KENTUCKY BOURBON COOKIES
You have to try these Kentucky Bourbon Cookies! The cake mix cookies are chewy and fluffy with a sweet and savory Jim Bean Bourbon Glaze. If you have never tried these cookies, you will not believe how good they are.

Steps:
- Preheat oven to 350 degrees and line a cookie sheet with parchment paper
- Using a large bowl, whisk together the cookie ingredients until combined
- Using a small ice cream scooper, scoot out some dough onto the cookie sheet
- Bake for 8-9 minutes
- Allow cookie to cool for a few minutes before removing from pan and placing onto a wire rack
- Continue to bake of the remaining batter
- Place cookies on a wire rack over another cookie sheet
- Using a small pot, combine all ingredients and cook over medium heat until the sugar is dissolved
- Spoon about 1 tablespoon of the glaze onto each cookie and allow to harden before enjoying

Steps:
- Preheat Oven to 350 Degrees. Line Cookie sheets with parchment paper or silicone mats. Set to the side.
- Beat Butter, Sugars, Vanilla, Bourbon until Fluffy. Mix in Eggs one at a time and beat until fully mixed and smooth.
- In a separate bowl mix the Flour, Baking soda, Baking Powder, Salt. Add these dry ingredients to wet ingredients. Mix to combine.
- Add Oats, Rice Krispie Cereal, Coconut, Craisins.
- Slowly Add Butterscotch Chips and Chocolate Chips until combined.
- Drop Cookie Dough with a Cookie Scoop or a rounded tablespoon about 3 inches apart onto prepared cookie sheet. Bake for 10 to 12 min. or until golden brown. Let cook a few mins. and then transfer to wire cooling rack.
KENTUCKY BOURBON BROWNIES
Melt-in-your-mouth chocolate brownies with just the right hint of bourbon. Pecans are optional for those who may have allergies.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Place butter and chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove from heat and let cool completely, 10 to 15 minutes.
- While chocolate cools, sift flour, baking powder, and salt together in a bowl.
- Beat eggs in a bowl using an electric stand mixer or hand mixer until almost light in color. Mix in bourbon and vanilla extract. Gradually mix in sugar until well blended. Stir in chocolate-butter mixture. Stir in flour mixture until combined, scraping down sides of the bowl as needed. Fold in pecans. Spread brownie mixture into the prepared pan.
- Bake in the preheated oven until edges pull away from the sides of the pan, 30 to 35 minutes. Remove from the oven and let cool completely on a wire rack.

- Place the nuts in a sealable jar. Pour the bourbon over the nuts. Seal and allow to soak overnight.
- Mix the butter and sugar; fold in the soaked nuts. Form into 3/4" balls and refrigerate overnight.
- Line a tray with waxed paper. Melt the chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Roll the balls in the melted chocolate to coat; arrange on the prepared tray. Store in refrigerator until serving.

- Combine the vanilla wafer crumbs, chopped pecans, 1 cup of the confectioners' sugar, and the cocoa. Combine the bourbon and corn syrup and stir into the dry mixture. When thoroughly blended, cover and refrigerate the dough for 1 hour or more. Sift the remaining confectioners' sugar onto a large piece of waxed paper. Take 1 tablespoon of the dough, shape it into a ball, and roll it in the sugar. Repeat until all the dough is used. Store them, covered, in the refrigerator.
