4 slices prosciutto
4 turkey breast steaks
4 tbsp pepperonata antipasto (such as Scala)
125g ball reduced-fat mozzarella , sliced into 8
small bunch basil , leaves only
medium ciabatta loaf, or 2 ciabatta rolls
salad leaves , to serve

Steps:

  • Heat grill to high. Lay the prosciutto out on a large baking sheet and sit a turkey steak on top, crossways. Spread the turkey with the pepperonata, then top with 2 slices of mozzarella, a few basil leaves and some seasoning. Fold the ends of the prosciutto around the cheese to enclose. Grill for 10 mins until golden and cooked through. Leave to rest for 2 mins.
  • Cut the ciabatta into 4 or the rolls in half, then toast under the grill. Top with salad leaves, then sit the turkey on top and serve.

½ cup Italian-style bread crumbs
½ cup grated Parmesan cheese
1 egg
¼ cup chopped fresh parsley

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix turkey, bread crumbs, Parmesan cheese, egg, parsley, and salt together in a large bowl. Form meat mixture with wet hands into balls about 1 1/2 inches in diameter without handling or packing too hard.

1 medium onion, chopped
1 small green pepper, chopped
1/4 cup chili sauce
3 tablespoons white vinegar
2 tablespoons dried oregano or Italian seasoning
4 teaspoons beef bouillon granules
12 kaiser or hard rolls, split

Steps:

  • Place turkey breast in a greased 5-qt. slow cooker. Add onion and green pepper. , Combine the chili sauce, vinegar, oregano and bouillon; pour over turkey and vegetables. Cover and cook on low for 5-6 hours or until turkey is tender., Shred turkey with 2 forks and return to the slow cooker; heat through. Spoon 1/2 cup onto each roll. Freeze option: Place cooled meat and its juices in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little water if necessary.

1 clove garlic, finely chopped
1 cup chunky-style spaghetti sauce
2 tablespoons red wine or red wine vinegar
1 tablespoon olive or vegetable oil

Steps:

  • Place turkey, salt and garlic in 12-inch skillet; add enough water to cover. Heat to boiling; reduce heat to low. Cover and simmer 1 hour to 1 hour 15 minutes or until turkey is tender; drain.
  • Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.
  • Mix spaghetti sauce, wine and oil; brush over turkey.
  • Cover and grill turkey 4 to 6 inches from medium heat 30 to 40 minutes, brushing occasionally with sauce mixture and turning after 20 minutes, until very tender and well browned. Discard any remaining sauce mixture.

1 teaspoon minced garlic
1 (14.5 ounce) can diced tomatoes
1 (3 ounce) can tomato paste

Steps:

  • Make zucchini noodles using a spiralizer or julienne peeler. Place noodles in a colander and cover liberally with 1 tablespoon salt. Let sit until noodles release some moisture, about 20 minutes. Rinse noodles and pat dry.
  • Place ground turkey, garlic salt, garlic powder, onion powder, cayenne pepper, and red pepper flakes in a large oven-safe skillet over medium heat. Cook and stir until turkey is browned and juices run clear, about 5 minutes. Drain grease.

My Dad's Italian-American Turkey Stuffing image

This is the stuffing I grew up on. My dad insisted the pilgrims were eating mozzarella and pepperoni on the Mayflower! I think he cracked that joke so many times that he started to believe it...I love what the cheese does when baked inside the bird. The pepperoni becomes almost like bacon or Pancetta here when mixed with the otherwise traditional stuffing ingredients. If you don't want to use or don't have the turkey gizzard and heart, simply omit. Take a chance on this stuffing and you will never go back...

1 1/2 sticks (12 tablespoons) unsalted butter
3 medium yellow onions, thinly sliced
8 stalks celery, stalks trimmed of leaves and ends and cut into thin slices
Kosher salt
Freshly ground black pepper
8 slices white sandwich bread
2 tablespoons fresh thyme, stemmed
10 fresh sage leaves, stemmed and cut into thin strips
1 teaspoon dry rosemary
1 turkey heart, cut into small pieces
1 turkey gizzard, cut into small pieces
12 ounces pepperoni, casing removed, cut into small cubes
1 pound loose pork breakfast sausage, broken into small pieces and cooked
1 1/2 pounds mozzarella cheese, cut into 3/4-inch cubes
1 cup low-sodium chicken stock, boiled and cooled

