Number Of Ingredients 2

1 (750 ml) bottle sake
1 cup fresh pineapple (peeled and sliced into rings OR 1 cup fresh mango-peeled, pitted, and sliced into chunks)

Steps:

  • In a 4- to 6-cup widemouthed jar, make sure it's a jar you can seal, combine 1 bottle sake and 1 cup sliced fresh pineapple or sliced mango.
  • Cover and put in refrigerator until sake has a subtle fruit flavor, about 1 week. Lift out fruit with a slotted spoon and discard.
  • Serve cold-the sooner, the better. Leftover sake (without fruit) will keep up to 1 week when stored airtight in the refrigerator.

Steps:

  • Fill pitcher with ice and add sake, plum wine, and cherry juice. Stir and pour into glasses. Garnish with a cucumber slice and maraschino cherry.

2 to 3 ripe peaches
1 liter sake, chilled

Steps:

  • Cut peaches in half, and remove pits but not skins. Slice thin, and place in large Mason jar or pitcher. Pour sake over the peaches, cover and refrigerate 24 hours.
  • Strain sake through cheesecloth into clean decanter, reserving peaches. Serve immediately, with 3 or 4 peach slices in each glass, or refrigerate sake and peaches in separate containers for later. Infused sake will keep 4 to 5 days in sealed bottle in refrigerator. Peaches will keep 3 days.

This recipe is from Nobu! They opened one here in san diego and I had fruity sake for dessert and just could not sleep until I found the recipe! So here it is!!!! This is the recipe for the White Peach Sake but you can substitute the peach for cherries, passion fruit, melons, berries, or other flavors for different flavored sake!

3 large ripe white peaches
2 1/2 cups water
3/4 cup granulated sugar
1/2 tahitian vanilla bean
1 cinnamon stick
3/4 pint sake (Hokusetsu honjozo grade)
2 teaspoons lemon juice

Steps:

  • Wash peaches. Do NOT peel. Cut into halves or thirds.
  • In large saucepan, heat water, sugar, vanilla bean, and cinnamon stick over medium heat. Wait till it begins to boil and add the peaches and their stones (im not sure but i think this is the pit). Simmer for about 3 minutes.
  • Remove the peaches and discard their stones. Puree peaches in food processor. Strain puree and contents in saucepan through a sieve.
  • Return strained peach mixture to saucepan and continue to boil over medium heat until mixture is reduced to 1/3. Cool.
  • In a medium bowl, combine the peach mixture and sake. Add lemon juice to taste.
  • Pour sake into tall lipped jug or a similar container with spout and handle. It is recommended to drink cooled so you can stick it in the fridge if you prefer! Try other fruits using this recipe! :D.
