1/2 cup butter, softened
1 cup packed brown sugar
1 large egg, beaten
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1 cup chopped walnuts, optional

Steps:

  • In a bowl, cream the butter and brown sugar. Add egg and vanilla; beat well. Combine dry ingredients; add to creamed mixture. Stir in nuts if desire. , On a lightly floured surface, shape the dough into three 10-in. x 1-in. rolls. Tightly wrap each roll in waxed paper. Freeze for at least 12 hours. , Cut into 3/8-in. slices and place on greased baking sheets. Bake at 350° for 6-8 minutes. Remove to a wire rack to cool.

1 cup unsalted butter
1 cup white sugar
¾ cup packed brown sugar
2 eggs
1 ¼ cups unsweetened cocoa powder
1 ¾ cups all-purpose flour
2 teaspoons baking soda
2 cups white chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition. Combine the cocoa, flour, and baking soda, gradually stir into the creamed mixture. Finally, fold in white chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, until puffy but still soft. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

This festive spin on a classic no-bake treat is a special addition to your holiday cookie tray. Chow mein noodles and salted peanuts are tossed with melted white chips, marshmallows and a surprise ingredient--vanilla frosting--and finished with holiday sprinkles. This recipe makes a large batch, perfect for holiday get-togethers.

4 cups chow mein noodles
1 cup cocktail peanuts
2 tablespoons butter, cut into pieces
1 bag (10 oz) miniature marshmallows
1 cup white vanilla baking chips
1/2 cup Betty Crocker™ Rich & Creamy vanilla frosting (from 16-oz container)
2 teaspoons Betty Crocker™ Decorating Decors Jingle Mix nonpareils

Steps:

  • Line cookie sheets with waxed paper or cooking parchment paper. Spray with cooking spray. Spray large bowl with cooking spray; mix noodles and peanuts in bowl.
  • Spray medium microwavable bowl with cooking spray; add butter and marshmallows. Microwave uncovered on High 1 minute 30 seconds to 2 minutes or until smooth, stirring every 30 seconds. Stir in white vanilla baking chips and frosting. Continue to microwave uncovered on High 30 seconds; stir until well blended.
  • Pour hot marshmallow mixture over noodles and peanuts; stir until well coated. To form each cookie, drop mixture by rounded tablespoonfuls onto waxed paper. Immediately top with sprinkles. Repeat with remaining noodle mixture and sprinkles. If mixture is hard to scoop, reheat in microwave uncovered on High 15 to 30 seconds.
  • Cool completely, at least 1 hour. Store in airtight container at room temperature.

1/3 cup of cocoa powder
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, room temperature
3/4 cup of granulated sugar
1 egg
1 teaspoon vanilla

Steps:

  • In a medium bowl, mix flour, cocoa powder, cinnamon, baking powder, and salt.
  • In a large bowl, beat butter and sugar with an electric mixer at low speed for 30 seconds. Increase speed to high and beat for 3 minutes until the mixture is fluffy.
  • Reduce mixer speed to low and add the egg and vanilla. Beat for about 20 to 30 seconds, just until combined.
  • Add the flour mixture into the butter mixture, and stir gently until combined.
  • Divide the dough in two and roll each into a 2-inch-wide cylinder. Wrap the cylinders in wax paper, twisting the ends to seal them. Chill the dough until firm, at least 2 hours.
  • Place baking racks at the top and bottom thirds of the oven. Preheat the oven to 350 degrees Fahrenheit. Line two sheet pans with parchment paper.
  • Slice the dough into 1/4-inch rounds. Place the cookies on the sheet pans 1 inch apart.
  • Bake the cookies in the preheated oven for 5 to 6 minutes. Switch the sheet pans so that the top pan is now at the bottom, and vice versa. Bake for another 5 to 6 minutes, until the cookies are golden brown around the edges.
  • Allow the cookies to cool on the sheet pans for 1 minute. Transfer them into a wire rack and let them cool completely.
  • Store the cookies in an airtight container at room temperature for up to 5 days.

These cookies are great because you don't have to bake them. I use raisins in this recipe, but you could use cranberries or any type of dried fruit, or none at all if you prefer. You could also use melted chocolate to drizzle on top to finish off these cookies.

One 16-ounce can Chinese noodles

  • Melt chocolate and butterscotch separately in a double boiler over barely simmering water, or in the microwave at 50 percent power.
  • In a medium bowl, combine the melted chocolate and butterscotch, and set aside. In another medium bowl, combine Chinese noodles, peanuts and raisins. Mix in the melted chocolate mixture. Drop the batter by heaping tablespoons onto waxed paper and refrigerate until set, about 20 minutes. Decorate cookies with sprinkles.

These are some of my favorite sweets. Easy and sooooo good! I found the recipe in a church cookbook and made a couple adjustments after making it. The original recipe called for chow mein noodles but I prefer the rice noodles. Yield is an estimate as it depends on how big you scoop them :) Update: Dec 2011 - I made these today and reduced the peanut butter by 2 Tbsp and it worked well. I have updated the ingredient amount to reflect the change.

3 ounces semi-sweet chocolate chips
3 ounces butterscotch chips
6 tablespoons creamy peanut butter
3 ounces rice noodles, see note*
1 cup mini marshmallows

Steps:

  • Melt the chocolate chips, butterscotch chips and peanut butter in the microwave (be careful not to scorch! - my 900W microwave takes 1.5 minutes on 70% power or about 70 seconds on high), stirring every 25 seconds or so until smooth. You can also use a double boiler on the stovetop.
  • Stir in the noodles and marshmallows.
  • Drop by spoonfuls onto waxed paper or parchment paper and allow cookies to harden (may have to chill in fridge).
  • *Note: These are made by La Choy and come in a blue cardboard can. They are sold as a "topper" for salads or main dishes. Not to be confused with rice noodles that you would add a sauce to or use in a soup!

120g unsalted butter, softened
85g light brown soft sugar
65g golden caster sugar
1 medium egg
1 tsp vanilla bean paste
180g plain flour
½ tsp bicarbonate of soda
180g white chocolate, broken into chunks

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and line two large baking sheets with baking parchment. Beat the butter and sugars together in a large bowl using an electric whisk, or in a stand mixer until just combined. Crack in the egg and beat again. Stir through the vanilla, flour, bicarb, chocolate chunks and ¼ tsp fine sea salt.
  • Roll the mixture into 10 even-sized balls between the palms of your hands. Arrange over the prepared baking sheets and bake for 10-12 mins until golden brown at the edges. Leave to cool slightly on the sheets, then transfer to a wire rack and leave to cool completely, or eat warm with ice cream.
