½ cup white sugar
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
¾ teaspoon salt
3 cups raisins
1 tablespoon caraway seeds
2 eggs, lightly beaten
1 ¼ cups buttermilk
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch round cast iron skillet or a 9 inch round baking or cake pan.
  • In a mixing bowl, combine flour (reserving 1 tablespoon), sugar, baking powder, baking soda, salt, raisins and caraway seeds. In a small bowl, blend eggs, buttermilk and sour cream. Stir the liquid mixture into flour mixture just until flour is moistened. Knead dough in bowl about 10 to 12 strokes. Dough will be sticky. Place the dough in the prepared skillet or pan and pat down. Cut a 4x3/4 inch deep slit in the top of the bread. Dust with reserved flour
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 65 to 75 minutes. Let cool and turn bread onto a wire rack.

100% Whole Wheat Irish Soda Bread image

I just tried this recipe for the first time, and I immediately wanted to put it online so that I would always be able to find it. It's from La Leche League's cookbook, _Whole Foods for the Whole Family_. Of course a whole wheat bread is always different from a white flour bread, but I was amazed at how well this recipe captures the taste and texture of Irish soda bread. It's dense and crumbly and a bit sweet, and very delicious. It's also quite easy to make. It's a "quick bread" recipe -- no yeast, no rising -- but you shape it into round loaves, and it feels more "bread-y" to me than most quick breads. I can't wait to make it again. Enjoy!

4 cups whole wheat flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 cup butter (4 tablespoons)
1 1/4 cups raisins or 1 1/4 cups currants
1 egg, beaten
1 3/4 cups low-fat buttermilk (or substitute 1 1/2 C plain yogurt and 1/4 C milk)
1 tablespoon molasses or 1 tablespoon honey

Steps:

  • In a big mixing bowl, combine flour, baking powder, soda, and salt.
  • Cut in butter until it reaches a coarse meal consistency. (I started with two knives, then finished the process with my fingers.).
  • Add raisins.
  • Combine liquids separately. Add liquids to dry ingredients.
  • Mix until a soft dough forms. At some point it will become hard to stir it, and it will be better to use your hands. Kneading the dough is the best way to combine all the ingredients completely -- knead it gently until it is smooth (about 3 minutes). You can knead it right there in the mixing bowl.
  • Shape the dough into two balls, and place them on a greased cookie sheet. Flatten each ball slightly and cut an X about 1/4" deep in the top of each loaf.
  • Bake at 375 for 35 minutes.

  • Preheat oven to 325 degrees F (165 degrees C). Grease two 8x4 inch loaf pans.
  • Mix the flour, sugar, baking soda, baking powder and salt. Add the eggs, sour cream and raisins and mix until just combined. Distribute batter evenly between the two pans.
  • Bake loaves at 325 degrees F (165 degrees C) for 1 hour.

250 g plain white flour
250 g plain wholemeal flour
1 ts salt
1 tsp bicarbonate of soda
400 ml buttermilk

Steps:

  • Preheat the oven to 200 degrees C. (390 Fahrenheit)
  • In a large bowl, add the white and wholemeal flour, bicarbonate of soda, salt and mix gently with the tips of your fingers.
  • Make a well in the middle and add about 1 and a half cups of buttermilk, if you feel it needs some more, add the other half too.
  • Mix quickly to form a soft, pretty sticky dough, then turn it onto a lightly-floured surface and knead briefly, just enough for the dough to hold together and be shaped into a ball.
  • Flour a large baking tray, place the bread on it, then use a sharp knife to cut a cross on the top. Spread some flour over it, then bake for about 30-35 minutes or until golden brown and the bottom of the bread sounds hollow when tapped.
  • Allow it to cool on a wire rack.

2 tablespoons caraway seeds (optional)
1 teaspoon baking-soda
3/4 teaspoon salt
1 1/2 cups (about) buttermilk

Steps:

  • Preheat oven to 425°F. Lightly flour baking sheet. Mix flour, caraway seeds, if using, baking soda and salt in large bowl. Mix in enough buttermilk to form moist clumps. Gather dough into ball. Turn out onto lightly flour surfaced and knead just until dough holds together, about 1 minute. Shape dough into 6-inch-diameter by 2-inch-high round. Place on prepared baking sheet. Cut 1-inch-deep X across top of bread, extending almost to edges. Bake until bread is golden brown and sounds hollow when tapped on bottom, about 35 minutes. Transfer bread to rack and cool completely.

  • Preheat the oven to 250C/482FSift all the dry ingredients into a large mixing bowl. Then make a well in the centre.
  • Pour about half the buttermilk into the well.Using your hand, start mixing the bread. Your hand should be in a claw shape. Add more buttermilk, check the dough, if it is too dry add more buttermilk. If it is on the wet side add more flour.Once the dough is sticky and starts to form a ball, tip it out onto a floured board.The dough should not be too wet or too dry.
  • Using both hands shape the dough into a round. Then with the palm of your hand press into a disk shape.Using a sharp knife cut a cross in the centre of the dough then place on a floured baking tray. Sprinkle a little flour over the top of the dough. Then pop it in the oven.
  • Bake at 250C/482F for 15 minutes then turn the heat down to 200F/392 and bake for another 30 minutes.To check that the bread is done knock on the base of the bread and it should make a hollow sound.Transfer to a wire rack to cool slightly then wrap in a clean damp tea towel.

  • Preheat oven to 425 degrees F and sprinkle a workspace or cutting board with flour to prevent sticking when kneading the dough. Set aside.
  • Mix flour, everything seasoning, baking soda, sea salt, and soured milk until lumps form and it just pulls together. Dump the dough onto the floured workspace, sprinkle with a touch more flour (I also flour my hands a bit) and knead about 50 times until the dough forms a smooth ball.
