I looked long and hard for a good-flavored teriyaki marinade recipe that could double as a sauce. Found a few and modified to this.

½ cup soy sauce
2 tablespoons honey
2 tablespoons rice vinegar
2 tablespoons sesame oil
2 tablespoons brown sugar
2 tablespoons sesame seeds
2 cloves minced garlic
1 (1 inch) piece fresh ginger, grated
¼ cup cold water
1 tablespoon cornstarch

Steps:

  • Stir soy sauce, honey, rice vinegar, sesame oil, brown sugar, sesame seeds, garlic, and ginger together in a small saucepan over medium-high heat.
  • Whisk cornstarch into water in a bowl; add to soy sauce mixture. Cook sauce, stirring regularly, at a simmer until thickened, 5 to 7 minutes.

Steps:

  • In a medium bowl, mix the soy sauce, water, sugar, Worcestershire sauce, vinegar, oil, onions, garlic powder, and ginger. Stir together until sugar dissolves. Voila - marinade!

  • In a medium bowl, mix white sugar, garlic powder, ground ginger and salt. Mix in Worcestershire sauce and reduced sodium teriyaki sauce. Stir until all dry ingredients have dissolved. Place desired meat into the mixture. Cover and marinate in the refrigerator at least 6 hours before grilling as desired.

This recipe came from my Mom's friend. I've never found a better sauce, and allergies prevent me from buying store bought. This is easy to make, delicious, and works with just about anything.

1/2 cup soy sauce
1/4 cup honey
1/4 cup vegetable oil
2 tablespoons red wine vinegar
3 garlic cloves, minced
2 tablespoons fresh ginger, minced

Steps:

  • Mix all the ingredients together well.
  • Place the item you are marinating into a large plastic bag and add marinade to cover.
  • Let marinade for 4-6 hours or overnight. Turn bag over every hour or so if you are awake.
  • Extra marinade can be put in a saucepan and reduced over low heat to a sauce consistancy.
  • Stir often to avoid the sugars burning.

1/4 cup dry sherry
1/4 cup low sodium soy sauce
1 tablespoon brown sugar
1 tablespoon rice wine vinegar
1 teaspoon garlic powder

1/8 teaspoon ground ginger

Steps:

  • Mix all ingredients. If using as a marinade, put into a flat dish with chosen meat (chicken, fish, etc.) and refrigerate for 30 minutes. Remove meat from marinade to cook.
  • Pour sauce into a small saucepan. Simmer for about 5 minutes. Sauce will thicken slightly to a syrupy consistency.
  • Pour sauce over meat, vegetables, etc. to serve.

black pepper

Steps:

  • Bring mirin to a boil in a saucepan over high heat.
  • Reduce heat to medium-low, and simmer for 10 minutes.
