The fact that these turtle cheesecakes are no-bake confections isn't the best thing about them. (The chocolate, pecans and caramel are.) But it's a bonus.

1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate, divided
1 pkg. (11.1 oz.) JELL-O No Bake Real Cheesecake Dessert
2 Tbsp. sugar
5 Tbsp. margarine or butter, melted
1-1/2 cups plus 2 tsp. cold milk, divided
24 pecan halves
5 KRAFT Caramels
12 REYNOLDS 2-1/2-inch Holly Baking Cups

Steps:

  • Melt 2 oz. chocolate as directed on package; set aside to cool. Meanwhile, mix Crust Mix, sugar and margarine with fork until well blended. Place REYNOLDS (2-1/2-inch) Holly Baking Cups in medium muffin pan; spoon crumbs evenly into baking cups. Press firmly onto bottom of each cup.
  • Beat 1-1/2 cups of the milk and the Filling Mix with electric mixer on low speed just until moistened. Beat on medium speed 3 min. (Filling will be thick.) Remove 1/4 cup of the filling; place in small bowl. Add melted chocolate; stir with wire whisk until well blended. Add to remaining plain filling; stir gently until well blended. Spoon evenly into prepared cups. Top each with 2 of the pecan halves; set aside.
  • Microwave caramels and remaining 2 tsp. milk in small microwaveable bowl on HIGH 1 min.; stir until caramels are completely melted. Set aside. Place remaining 2 oz. chocolate in another small microwaveable bowl. Microwave until melted, following directions on package. Drizzle melted caramels and chocolate evenly over cheesecakes. Refrigerate at least 1 hour or until ready to serve. Store leftover cheesecakes in refrigerator.

1-1/2 cups cold milk

Steps:

  • Mix Crust Mix, margarine and sugar until blended. Spoon into 12 paper-lined muffin cups; press crust mixture firmly onto bottoms of cups.
  • Beat milk and Filling Mix with mixer on low speed just until blended, then beat on medium speed 3 min. (Filling will be thick.) Spoon into prepared cups.
  • Refrigerate 1 hour.

This is a simple no bake cheesecake that comes out creamy and delicious even though it is low fat. The low fat version actually tastes better than the full fat version, the flavor comes out more. My husband who loves his rich foods absolutely dies over this recipe. Feel free to substitute the flavors for other one's that you think would work well.

3 1/2 ounces low-fat graham crackers
1 slightly beaten egg white
14 ounces reduced-fat cream cheese
7 ounces light strawberry yogurt
2 (1 ounce) satchets sugar-free jello
3 1/2 ounces sliced strawberries (optional)

Steps:

  • Crush graham crackers into fine crumbs and mix well with egg white (since this is non-cook be careful NOT to get any yolk mixed into the recipe). Spread and press firmly into the bottom of a 9" bottom spring form pan. Refrigerate for 30 minutes until firm.
  • Mix first Jello packet with 1/2 cup of boiling water. Stir until dissolved. Allow to sit at room temperature to cool slightly.
  • Stir cream cheese until fluffy. Add strawberry yogurt and mix well. Add Jello into mixture and stir filling until well blended. Add filling into pan and if wanted lightly lay strawberry's over the top and push in ever so gently so they are in place. Refrigerate for 90 minutes or until firm.
  • Meanwhile prepare second Jello packet as the box directs you. Allow to cool at room temperature until needed.
  • When cheesecake is firm add a layer of Jello over the top (however much you choose to put on is up to you, I tend to put a thin layer on if I haven't used fruit, and a thick one if I have). Again refrigerate until firm (usually about an hour or so).
