Individual Apple Bread Puddings with Spiced Ice Cream image

This warm and comforting brioche bread pudding is packed with apple and cranberry and topped with spiced vanilla ice cream.

1/4 cup dried cranberries
1 tablespoon whiskey
1 pint vanilla ice cream
2 teaspoons pumpkin spice
2 tablespoons unsalted butter, melted, plus more, not melted, for the ramekins
2 large eggs
2/3 cup heavy cream
1/3 cup whole milk
1/3 cup sugar
1 small Gala or McIntosh apple, cored and cut into 1/4-inch pieces
1/4 teaspoon ground cinnamon
1/4 teaspoon fine salt
3 1/2 cups 1/2-inch cubes brioche or challah loaf (4 ounces)

Steps:

  • Put the cranberries, whiskey, and 2 tablespoons water in a small bowl and soak until the cranberries are soft, about 1 hour.
  • Meanwhile, let the ice cream sit at room temperature until slightly softened, about 30 minutes. Transfer it to a bowl, then fold in the pumpkin spice. Cover and refreeze the ice cream.
  • Position a rack in the center of the oven and preheat the oven to 375 degrees F. Butter four 6-ounce ramekins and put them on a baking sheet.
  • Whisk together the eggs, heavy cream, milk, sugar, apples, cinnamon and salt in a medium bowl. Reserve 1 cup of bread cubes and add the remaining bread to the bowl with the egg mixture. Stir to combine and allow the bread to soak for at least 30 minutes. Add the cranberry mixture to the bread mixture and mix well, then spoon into the prepared ramekins. Toss the remaining bread cubes with the melted butter, then top the puddings evenly with the bread cubes. Bake the puddings until just set but still loose in the centers, about 20 minutes. Let the puddings rest at room temperature for 5 to 10 minutes before serving. Serve the puddings warm with a scoop of the spiced ice cream.

1 pound "commercial" bread dough, divided into four 4ounce pieces
Olive oil

Steps:

  • As best you can, coax each piece of bread into a diameter which is 1/2inch thick. Cut or grate the cheese of choice into manageable pieces and scatter them on half of the dough, leaving an inch of the outside edge blank. Top with ham and/or seasonings of choice and drizzle 1 teaspoon of olive oil on the filling. Fold unfilled half of the bread over to cover the filling and press all around the edges to seal. Sprinkle some drops of olive oil on dough and, with your fingers, spread the oil over the entire top surface of the dough. Set individual stuffed breads on a lightly oiled or nonstick baking pan. Let the breads rise, uncovered, for 45 minutes or until doubled.
  • Preheat the oven to 425 degrees and bake for about 20 minutes (if fillings ooze out a bit, don't worry). Cool the breads on a wire rack until lukewarm or room temperature. Serve with a crisp green salad.
  • Stuffing possibilities for each bread: 2 ounces of a melting cheese mozzarella for kids, goat's or fontina for adults plus 1 ounce of sliced prosciutto or smoked ham .
  • Seasonings for cheese: hot peppers, sliced pimentos, anchovy fillets; capers, scallions, or cooked onions; garlic, sliced black olives; snipped fresh basil, or parsley, dab of pesto or black olive paste, sundried tomatoes or anything you can think of.

2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/4 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/2 cup butter, softened
1/2 cup sugar
1 egg
1 cup molasses
1 cup water
3/4 cup firmly packed brown sugar
1 1/2 cups hot water
1/3 cup butter, melted

Steps:

  • Preheat oven to 350°.
  • Combine the flour, baking soda, ginger, cinnamon, salt, allspice and nutmeg in medium bowl.
  • Set mixture aside.
  • Beat 1/2 cup butter and sugar on medium speed in large mixing bowl until creamy (1-2 minutes).
  • Add egg; continue beating until well mixed.
  • Reduce the speed to low, continue beating, alternately adding flour mixture with molasses and 1 cup water.
  • Beating after each addition only until blended.
  • Pour the batter into 13x9-inch baking pan; sprinkle with 3/4 cup brown sugar.
  • Combine 1 1/2 cups hot water and 1/3 cup melted butter in medium bowl.
  • Carefully, pour over top of batter.
  • Bake 40-55 minutes or until gingerbread is cracked on top and toothpick in center comes out clean.
  • Serve warm, with ice cream if desired.

Fold in pecans., Pour into a greased 3-qt. slow cooker. Sprinkle with brown sugar. Mix hot water and melted butter; pour over batter (do not stir). , Cook, covered, on high until a toothpick inserted in center comes out clean, 2-2-1/2 hours. A really easy version of a pudding cake I made up one evening when it was really cold in the flat. I'm new to the idea of pudding cakes, and if I hadn't made them myself I wouldn't believe they work! This one's great when it's cold outside, it really warms you up. Change the spices according to your taste, I like it really spicy so I usually add extra. It's even nice made with wholewheat flour for breakfast, or with raisins added to the batter. Hope you enjoy it!

3 tablespoons Bisquick (or 2 tablespoons flour and 1/4 teaspoon baking powder with 1 teaspoon butter cut in)
1 -2 teaspoon Splenda sugar substitute
1 teaspoon molasses
1 teaspoon spices (to taste- you can use ginger, cinnamon, mixed spice, nutmeg...or a combination. I usually use 1/2 te)
1 -2 tablespoon soya milk
2 teaspoons custard powder (or each of powdered milk and cornstarch)
1 tablespoon Splenda sugar substitute
100 ml boiling water

Steps:

  • Preheat the oven to about 350 degrees. Mix the first 4 ingredients in a small baking dish (about 200ml/8-10oz), then add the soya milk gradually to form a thick paste.
  • Sprinkle over the custard powder and Splenda, then pour over the boiling water. Bake for about 25 minutes, until a knife inserted into the centre of the 'cake' part comes out clean.
  • Leave to cool a few minutes, then enjoy! You can add ice cream or extra soya milk if you want.

1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon fine salt
3/4 cup granulated sugar
1 cup pure pumpkin puree
1/2 cup unsulfured molasses
2 large eggs, lightly beaten
1/2 cup buttermilk
1 cup confectioners' sugar, sifted

Steps:

  • Preheat oven to 350 degrees. Butter and flour 18 standard muffin cups. In a large bowl, whisk together flour, baking powder, baking soda, ginger, allspice, cinnamon, cloves, and salt. In a medium bowl, beat granulated sugar and butter with a wooden spoon until light and fluffy, about 3 minutes. Whisk in pumpkin puree until smooth, then whisk in molasses, eggs, and buttermilk. 8 -10 slices dry bread
1 cup packed brown sugar
1 teaspoon cinnamon
1/4 teaspoon allspice
1 egg
2 egg whites
1/4 teaspoon salt
1 teaspoon vanilla
3 cups milk, scald & cooled

Steps:

  • Melt butter or margarine.
  • Break up bread, set aside.
  • Combine brown sugar, cinnamon, allspice.
  • Reserve 3 tablespoons of this mixture for topping.
  • Pour melted butter onto the bread crumbs and add the remaining sugar mixture.
  • Place the bread mixture in a lightly greased 1 1/2 quart baking dish.
  • Beat egg, salt, and vanilla in a bowl.
  • Add milk slowly.
  • Pour over bread mixture in dish.
  • Let stand for 5 minutes.
  • Sprinkle reserved sugar mix on top.
