LAMB CHAR SIU STIR-FRY



Lamb Char Siu Stir-Fry image

This is a wonderful, tasty and simple recipe to make, it is a great after work no fuss meal. There is a little bit in the way of chopping up the vegetables, but it is probably all done in about 20 Min's and cooked in about 20 Min's in a wok. You can add as many of the chili seeds or as few as you want to make it to suit personal spiciness level or for that matter add more chilies if you desire. This is a great recipe for using up any vegetables. I have stated what I used but some of these were already in my fridge and I wanted to use them up before going off, so feel free to play around with the veg ingredients.

600 g lamb fillets, thinly sliced
2 tablespoons peanut oil
3 tablespoons rice vinegar
4 tablespoons char siu sauce
3 tablespoons ketjap manis
3 garlic cloves, crushed
2 red chilies, sliced thinly
1 tablespoon peanut oil, extra
1 red capsicum (200g)
10 broccoli florets, small, if they are large 5 cut in half
4 large fresh shiitake mushrooms (90g)
3 large oyster mushrooms (80g)
100 g snow peas, trimmed
120 g bean sprouts
300 g fresh noodles

Steps:

  • Add 1 tablespoon peanut oil to a wok, cook lamb in batches until browned, adding more peanut oil as needed. Set to one side.
  • De-glaze wok with rice vinegar, add extra 1 tablespoon of peanut oil, add pepper, chilies and garlic, stir-fry until veg start to soften.
  • Add mushrooms, florets and return lamb to wok, add sauce and ketjap manis, stir-fry 3-4 Min's, add snow peas and bean sprouts, stir-fry until sprouts are just tender, about 3 Min's. Add noodles and stir-fry to heat through.
  • Serve as is.

225 g medium egg noodles
2 tablespoons peanut oil
500 g lamb shoulder, slice fillet into 1cm pieces
2 carrots, cut into matchsticks
1 red capsicum, deseeded and cut into matchsticks
1 yellow capsicum, deseeded and cut into matchsticks
200 g pak choi
200 g bean sprouts
4 shallots, cut into thin strips
4 tablespoons oyster sauce
1 tablespoon dark soy sauce
2 tablespoons honey
1/2 lemon, juice and zest of, finely grated
black pepper

Steps:

  • Prepare the noodles according to the packet instructions, then drain well.
  • Meanwhile, heat the oil in a wok until very hot.
  • Add the lamb and stir-fry for 5 minutes, until seared on all sides.
  • Add the carrots and capsicums and stir-fry for 4 minutes, or until softened.
  • Add the pak choi, bean sprouts and shallots and cook for a further 1 minute.
  • Reduce the heat; add the drained noodles, oyster sauce, soy sauce, honey, lemon juice and zest and black pepper.
  • Combine well and stir-fry for 2 minutes or until everything is hot and the lamb is cooked through.

1 cup rice
1 1/2 tablespoons cumin seeds
2 teaspoons peppercorns
4 teaspoons red wine or 4 teaspoons broth
1 lb lamb shoulder, cut in strips
1 1/2 cups onions, thinly sliced
1 red pepper, julienne
3 garlic cloves
1/4 teaspoon crushed red pepper flakes
2 tablespoons soy sauce
2 tablespoons sherry wine vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
1 cup scallion

Steps:

  • Cook Rice.
  • Heat cumin and peppercorns in a large skillet over high. Cook 1 minute or until fragrant and toasted, stirring frequently. Cool slightly; crush with a mortar and pestle, or grind coarsely in an electric spice grinder.
  • Heat 2 teaspoons oil in pan over medium-high. Add half of lamb; stir-fry 3 minutes or until browned. Sprinkle with 1 teaspoon spice mixture. Transfer to a plate. Repeat procedure with remaining oil and lamb and 1 teaspoon spice mixture.
  • Add onion, bell pepper, and garlic to pan; stir-fry 4 minutes or until lightly charred. Add crushed red pepper and remaining spice mixture; stir-fry 1 minute. Add cooked lamb and any juices from plate, soy sauce, vinegar, salt, and sugar. Cook, tossing constantly, until liquid coats meat and vegetables. Remove from heat. Add scallions; toss to wilt. Serve stir-fry over rice.

