2-1/2 pounds pork baby back ribs, cut into 8 pieces
2 teaspoons Cajun seasoning
1 medium onion, sliced
1 cup ketchup
1/2 cup packed brown sugar
1/3 cup orange juice
1/3 cup cider vinegar
1/4 cup molasses
2 tablespoons Worcestershire sauce
1 tablespoon barbecue sauce
1 teaspoon stone-ground mustard
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon liquid smoke, optional
Dash salt
5 teaspoons cornstarch
1 tablespoon cold water

Steps:

  • Rub ribs with Cajun seasoning. Layer ribs and onion in a 5-qt. slow cooker. In a small bowl, combine the ketchup, brown sugar, orange juice, vinegar, molasses, Worcestershire sauce, barbecue sauce, mustard, paprika, garlic powder, liquid smoke if desired, and salt. Pour over ribs. Cover and cook on low until meat is tender, 5-6 hours. , Remove ribs and keep warm. Strain cooking juices and skim fat; transfer to a small saucepan. Combine cornstarch and water until smooth; stir into juices. Bring to a boil; cook and stir until thickened, 2 minutes. Serve with ribs.

2 racks pork baby back ribs (about 5 pounds)
1/4 cup soy sauce
1/4 cup dried oregano
2 tablespoons onion powder
2 teaspoons garlic powder
1 liter lemon-lime soda
1/2 cup unsweetened pineapple or orange juice, optional
BARBECUE SAUCE:
1/2 cup sugar or packed brown sugar
1/2 cup hot water
1 cup ketchup
1/4 cup honey mustard
1/4 cup barbecue sauce of choice
3 tablespoons lemon juice
1-1/2 teaspoons white vinegar

Steps:

  • Brush ribs with soy sauce. Combine oregano, onion powder and garlic powder; rub over both sides of ribs. Transfer to a large shallow roasting pan; refrigerate, covered, overnight., Preheat oven to 225°. Add lemon-lime soda and, if desired, juice to roasting pan (do not pour over ribs). Bake, covered, until tender, about 3 hours., Meanwhile, make barbecue sauce by dissolving sugar in hot water; combine with remaining ingredients, thinning with additional lemon-lime soda or juice if necessary. Reserve 1 cup for serving., Remove ribs from oven; discard juices. Brush both sides with barbecue sauce. Grill ribs, covered, on a greased grill rack over low direct heat, turning and brushing occasionally with remaining sauce, until heated through, about 10 minutes. Cut into serving-size pieces; serve with reserved sauce.

These ribs have the rich flavor of pork, which you can really taste, and they are also very tender and moist. Who needs all that BBQ sauce? If you can, get baby back ribs - they're best - but any pork spareribs will do.

4 pounds meaty pork spareribs
2 tablespoons salt
1 tablespoon freshly ground black pepper

Steps:

  • Preheat oven to 350°F.
  • Preparing and Roasting the Ribs
  • Rub the ribs with salt and pepper on both sides.
  • Set a roasting or broiler rack in a roasting pan. Arrange the ribs on the rack, meaty side facing up.
  • Put the pan on the center rack of the oven and bake for 30 minutes. Using a pair of tongs, turn the ribs over, and cook for another 30 minutes.
  • When the second 30 minutes are up, the ribs should be nicely browned and fairly crisp on the outside. If not, roast for another 10 minutes and check again.
  • Cutting and Serving the Ribs
  • When you are serving the ribs, cut the rack into separate racks of 3 or 4 ribs per person and place on a platter or plates. Serve hot.

6 tablespoons Emeril's Rustic Rub, recipe follows
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon celery salt
Emeril's Bam B Q Sweet Original Barbecue Sauce
8 tablespoons paprika
3 tablespoons cayenne
5 tablespoons freshly ground black pepper
6 tablespoons garlic powder
3 tablespoons onion powder
6 tablespoons salt
2 1/2 tablespoons dried oregano
2 1/2 tablespoons dried thyme

Steps:

  • Preheat the oven to 300 degrees F and line a large baking sheet with a piece of aluminum foil large enough to cover the pan twice (you will be folding this over the ribs and sealing.)
  • Place the ribs on the prepared baking sheet in 1 layer. In a small bowl, combine the Rib Rub, salt, pepper, and celery salt and stir to combine. Divide the seasoning evenly among both slabs of ribs, coating well on both sides. Fold the sides of the foil over the ribs and seal tightly on all sides. Place the ribs in the oven and bake, undisturbed, for 2 1/2 to 3 hours, or until ribs are very tender.
  • Remove the ribs from the oven and peel back the foil so that the ribs are exposed. Using a pastry brush or the back of a spoon, coat the racks lightly on the meaty sides with barbecue sauce. Return to the oven until sauce is thickened and lightly browned, about 20 minutes longer. Remove the ribs from the oven and set aside to cool briefly before cutting between the ribs and serving. Serve with more barbecue sauce, if desired.
  • Combine all ingredients and store in an air-tight container.

UNCLE JJ'S RIB RUB



Uncle JJ's Rib Rub image

Quick and easy BBQ rub. Great for pork and chicken. When storing in an airtight container you can mix 3 tablespoons of cornstarch to prevent clumping. Apply liberally to both sides of meat that has been brought to room temperature. Let sit, covered, for 30 minutes before grilling or smoking the meat.

