INSTANT POT CHOCOLATE FUDGE CAKE (VEGAN)
A rich & decadent chocolate "cake" that's pure chocolately goodness.

Steps:
- Mix dry ingredients in a bowl and set aside.
- In a microwave-safe bowl, heat the coconut oil, sugar, and aquafaba in the microwave for 1-2 minutes until the oil is melted and blends smoothly.
- Stir all ingredients together until smooth.
- Pour cake batter into a 7" springform pan lined with parchment. Fold a piece of foil into a long strip and place the cake pan over it. Fold the ends of the foil up to make handles.
- Place a wire rack in the Instant Pot and add 1 cup of water.
- Place the cake pan in the Instant Pot and tuck the foil handles in the side between the cake pan and pot.
- Press "pressure cook" or "manual" and cook on high pressure for 25 minutes.
- Allow pressure to release naturally, then allow the cake to cool completely with the lid off.
- Remove the cake from the Instant Pot, cover, and chill for 8 hours.
- Add frosting if desired, serve chilled with a dollop of vegan whipped cream or vegan ice cream.
- To make the frosting, mix all frosting ingredients together with a hand mixer until smooth.

- Sieve and Mix all dry ingredients (All purpose flour, cocoa powder, baking soda , baking powder and salt) except sugar in a bowl. Keep aside .Always sieve from a height for tender crumb outcome.
- I made it using Trial 3 –Everything same as trial 2, but for baked for 40 minutes on MANUAL HIGH and Natural Pressure Release NPR for 15 minutes and then release any pressure left doing Quick Release. I didn’t want the cake to sit for too long inside.

- Pick the Right Pan. Let’s get this out of the way right now: this cake does not bake in a standard 8-inch or 9-inch round cake pan. Both sizes are too large to fit in a standard 6-quart Instant Pot.
- Make the Instant Pot Cake Batter. This part takes less than 15 minutes, and all you’ll need is two bowls and a spoon. The cake is whole wheat, naturally sweetened in part with maple syrup, and intensely chocolatey.
- Prepare the Pan. You are going to need to be able to lift the pan out of the Instant Pot once it bakes without burning your fingers. To do this, you can either use the trivet that came with the Instant Pot or, if you don’t have it anymore, make yourself a nifty foil sling to lift it out.
- Pressure Cook the Cake. Although the Instant Pot has plenty of fancy features I considered to cook the cake (I won’t be surprised if upcoming models include an Instant Pot cake function), to keep the recipe as simple as possible and accommodate different brands of electric pressure cookers, I went the simple route and cooked it on high pressure (manual).
- The Frosting. Step 5: The Frosting. Even if you think you are not a frosting person, do not skip this one. It’s lusciously creamy, dreamy dark chocolatey, and not at all overly sweet or greasy.
- Slice and Serve. Add berries to the top of the cake for color and juicy sweetness. Warm up individual slices and serve with vanilla ice cream, whipped cream, or coconut cream (how my friends and I devoured most of it).

- Preheat the oven to 350°F (180°C) and spray two 9 inch cake pans with non-stick spray and line the bottoms with circles of parchment paper. Set aside.
- Sift the flour and cocoa powder into a mixing bowl. Add the sugar, baking soda and salt and mix together.
- Prepare the vegan buttermilk by adding 2 Tbsp lemon juice to a measuring jug and then adding soy milk up to the 2 cup (480ml) line. Leave it to curdle for a minute and then add to the mixing bowl.
