INDIAN GRILLED SOUR CREAM-MARINATED SHRIMP
This is an at-home, easier version of a classic Tandoor shrimp. This one is cooked on the grill and marinated in sour cream instead of drained yogurt. From Food & Wine May 2008 edition. Note: I made this again tonight and it was raining, so instead of grilling I simply broiled them on high for 3 minutes, flipped them over and broiled them another 3 minutes to perfection. Don't forget the lime juice at the end, as it really brings together all of the flavors!!!!

SPICY GRILLED SHRIMP WITH CUCUMBER CILANTRO RICE
My mom's shrimp is one of my favorite Aussie recipes. The marinade is a lovely mix of honey, spices, citrus and fresh herbs, so for this version, I took those same building blocks and gave the dish a different flavor profile. Pair the shrimp with herbaceous cucumber cilantro rice and you've got a complete meal.

Steps:
- For the shrimp: Combine all of the ingredients except the shrimp in a medium bowl; whisk together. Add the shrimp and toss to combine. Let marinate in the fridge for 1 to 2 hours, if time allows. Meanwhile, soak the skewers in water so they don't burn on the grill.
- Prepare a grill for medium-high heat or a grill pan for high heat. Thread about 4 shrimp onto each skewer, reserving the marinade for basting. Grill the shrimp until just firm, brushing with the marinade, 1 to 2 minutes per side (up to 3 minutes per side, if using a grill pan).
- For the rice: In a medium pot, melt the butter over medium heat and add the rice and garlic. Cook, stirring, until the rice smells a little nutty and is opaque, 1 to 2 minutes. Add the chicken broth, 1/2 teaspoon salt and 1/2 teaspoon pepper, and increase the heat to high. Bring to a boil, then reduce the heat to low, cover and cook the rice according to the package directions (usually 15 to 25 minutes). Fluff the rice with a fork then fold in the cucumber, cilantro, scallions, olive oil and vinegar. Taste for seasoning.
- Serve the rice with the shrimp skewers.
GRILLED SHRIMP SKEWER
Spice-shelf basics such as curry powder and ground cumin are blended with lime juice and ginger and form an easy, Indian-inspired marinade for shrimp. This recipe is adapted from Jennifer Trainer Thompson's "Caribbean Cocktails" (Ten Speed; 2003).

Steps:
- Blend lime juice, curry powder, cumin, sugar, ginger, scallions, garlic, and 1 1/4 teaspoons salt in a blender or a food processor. With machine running, add oil in a slow, steady stream to form a paste.
- Cut shrimp along back (through shells) using kitchen scissors, and devein. Loosen shells from flesh using your fingers, keeping shells attached. Gently open each shell, and push some curry paste underneath to coat backs; put shells back in place. Cover with plastic wrap, and refrigerate for at least 30 minutes.
- Soak 10 wooden skewers in water for 30 minutes. Meanwhile, heat grill to medium-high. Let shrimp stand at room temperature for 15 minutes. Thread 2 shrimp onto each skewer. Grill until shells are charred on one side, about 3 1/2 minutes. Flip, and cook until opaque, about 2 1/2 minutes more.

- 30-Minute Spicy Shrimp Masala. With only 10 minutes of prep time and another 20 minutes of cook time, you can easily whip up this spicy shrimp masala meal in just half an hour.
- Spicy Malabar Shrimp. This recipe, too, takes just under 30 minutes to make and isn’t at all complicated to pull together. If you like quite a bit of heat in your Indian meals, you’ll enjoy this one.
- Indian-Spiced Grilled Shrimp and Okra. These shrimp and okra kabobs are an easy, mess-free way to enjoy tender, crunchy shrimp and something green to go with it.
- Easy Prawn Korma. First of all, I love how prawn korma looks. The bright yellow sauce (thank you, turmeric!) is absolutely stunning against the vibrant green coriander leaves.
- Prawns Balchao. Prawns balchao isn’t for the faint at heart, as it will set your mouth on fire. It’s one of the hottest dishes on this list, but it’s so incredibly good that most people can get past the heat.
- Prawn Makhani. This dish is only mildly spicy, so if you’re looking for something with all the flavor but only a little heat, give it a try. The prawns are covered in a creamy, buttery sauce that looks and smells as good as it tastes.
- Doi Chingri – (Prawns Cooked with Curd) If you’re looking for an Indian shrimp recipe that’s more tangy than spicy, you’ll probably appreciate doi chingri.
- Kerala Style Prawn Roast. Here’s another option if you’re looking for crunchy, flavorful shrimp without a hint of sliminess. It has plenty of rich Indian flavors: ginger paste, curry, fenugreek and mustard seeds, red chili powder, garlic, and more.
- Gongura Shrimp (Gongura Royyalu) If you’re looking for something a bit healthier, the gongura leaves in this recipe are full of nutrients and exciting health benefits.
- Prawn Caldine | Prawn Curry With Coconut Milk (Goan Style) This 30-minute prawn caldine is mild, tasty, and spiced (but not spicy). The sauce is thin but creamy, and it has a slight sweetness to it, thanks to the coconut milk.