  • Preheat the oven to 300 degrees F. Line a large baking sheet with a piece of aluminum foil that is large enough to cover the pan twice (you will be folding this over the ribs and sealing it).
  • Arrange the ribs, meat side up, in one layer on the prepared baking sheet. In a small bowl, combine the Rib Rub, salt, pepper, and celery salt, and stir to combine. Divide the seasoning evenly between the 2 slabs of ribs, coating them well on both sides. Fold the extra length of foil over the ribs, and seal it tightly on all sides. Place the baking sheet in the oven and bake, undisturbed, for 2 1/2 to 3 hours, or until the ribs are very tender.
  • Preheat a grill to medium-high (or leave the oven on).
  • Remove the baking sheet from the oven and peel back the foil so that the ribs are exposed. Using a basting brush or the back of a spoon, coat the meaty side of the rubs lightly with barbecue sauce. Place the slabs of ribs, meaty side up, on the grill and cook until the barbecue sauce is thickened and lightly browned, 5 to 10 minutes. (Alternatively, return the baking sheet to the oven and continue to bake the ribs, without the foil covering, until the barbecue sauce is thickened and lightly browned, 20 to 30 minutes.)
  • Plating / Assembly: Remove the ribs from the grill (or oven), and let them cool briefly. Then cut between the ribs and serve, with additional barbecue sauce on the side if desired.

J-MAN'S RIBS

Braised and grilled pork spareribs. Trying to put together my go-to rib recipe so I don't have to search all over for the rub, sauce, method.

1/4 cup paprika
1 tablespoon brown sugar
1 tablespoon sugar
2 teaspoons salt
1 teaspoon celery salt
1 teaspoon fresh ground black pepper
2 teaspoons cayenne pepper
1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon onion powder
2 pork spare rib racks
3/4 cup orange juice
3/4 cup apple juice
1/2 cup red wine
2 tablespoons honey
1 cup ketchup
1/2 cup honey
1/4 cup water
3 -4 garlic cloves, minced
1 tablespoon dried onion flakes (could probably use fresh onion too)
1 tablespoon prepared brown mustard (any mustard is fine)
1 tablespoon chili powder
1 teaspoon cayenne (depends on your audience, I usually omit because of Mrs. J-Man)
mequite hickory, etc wood chips

Steps:

  • Mix all the rub ingredients (I always have a jar handy - great for pulled pork too).
  • Prepare ribs (rinse off, peel silverskin if necessary, etc). Lay each on top of large sheet of heavy duty aluminum foil. Sprinkle ribs with dry rub on both sides and massage into ribs Wrap ribs up and refrigerate at least for one hour and preferably overnight.
  • Soak woodchips.
  • Preheat oven to 250 degrees.
  • Mix orange juice, apple juice, wine and honey.
  • Place ribs on lipped baking sheet (to catch any spillage). Open the aluminum carefully and pour half the braising liquid onto each rack. Seal carefully and leave seam-side up so liquid does not spill.
  • Bake for 2.5 - 3 hours until bones start to appear. This can be done the day before or earlier in the day (I often make this part of the ribs at home and then finish at the bbq).
  • Pour braising liquid into measuring cup and refrigerate long enough for fat to coagulate on the top. Remove fat. I tend to add a bit more dry-rub to the ribs at this point.
  • Combine braising liquid (optional) with rest of BBQ sauce ingredients and cook over a low boil until the proper thickness (only about 5 minutes if you don't use the braising liquid -- 30 minutes or so if you do).
  • Start a charcoal grill set for indirect heat (or you can use a gas grill with the burners turned off under the ribs).
  • You can put the ribs on a rib rack or (as I like to) cut them into individual ribs and place in a disposable aluminum pan. Slather some bbq sauce on the ribs and place pan over the middle of the grill (with coals on the sides). Toss a handful of soaked woodchips on each pile of coals. Cook for 30-60 minutes - enough to heat up and work some smoke and bbq sauce into ribs Add some more chips and bbq sauce as you turn the ribs.

  • Preheat oven 300 degrees. Line a large baking sheet with a piece of aluminum foil large enough to cover the pan twice. Line the aluminum foil with an equal sized piece of parchment paper. (You will be folding this over the ribs and sealing it.)
  • Place ribs, meat side up, in an even layer on prepared baking sheet; set aside. In a small bowl, combine Rib Rub, salt, pepper, and celery salt; stir to combine. Divide seasoning evenly between both slabs of ribs, coating well on each side. Fold the extra length of parchment paper-lined aluminum foil over ribs and seal tightly on all sides. Transfer baking sheet to oven and bake until ribs are very tender, 2 1/2 to 3 hours.
  • Remove baking sheet from oven. Peel back parchment paper-lined foil so that ribs are exposed. Using a basting brush or the back of a spoon, coat meat side of ribs lightly with barbecue sauce. Return ribs to oven, and bake, uncovered, until sauce is thickened and lightly browned, 20 to 30 minutes.
  • Remove ribs from oven and let cool briefly. Cut between each rib and serve with additional barbecue sauce, if desired.

Steps:

  • In a small bowl, combine mustard powder, paprika, celery salt, onion powder, red-pepper flakes, garlic powder, celery seed, and 1 teaspoon salt. Rub slabs on both sides with the spice mixture, and refrigerate, loosely covered, for 2 hours.
  • Preheat oven to 300 degrees. Stack slabs on a double layer of aluminum foil; tightly wrap. Place on a rack on a baking sheet. Cook until meat pulls away from the bone and is easily pierced with the tip of a sharp knife, 1 to 1 1/2 hours.
  • Heat grill to medium-high; lightly oil grates. Carefully remove ribs from foil, pouring off any liquid. Brush generously on both sides with rib sauce; grill ribs until sauce begins to bubble and brown around the edges, 4 to 5 minutes per side. Serve ribs with any leftover sauce, if desired.
