A delicious, low-carb pie that actually tastes great! You, your family and friends will love this one.

1 cup ground pecans
3 tablespoons butter, melted
2 (1 gram) packets Splenda® no calorie sweetener
½ teaspoon coconut extract
½ cup heavy cream
2 (1 gram) packets Splenda® no calorie sweetener
1 (.6 ounce) package sugar-free lime-flavor Jell-O®
⅓ cup boiling water
⅓ cup cold water
2 (8 ounce) packages cream cheese, cut into pieces and softened
½ teaspoon coconut extract
2 tablespoons ground pecans

Steps:

  • In a medium bowl, mix together 1 cup ground pecans, butter, 2 packets sweetener, and 1/2 teaspoon coconut extract. Press firmly into bottom and up sides of an 8 inch pie plate; refrigerate until firm.
  • In a small bowl, whip the heavy cream with 2 packets sweetener until soft peaks form. Set aside.
  • In a large bowl with high sides, mix the gelatin with boiling water until all the gelatin has dissolved. Then stir in the cold water. With an electric mixer, slowly beat in the cream cheese. After all cream cheese is added, stir in remaining 1/2 teaspoon coconut extract, and beat at high speed until smooth. Carefully fold in the whipped cream. Use a spatula to scrape mixture into the pie pan and spread around. Sprinkle remaining 2 tablespoons ground nuts on top. Refrigerate several hours or overnight to allow gelatin to set thoroughly.

Low Carb Key Lime Pie has the refreshing taste of lime with an added ingredient to make the flavor really pop! Very refreshing, satisfying, and made without sugar so you can enjoy it guilt-free!

1 cup almond flour
0.7 oz Swerve® confectioner's sweetener
1 tsp vanilla extract
1.4 oz unsalted butter, melted
7 oz full-fat cream cheese
¼ cup Swerve® confectioner's sweetener
Juice and zest of 4 limes
1 tsp powdered gelatin
1 TB hot water
1 cup heavy cream
Finely grated zest of 1 lime, to garnish
10 drops lime vitality essential oil

Steps:

  • 1. Preheat the oven to 350°F. 2. Combine the almond flour, confectioner's sweetener together in a bowl. Whisk the vanilla essence into the melted butter and add to the almond flour, mixing well. 3. Press the mixture down into a medium-size, round springform tin (7-inches in diameter) compacting down in a firm, even layer. 4. Bake in the oven for 10-12 minutes, then remove and allow to cool completely. 5. Combine the cream cheese, confectioner's sweetener, lime EO, the zest, and lime juice in a bowl. Mix well and set aside. 6. Dissolve the gelatine in the hot water and keep it aside. 7. Whisk the heavy cream to semi-stiff peaks, then add the gelatin (which should have cooled slightly) and whip to stiff peaks. This addition of gelatin stabilizes the cream. 8. Fold the whipped cream into the cream cheese/lime mixture and pour into the baking tin on top of the crust. Place in the fridge to chill completely (even better if it's overnight). 9. To serve, remove the pie from the tin and peel away any parchment. Garnish your Low Carb Key Lime Pie with finely grated lime zest and cut into 8 decadently delicious slices.

This healthy key lime pie has a buttery crust and is topped with a rich and creamy lime filling! No sugar needed, it uses simple ingredients and is sure to impress!

1 recipe shortbread cookies (or any low calorie cookies of choice, crushed (1 1/2 cups))
1/4 cup granulated sweetener of choice
5 tablespoon light butter (or light margarine)
2 cups Greek yogurt (non-fat)
1 cup cream cheese (non-fat or dairy free)
2 large eggs
2/3 cup granulated sweetener of choice
1/4 cup all purpose flour (gluten free, if needed)
1/4 teaspoon salt
1 tablespoon lime juice
1 teaspoon lime extract (optional)
1 13.5 oz coconut milk (chilled)
4 tablespoon sugar free powdered sugar
1 teaspoon lime extract (optional)

Steps:

  • Preheat the oven to 170C/325F. Lightly grease an 8-inch springform pan and set aside.
  • In a bowl, add your crushed cookies, sweetener, and melted butter and mix until combined. Transfer into the pan and press into place.
  • Add your filling ingredients into a blender and blend until smooth. Transfer on top of the crust and place in the oven. Bake the pie for 45-55 minutes, or until the middle is set.
  • Remove the pie from the oven and let it cool completely. Once cool, refrigerate for at least 4 hours, or overnight.
  • Once the pie is chilled, prepare the whipped topping. Scoop out the cream portion of the coconut milk and add it into a mixing bowl. Add the sweetener and lime extract and beat until soft peaks form. Spread over the top of the pie and slice and serve.

⅔ cup Lime Juice

Steps:

  • Prepare your pie crust as directed and allow it to cool. Preheat your oven to 350
  • In a mixing bowl of a stand mixer fitted with the whisk attachment, beat together the egg yolks with the lime zest until the color becomes light and the texture is fluffy (about five minutes on a low to medium speed). Turn the speed to low and slowly add the sugar free condensed milk and vanilla extract. Continue to beat until the mixture has thickened (four to five minutes). Stir in the lime juice by hand until just combined
  • Transfer the mixture into the prepared and cooled crust. Then bake for 10-12 minutes or until the filling has set. Bake for 10-12 minutes, until the filling has set. Allow the pie to cool on a wire rack. Then transfer it to the refrigerator. It is recommended that you freeze the pie for 15 to 20 minutes before serving
  • Serve with whipped topping or the topping of your choice.

This is a very easy recipe. I made four of these pies over the weekend and I was able to knock them out in under an hour. I gave three of the pies away and the recipients of these pies raved about how absolutely delicious they were. You may have seen this recipe on our web site before but, I tweaked it a little bit to make it even tastier. You will love this pie and so will your family and you won't be getting all the sugar and carbs. Enjoy!

1 cup pecans, ground
3 tbsp butter, melted
2 tsp Steviva Blend
0.50 tsp coconut extract
0.50 cup heavy cream (optional)
1 envelope unflavored Knox gelatin
3 un-sweetened Key Lime juice (I use Nellie and Joe's Famous Key Lime Juice. I found it at Safeway. If you can't find it you can order it on line at http://www.keylimejuice.com)
0.33 cup boiling water
0.33 cup cold water
2 -(8 oz.) packages low fat cream cheese, cut into pieces
0.25 cup Steviva Blend
0.50 tsp coconut extract
2 tbsp ground pecans

Steps:

  • In a medium bowl, mix together 1 cup ground pecans, butter, 2 teaspoons Steviva Blend, and 1/2 teaspoon coconut extract. (To save time but, NOT calories, I used a graham cracker crust).
  • Press firmly into bottom and up sides of an 8 inch pie plate; refrigerate until firm. In a small bowl, whip the heavy cream with 2 tsp. Steviva Blend until soft peaks form. Set aside.
  • In a large bowl with high sides, mix the Knox gelatin with boiling water until all the gelatin has dissolved. Then stir in the cold water. With an electric mixer, slowly beat in the cream cheese. After all cream cheese is added, stir in remaining 1/2 teaspoon coconut extract, and beat at high speed until smooth.
  • Carefully fold in the whipped cream.
  • Use a spatula to scrape mixture into the pie pan and spread around. Sprinkle remaining 2 tablespoons ground nuts on top.
  • Refrigerate several hours or overnight to allow gelatin to set thoroughly.
