KITTENCAL'S MILK SOAKED GRILLED CORN IN HUSKS... DELICIOUS!

Kittencal's Milk Soaked Grilled Corn in Husks... Delicious! image

You are in for a real treat! grilling with the husks left on insures for tender moist flavorful corn, make certain to soak the corn in the water/milk mixture for the stated amount of time, if you like a little heat then add in a small amount of cayenne pepper to the butter mixture. *NOTE* to save some time you can prepare the corn earlier in the day, tie with string and refrigerate, just soak for stated time before grilling you may wrap the corn in foil after soaking if you wish but I prefer grilling in just the husks, I find it has more flavor, also see my recipe#121897 :)

Categories     Corn

Time 1h10m

Yield 6 corn

Number Of Ingredients 9

5 -6 ears corn, in husks
1/2 cup butter, softened
3 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon black pepper (or to taste)
cold water
1 cup milk
parmesan cheese (in a cheese shaker) (optional)
kitchen string, to tie the corn (use only cotton string)

Steps:

  • Carefully peel back the husks for the corn to within 1-inch of the bottom; remove the silk and discard silk.
  • In a bowl combine soft butter with fresh parsley, salt and black pepper; spread over the corn (I use my hands for this).
  • Rewrap corn in the husks.
  • Tie with a heavy string in two places (near top and bottom, do not use nylon string!).
  • Place the corn in a very large bowl; cover with cold water then mix in 1 cup milk into the water (make certain to soak the corn with the string on).
  • Soak the corn in the water/milk mixture for about 30 minutes or a little more (no less than 30 minutes!).
  • Grill the corn covered on the grill over medium heat, and cook for 22-30 minutes or until tender, TURNING OFTEN.
  • Serve with more butter, salt and freshly grated Parmesan cheese (I use a cheese shaker to shake the cheese onto the corn at the table while eating).
  • DELICIOUS!

GRILLED CORN ON THE COB RECIPE

Grilled Corn on the Cob Recipe image

Of all the many ways to prepare corn on the cob, grilling, by far, makes the tastiest corn.

Provided by meathead

Categories     Dinner     Lunch     Side Dish     Vegetable

Number Of Ingredients 3

4 ears fresh sweet corn
8 tablespoons butter
4 loosely packed tablespoons fresh tarragon

Steps:

  • Fire up. Preheat the grill to medium high.
  • Prep. Remove the husks, pull off the silky threads that get stuck in your teeth. Respect your guests. Get them all. Wash the ear in cold water.
  • Cook. Melt the butter in a saucepan over a medium low heat. Chop the tarragon and chuck it in. Let it steep in the butter for about 15 minutes so it is infused with tarragon flavor.
  • Put the corn on the grill about 20 minutes before everything else is ready. You don't want to overcook it or leave it sitting around getting cold. Rest the ears between the bars of the grates so you can roll them from groove to groove. Leave 2-4 grooves between ears for easy rolling. Paint them gently all over with the tarragon butter. Try not to let too much fat drip onto the fire so it doesn't flare up and get the corn sooty. Get the tarragon chunks on the corn. If there is a flareup, move the corn to another part of the grill. Close the lid and grill over direct heat for about 4-5 minutes until some of the kernels get toasty golden. Don't burn them. Roll the ears a couple of grooves, about 1/4 turn, and paint them again. Keep browning, turning, and painting until you have done all four quarters. If you run out of butter, don't sweat it.
  • Serve. Remove and serve. You can put butter and salt on the table, but urge your guest to taste their ear unadulterated first. Chances are they won't use any butter or salt.

  • Remove husks from corn and thoroughly rinse each piece. Soak the corn cobs in cold water for 15 minutes.
  • Cut large pieces of aluminum foil, one for each piece of corn, enough to completely wrap and cover each piece. Then place a piece of corn on each piece of foil.
  • Melt butter in the microwave on high for about 20 seconds, or until completely melted. Brush each piece of corn lightly with the melted butter. Then drizzle each piece with lime juice and sprinkle with cilantro, salt, and pepper. Wrap it up in the foil so all the excess juices are still closed in with the corn. (See picture below).
