy pork fat (lard) is the usual topping of choice.
  • Fried fatback (töpörtyű & pörc): Morsels of fatback fried to a golden, crispy brown may not be for the faint of heart but they're delicious. Most butcher shops in Hungary make them from both pork and goose fat (schmaltz).

  • Mix the dough with all the ingredients except the production leaven. Knead or use the mixer with a dough hook attachment until the dough is distinctly smoother and begins to show some stringiness – about 10 minutes. Add the production leaven and knead for further 10-15 minutes until the dough stops sticking to your hands or the sides of the mixer bowl.
  • Place the dough on a wet surface and cover with an upturned bowl whose inside rim has also been moistened with water. Leave it for an hour. Then stretch the dough with wet hands and fold over on itself from all directions. It should become tighter and shaped like a ball.
  • Dip the dough in a bowl of wholemeal flour covering it completely and place in a well-floured proving basket or bowl lined with a floured cloth. Put in a plastic bag inflated a bit so it doesn’t touch the dough (just blow into it and tie the end!) and leave for about 40 minutes. Halfway through that time start preheating a medium size cast iron casserole dish or Dutch oven in the middle of the oven at 220C/425F/gas
  • The dough will not rise much but that’s good – I’ve found that with sourdough short proving time works better if you bake it in Dutch oven. When ready, just plonk the dough from the proving basket swiftly as you can, put the lid on and into the oven. Bake with the lid on for 20 minutes, and for another 20 minutes with the lid off.