1 teaspoon toasted ground szechuan peppercorns

1 rack of lamb, trimmed of fat,about 2 pounds
1/3 cup hoisin sauce
1/3 cup soy sauce

1 mango, peeled and diced

Steps:

  • To prepare marinade: Combine rosemary, garlic, peppercorns, soy sauces, salt and oil in a large bowl.
  • Add lamb and turn to coat.
  • Cover and refrigerate 2-3 hours.
  • To prepare glaze: Combine hoisin sauce, soy sauce and honey in a bowl.
  • Mix and set aside.
  • To prepare salsa: Combine mango, bell pepper, onion, mint, soy sauces, honey, lemon juice and plum sauce in a bowl; mix well.

  • Preheat broiler with rack placed 4 to 5 inches from heating element.
  • Place lamb, meat side up, in a foil-lined baking pan.

  • Turn meat again, brush with glaze, and broil for 3 to 4 minutes more.
  • Slice rack between ribs.

1 cup canned low-salt chicken broth

2 teaspoons garlic chili sauce
3 tablespoons vegetable oil
2 tablespoons oriental sesame oil
3 large garlic cloves, peeled
1 1/2 pounds zucchini, cut in 2 x 1/3 x 1/3-inch strips
1 medium onion, thinly sliced
5 green onions, cut into 2-inch lengths

Steps:

  • Mix lamb, 2 tablespoons soy sauce, ginger, minced garlic and 2 teaspoons cornstarch in large bowl. Mix broth, lemon juice, chili sauce and remaining 2 tablespoons soy sauce and 2 tablespoons cornstarch in small bowl.
  • Heat both oils in wok or Dutch oven over high heat. Add 3 garlic cloves; cook until golden brown, about 2 minutes. Discard garlic. Add zucchini and onion; stir-fry until crisp-tender, about 3 minutes. Add green onions; stir-fry just until wilted, about 1 minute. Transfer vegetables to platter. 3 tablespoons hoisin sauce*
3 tablespoons soy sauce
2 tablespoons Shaoxing wine (Chinese rice wine) or dry Sherry
1 tablespoon sugar
1 teaspoon Chinese five-spice powder**
1/2 teaspoon salt
18 rib lamb chops (about 3 pounds), well trimmed
2 tablespoons honey
1 tablespoon water
*Available in the Asian foods section of many supermarkets and at Asian markets.
**A spice blend that usually contains ground fennel seeds, Szechuan peppercorns, cinnamon, star anise, and cloves; available in the spice section of most supermarkets.

Steps:

  • Whisk first 6 ingredients in small bowl. Transfer to large resealable plastic bag. Add lamb; seal bag and turn to coat. Marinate in refrigerator at least 4 hours or overnight.
  • Prepare barbecue (medium-high heat). Drain lamb, leaving some marinade clinging. Grill lamb until slightly charred and cooked to desired doneness, about 21/2 minutes per side for medium-rare. Transfer to platter.
  • Stir honey and 1 tablespoon water in small skillet over medium heat until warm. Brush over lamb chops.

1 tablespoon vegetable oil
600 g pork, stir-fry strips (just over 19 ounces)
5 green shallots, thinly sliced
150 g green beans, trimmed and halved (just under 5 ounces)
150 g snow peas, trimmed and halved diagonally (just under 5 ounces)
1/3 cup char siu sauce
2 tablespoons water
1/3 cup walnuts
fresh egg noodles or steamed rice, to serve

Steps:

  • Heat a wok over a high heat; add 1 teaspoon of oil and swirl it around the wok; cook the pork strips in batches for 1-2 minutes or until golden, adding a little more oil if necessary. Transfer to a large plate.
  • Add the the green shallots, beans and snow peas to the wok and stir fry for 1 minute; add 2 tablespoons of water, cover the wok and cook for 1 minute; add the Char Siu sauce, the remaining tablespoon of water, the walnuts and the pork; toss until well combined and heated through; spoon the noodles or rice onto the serving plates; top with the stir-fry and serve immediately.