Steps:

  • Preheat the oven to 375 degrees.
  • Cook the vegetables: In a large skillet, melt 2 tablespoons (1/4 stick) of the butter. Add the onions and celery. Season with salt and pepper. Cook the vegetables, over medium heat, until translucent, 3 to 5 minutes. Remove the skillet from the heat and transfer the contents to a bowl. Set aside.
  • Toast and season the bread: Arrange the bread slices in a single layer on a baking sheet and toast until light brown. Alternatively, brown them in a toaster. While the bread is still hot, lightly butter both sides of each piece with 1 tablespoon of the butter. Cut into 1-inch squares and transfer them to a large bowl. Toss with salt, pepper, the thyme, sage and rosemary. Mix to blend. Set aside.
  • Cook the turkey innards and pepperoni: Heat a tablespoon of the butter and, in a large skillet, quickly saute the heart and gizzard pieces, 30 seconds. Season with salt and pepper. Remove from the heat and add it to the bowl of celery and onions. Stir to blend. In the same large skillet, add the remaining 1 tablespoon of the butter and saute the pepperoni pieces over high heat until crispy, 2 to 3 minutes. Drain on a paper towel.
  • Make the mix: Combine the celery and onion mixture, the cooked breakfast sausage, the mozzarella and the pepperoni in the bowl containing the toasted bread. Mix to blend and add the cup of chicken stock to moisten all of the ingredients.
  • Pour the mixture into a large baking dish and cover with foil. Bake 30 minutes, then remove the foil and continue baking until golden brown, about 20 more minutes.

3 tablespoons mayonnaise
1 clove garlic, finely chopped
8 ounces ground turkey
12 ounces sweet Italian turkey sausage, removed from casings
2 teaspoons extra-virgin olive oil
8 thin slices pancetta
4 ounces sliced Italian fontina cheese
Four 3-by-3-by-1/2-inch squares focaccia, split and lightly toasted
1 plum tomato, sliced
1 cup baby arugula

Steps:

  • Mix the mayonnaise with the garlic in a small bowl and set aside. Using your hands, mix together the turkey and turkey sausage in a large bowl until just combined. Form this mixture into four 1-inch-thick patties.
  • Preheat a large skillet over medium heat. Add the olive oil and pancetta slices and cook the pancetta on both sides until crisp, about 3 minutes. Drain on paper towels and reserve.
  • Place the same skillet over medium-high heat and add the burgers. Cook, turning once, until cooked all the way through, about 5 minutes per side. Top with the fontina and cook until just melted.
  • To serve, place the burgers on the focaccia bottoms. Top with tomato slices, pancetta and arugula. Spread the focaccia tops with garlic mayonnaise, set on top of the burgers and serve.

1/4 cup flour
4 cups chicken broth
1 (19 ounce) can cannellini beans, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes with juice
2 cups diced cooked turkey
1 teaspoon dried oregano, to taste
1/2 teaspoon salt
1/4 teaspoon pepper
10 ounces frozen spinach, thawed and squeezed of excess liquid
1 cup Italian cut green beans (frozen or canned and drined)
6 slices multi-grain bread, cut in halves diagonally
3 tablespoons olive oil
1 teaspoon garlic powder
1/2 cup shredded parmesan cheese

Steps:

  • In a large, deep pot, cook sausage over medium-high heat for 8 to 10 minutes, or until sausage is browned and no longer pink inside, stirring occasionally to break up pieces. Drain off any excess drippings.
  • Sprinkle flour over sausage, stirring to coat.
  • Stir in chicken broth, cannellini beans, diced tomatoes, cooked turkey, oregano, salt, and pepper.
  • Bring to a simmer over medium-high heat. Reduce heat to medium-low and simmer for 20 minutes, or until flavors have blended.
  • Stir in spinach and green beans and simmer over medium-heat, uncovered, for 4 to 5 minutes, or until green beans are cooked through.
  • While the stew bubbles and makes your whole house smell wonderful, preheat the oven to 350ºF.
  • Place bread halves on a nonstick baking sheet.
  • Brush tops with olive oil and sprinkle garlic powder and Parmesan cheese on top. Bake for 8 to 10 minutes, or until bread is toasted.
  • Spoon stew into large bowls or mugs. Serve with hot toast.
