This spicy jalapeno mustard is unbelievably delicious with sandwiches, hot dog, sausage, and much more. This hot sauce is it good to store up to 6 months.

1/2 cup yellow mustard powder
1 cup water
½ cup distilled white vinegar
1/3 teaspoon Turmeric powder (for color/optional)
1 teaspoon garlic powder
½ teaspoon salt
2 tsp jalapeno (minced)

Steps:

  • In a small mixing bowl, add yellow mustard powder, water,distilled white vinegar, turmeric, garlic powder, sand, and minced jalapeno.
  • Whisk until all the ingredients combined together.
  • Serve and refrigerate the left over in an air sealed container.

Try in your salad dressings, on pork chops, on ham steaks, ham or corned beef sandwiches, or even grilled ham/cheese sandwiches. Also try it mixed in your favorite cheese dip, potato salad, or egg, chicken, or tuna salad. Cooking time includes time to allow flavors to develop. Enjoy!

Number Of Ingredients 10

2 teaspoons whole coriander seeds
1/4 cup yellow mustard seeds
1/4 cup black mustard seeds
1/4 cup mustard powder
3/4 cup cold water
1 onion, chopped
3 garlic cloves, chopped
3 jalapenos, seeded
1/4 cup dry white wine
1/4 cup cider vinegar

Steps:

  • Toast the coriander seeds in dry skillet or place seeds in flat dish and microwave on high for around 4 to 5 minutes.
  • Crush the coriander and mustard seeds in a blender or a mortar.
  • Mix the powdered mustard into water and blend w/ coriander and mustard seeds. Let this mixture stand for minimum 3 hours.
  • Mix remaining ingredients and pulverize the mixture in a blender until the mixture becomes smooth.
  • Stir this smooth puree into the mustard.
  • Bring this mixture to a boil, then lower the heat and simmer 5 minutes or until as thick as you like, stirring occasionally. The mustard will thicken slightly on cooling.
  • Cover and refrigerate.

16 to 20 jalapenos
1 1/2 cups white vinegar
1 1/2 cups water
1/4 cup salt
4 cups sugar
1 cup all-purpose flour
1 tablespoon ground turmeric
1 tablespoon dry mustard
1 (16-ounce) jar yellow mustard

Steps:

  • 1.Cut the jalapenos lengthwise into halves. Remove and reserve seeds. Chop jalapenos finely to yield about 4 cups. 2.Combine jalapenos, vinegar, water and salt in a large saucepan. Simmer over medium heat until jalapenos are tender, about 8 minutes. 3.Add the reserved jalapeno seeds to the jalapeno mixture according to taste, using 1 tablespoon for mild flavor, 2 for medium and 3 or more for hot. 4.Combine sugar, flour, turmeric and dry mustard in a medium bowl and mix well. Stir in yellow mustard. 5.Add the mustard mixture to the jalapeno mixture and mix well. Simmer, stirring frequently, until thickened, about 5 minutes. 6.Spoon into 10 hot sterilized 1/2-pint jars, leaving 1/2-inch headspace. Seal with 2-piece lids. Process in hot water bath for 5 minutes. Makes 10 (1/2-pint) jars.

Number Of Ingredients 14

1 1/2 teaspoons active dry yeast
2 tablespoons plus 1 teaspoon packed light brown sugar, divided
1/4 cup warm water (110-115°F)
1 cup warm milk (110-115°F)
2 1/2 to 3 cups all-purpose flour
1/2 cup finely chopped country ham (3 oz; preferably Newsom's or Benton's), divided
1/3 cup finely chopped sharp Cheddar, divided
6 cups water
4 teaspoons baking soda
1/2 cup Dijon mustard
2 tablespoons finely chopped seeded fresh jalapeños
1 tablespoon mild honey
1/2 stick unsalted butter, melted
1 to 2 tablespoons pretzel salt or coarse salt

Steps:

