ORANGE ICED TEA
Fresh orange juice infused with tea and a hint of mint; Orange Iced Tea is an easy and healthy infusion to drink anytime. Refreshing and very pretty, it is the perfect summer drink.

- Juice 6 oranges directly into a deep pan. Add all the pulp as well. Add about 2 cups water and sugar. Mix well and bring to a boil.
- Remove from heat. Put the tea leaves in a closed tea strainer and add to the juice and sugar mix. Cover and let the tea steep for about 5 mins. After 5 mins, remove the tea strainer and leave the concoction on the counter to cool down to room temperature. Takes about an hour.
- Refrigerate the concoction for at least about 2-3 hours. If you don't have enough time, it's okay, just add a lot of extra ice!
- Cut the remaining 2 oranges into quarter slices.
- To prepare, add the orange slices and mint leaves in the serving jar/ bottle. Add the concoction and cold water. Mix well. Add ice if required.
- To serve, add one orange slice in each glass and pour in the refreshing orange cooler. Enjoy cold!

ORANGE BOURBON ICED TEA

- Add the tea, bourbon, Clover Honey Syrup and orange juice to a pitcher and stir. Pour over ice in individual glasses.
- Combine the honey and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the honey dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.
EASY ICED TEA

Steps:
- Put the tea bags, sugar, honey and 1.5 litres water in a large jug. Leave to infuse for 10 mins, then remove and discard the tea bags. Chill until ready to serve.
- Stir in the lemon juice, lemon slices, orange slices and mint leaves. Fill the jug with plenty of ice and stir again.
- Fill tall glasses with ice and pour over the iced tea, then serve with extra honey to taste.

PEACH ORANGE ICED TEA
This is a peach- and orange-flavored iced tea, great on a hot summer day. A nectarine can be substituted for the peach. A mandarin orange can be substituted for the clementine.

- Place peach, clementine, and sugar in a pitcher. Mash the fruit using a spoon; add water and tea bags and stir. Refrigerate until cool, about 1 hour. Remove fruit and tea bags using a slotted spoon.

- Pour 4 cups boiling water over the tea leaves and orange rind in a heatproof bowl and let the mixture steep for 10 minutes. Strain the tea into a pitcher, add the orange juice, the lemon juice, and the sugar, stirring until the sugar is dissolved, and chill the mixture. Add the ginger ale, pour the mixture into tall glasses filled with ice cubes, and garnish each drink with 1 of the orange slices.
ORANGE ICED TEA
This is a recipe I found in my cookbook called Favorite Brand Name Classic Recipe Collection. It's really easy to make and the oranges offer a really refreshing citrus boost to the iced tea. I didn't include chilling time in the preparation time.

- With a vegetable peeler, peel each orange in a continuous spiral, removing only the outer colored layer of peel.
- In a large pitcher, pour boiling water over the tea bags and orange peel. Cover and steep 5 minutes. Remove tea bags. Chill tea mixture with peel in a covered container.
- To serve, remove the peel and pour iced tea over ice cubes in tall glasses.
- Sweeten to taste with honey (or brown sugar). Garnish with orange slices and fresh mint leaves, if desired.

LEMON-ORANGE ICED TEA
For all the pitchers of tea I've made, I found one lemon and one orange just right for a citrusy summer drink. It doesn't matter the size, one each will do.

- In a large saucepan, heat water just until it comes to a rapid boil. Remove from heat and drop in the tea bags. Cover and let steep for about 20 minutes.
- In a 2 quart pitcher, combine the steeped tea, discarding the tea bags, and the sugar or Splenda. Stir until dissolved. Continue to cool to room temperature. Stir in lemon and orange juice. Refrigerate until chilled. Serve over ice.
- Tips:.
- I find it best not to add the citrus until the tea is completely cooled. Even better to chill the cooled citrus tea, as recommended, to let the flavors meld. Also, cooling too fast brings out the tannin, causing cloudy tea. Should any tea become cloudy, just add a little boiling water to clear it up.
