THICK AND CREAMY CHOCOLATE MOUSSE
This healthy chocolate mousse recipe calls for just four ingredients, and comes together in minutes! Try the creamy, dreamy mousse that's fancy enough for a special occasion and easy enough for a weeknight.

Steps:
- Place coconut milk (use full-fat coconut milk for best results) in the freezer for about an hour prior to making the mousse. NOTE: You need to 2 full cups of solid coconut cream. If one can of coconut milk doesn't have enough solid coconut cream, then use more from another can.
- Spoon the thickened coconut milk (cream) out of the can and place in a large bowl or mixer.
- Add honey, vanilla, and cocoa powder.
- Beat until smooth and creamy.
- Serve with fruit.

- Place cold milk in mixing bowl.
- Add chocolate pudding mix and whisk for 2-3 minutes.
- Add thawed Cool Whip and whisk until mixed.
- Place in serving bowl or individual small bowls.
- Refrigerate until serving time.
- You can prepare with any flavor of pudding mix.
- I have also served with sliced strawberries.

Steps:
- 1. Place all the ingredients except the garnish into the Vitamix container in the order listed and secure the lid. Select Variable 1. Turn the machine on and slowly increase the speed to Variable 10, then to High. Blend for 35 to 40 seconds, using the tamper to press the ingredients into the blades.
- 2. Serve immediately, garnished with fresh berries, or shaved chocolate for more decadence.

Steps:
- In a saucepan over low heat, melt candy bars (or you can use a double boiler or microwave if preferred).
- Cool chocolate for 10 minutes.
- Placed whipped topping in a bowl and then fold in cooled melted chocolate.
- Cover and chill for 3 hours.
- Shape into 1 inch balls and then roll in the vanilla wafer crumbs.
- Store in a covered container in the refrigerator or freeze.

- Start by separating your eggs – yolks into one bowl and white in another. Set the egg yolks aside for now.
- Measure the sugar then turn your mixer back on and gradually add the sugar to your egg whites. Keep whisking until your egg whites have formed stiff peaks.
- Use a double boiler (a heatproof bowl on top of a pan of simmer wateto melt the chocolate. Break the chocolate up before you put it in the bowl to make it easier to melt (or cut it up yourself). Stir the chocolate while it's melting.
- Remove the bowl of chocolate from the heat and add the egg yolks. Stir them in really quickly so they don't have a chance to cook.