  • Stir together yeast, 1 teaspoon brown sugar, and warm water in a large bowl and let stand until foamy, 5 to 8 minutes. (If mixture doesn't foam, start over with new yeast.) In a separate bowl, stir remaining 2 tablespoons brown sugar into warm milk until dissolved.
  • Add 2 1/2 cups flour and milk mixture to yeast mixture and stir with a wooden spoon or rubber spatula until a soft dough forms, adding up to 1/2 cup additional flour, a little at a time, if necessary. Turn out dough onto a lightly floured surface and gently knead a few times to form a smooth ball. Transfer to a clean bowl. Cover with plastic wrap and let rise in a draft-free place at warm room temperature until doubled and bubbles appear on surface, about 2 hours.
  • Preheat oven to 400°F with rack in upper and lower thirds. Line two 4-sided sheet pans with parchment paper.
  • Turn out dough onto a lightly floured surface and cut into 4 equal pieces. Lightly dust your hands with flour, then gently roll and stretch 1 piece of dough to form a 12-inch-long rope. Flatten dough and arrange so a long side is nearest you, then roll out to a roughly 12- by 4-inch rectangle with a lightly floured rolling pin. Gently press one fourth of ham and cheese into lower third of rectangle, leaving a 1/2-inch border along bottom edge. Stretch bottom edge of dough up over filling and press tightly to seal, then roll up as tightly as possible to form a rope. Cut rope into 12 pieces and transfer to a sheet pan. Make 3 more ropes with remaining dough, ham, and cheese and cut into pieces, transferring to sheet pans. Let rest at room temperature, uncovered, 30 minutes (dough will rise slightly).
  • Bring water (6 cups) to a boil in a 4-to 5-quart saucepan. Reduce heat and stir in baking soda. Cook pretzel bites in batches in gently simmering water, turning once, until slightly puffed, about 20 seconds. Transfer with a slotted spoon to sheet pans.
  • Bake until puffed and golden-brown, about 15 minutes (cheese may ooze slightly).
  • Meanwhile, stir together mustard, jalapeños, and honey.
  • Brush warm pretzel bites with butter and sprinkle with pretzel salt. Serve warm or at room temperature with jalapeño mustard for dipping.

2 tablespoons Dijon mustard
1 tablespoon honey
1 large garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1 tablespoon fresh lemon juice
1 fresh or pickled jalapeño chili, seeded and minced (wear rubber gloves)
1 pork tenderloin (about 3/4 pound), trimmed and cut crosswise into 1 1/2-inch pieces
Accompaniment if desired: lemon, rosemary, and toasted walnut couscous
LEMON, ROSEMARY AND TOASTED WALNUT COUSCOUS
Can be prepared in 45 minutes or less.
1/3 cup finely chopped shallot or onion
1 tablespoon butter
1 cup water
2/3 cup couscous
1 teaspoon freshly grated lemon zest
1 1/2 teaspoons minced fresh rosemary leaves or 1/2 teaspoon crumbled dried rosemary
1/4 cup walnuts, toasted lightly and chopped fine
2 teaspoons fresh lemon juice, or to taste

Steps:

  • Prepare grill.
  • In a bowl whisk together mustard, honey, garlic paste,lemon juice, jalapeño, and salt and pepper to taste and reserve 1 tablespoon of marinade in a small bowl for basting kebabs.
  • Add pork to marinade remaining in bowl. Toss pork pieces to coat well and marinate 15 minutes.
  • Thread pork onto two 10-inch metal skewers and grill on an oiled rack set 5 to 6 inches over glowing coals 4 minutes. Turn kebabs and baste with reserved marinade. Grill kebabs, turning and basting them, 10 to 15 minutes more, or until pork is cooked through and registers 160°F. on a meat thermometer. (Alternatively, kebabs may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.)
  • Serve kebabs with couscous.
  • In a small heavy sauce, cook shallot or onion in butter over moderately low heat, stirring, until softened. Add water and bring to a boil.
  • Stir in couscous, zest and rosemary and cover pan. Remove pan from heat and let stand 5 minutes. Fluff couscous with a fork and stir in walnuts, lemon juice and salt and pepper to taste. Serves 2.

16 ounce(s) yellow mustard
10 - half-pint jars with lids and bands

Steps:

  • Halve jalapenos lengthwise; reserve and remove seeds. Finely chop peppers to yield 4 cups.
  • combine jalapenos, vinegar, water and salt in a large saucepan. Simmer over medium heat about 8 minutes. Add 1-3 tablespoons of the reserved seed to the jalapeno mixture, according to taste.
  • Combine sugar, flour, turmeric, and dry mustard in a medium bowl and mix well. Stir in yellow mustard.
  • Add the mustard mixture to the jalapeno mixture and mix well. Simmer about 5 minutes, stirring frequently, until thickened.
  • Spoon into 10 hot, sterilized half-pint jars, leaving 1/2 inch of headspace. Seal with two piece lids. Process in hot water bath for 10-15 minutes.
  • Set jars in a draft-free place and allow to set for 24 hours. Jars or mustard will last 1 year if unopened.
