GRATIN OF CARROTS & ROOT VEGETABLES



Gratin of carrots & root vegetables image

Serve as a tasty side for your favourite meat dish or as an impressive vegetarian main.

500g waxy potatoes (we used Desirée), sliced wafer thin
1 small parsnip , sliced wafer thin
3 plump garlic cloves , thinly sliced
1 tbsp chopped fresh rosemary
284ml carton double cream
150ml full-fat milk
350g carrots , sliced wafer thin
50g parmesan , grated

Steps:

  • Preheat the oven to 180C/gas 4/fan 160C and butter a shallow ovenproof dish. Layer the potatoes, then the parsnip in the bottom of the dish with two of the sliced garlic cloves and sprinkle over a little salt and half the rosemary. It's best to keep the potatoes buried under the other vegetables because they go black if they are on top of the gratin.
  • Pour the cream and milk into a large saucepan, add the rest of the rosemary and garlic, the carrots and a little seasoning. Bring to the boil, then turn the heat to the lowest it will go and simmer for 3 minutes.
  • Pour the carrots and cream over the other vegetables, and spread the carrots out. Sprinkle over the parmesan, cover with foil and bake for 40 minutes. Remove the foil and bake a further 20 minutes until golden and bubbly.

Number Of Ingredients 10

1 1/2 pounds mature potatoes, peeled
1/2 pound parsnips, peeled
1/2 pound carrots, peeled
1 red onion, finely chopped
1/4 cup chopped fresh dill
3 tablespoons matzo meal or unseasoned bread crumbs
1 teaspoon salt
1/2 teaspoon freshly ground white pepper
2 or 3 eggs, lightly beaten (the final amount will depend on the starchiness of the potatoes)
Vegetable or corn oil for frying

Steps:

  • Place a large fine-meshed sieve over a large bowl. Grate the potatoes and place in the sieve. Grate the parships and carrots and place in another large bowl. Add the onion, dill, matzo meal, salt, and pepper to the parsnip mixture.
  • Using your hands, squeeze the potatoes a palmful at a time over the sieve to remove as much moisture as possible. Add the squeezed potatoes to the parship mixture. When all the potatoes have been squeezed, remove the sieve and carefully pour off the potato liquid while leaving the white potato starch in the bottom. Add the starch to the vegetable mixture. Add 2 eggs and thoroughly combine. Put a scant 1/4 cup of the mixture into the palm of your hand and flatten with your other hand. If the mixture sticks together, you can form the remaining mixture into cakes. If not, add another egg and then form the cakes.
  • In a medium, heavy-bottomed skilled over medium heat, heat 1/2 inch vegetable oil. Place a few of the cakes in the hot oil and fry until dark gold on one side. Flip with a spatula and cook the second side until golden. Place on a baking sheet and keep warm in a 200 degree F oven while frying the remaining cakes. Serve hot.

3 parsnips, peeled, cut into 1-inch pieces (about 2 1/4 cups)
2 cloves garlic, smashed
2 Yukon Gold potatoes, peeled, cut into 1-inch cubes (about 2 cups)
1 celery root, peeled, cut into 1-inch cubes (about 2 cups)
1 teaspoon kosher salt, plus 2 tablespoons for the cooking water
Zest of 1 small lemon
1/2 teaspoon chopped fresh thyme
1/4 cup extra-virgin olive oil
1/4 cup freshly grated Parmesan

Steps:

  • Place the parsnips, garlic, potatoes and celery root in a large pot. Cover with cold water by one inch and add the 2 tablespoons salt. Bring to a boil over high heat. Reduce the heat to medium and simmer until the vegetables are tender, 10 to 15 minutes. Drain well, then return the cooked vegetables to the pot. Using a wooden spoon, stir the vegetables over medium heat to remove some of the excess moisture, about 4 minutes. With a large fork or potato masher, lightly mash the vegetables. Off the heat, add the 1 teaspoon salt and the lemon zest, thyme, olive oil and Parmesan. Mix until well combined. Serve hot.

3/4 pound parsnips
3/4 pound parsley root
1 pound russet, Yukon gold or white rose potatoes
1 clove garlic, crushed
Coarse salt and freshly ground pepper to taste
2 tablespoons unsalted butter
1 to 1 1/2 cups heavy cream

Steps:

  • Preheat the oven to 400 degrees.
  • Peel the parsnips, parsley root and potatoes and slice them very thin (the slicing can be done with a food processor).
  • Lightly butter a shallow glass or enamel cast-iron baking dish of one-and-a-half-quart capacity and rub it with the crushed clove of garlic. Discard the garlic.
  • Layer the vegetable slices in the dish, seasoning with salt and pepper as you go. Top with butter cut in small pieces and pour on just enough cream to moisten the vegetables.
  • Cover loosely with foil and bake for 15 minutes. Uncover and bake another 30 minutes or until the vegetables are tender. If they get too dry add more cream.

1/2 lb fall carrots, peeled and thinly sliced
1/2 lb white turnips, peeled, halved and thinly sliced
1/2 lb sweet onions, peeled, halved and thinly sliced
2 cloves garlic
2 TBS organic unsalted butter
1 teasp kosher salt or to taste
1/2 teasp freshly ground white pepper
1 cup organic milk
2 cups organic heavy cream
Additional 1 TBS butter for shavings

Steps:

  • Preheat oven to 400. In a shallow 12 inch gratin dish, rub butter over sides and bottom, put garlic cloves through press, rubbing puree and juices over sides and bottom of dish. Place vegetables in lightly seasoned layers, beginning and ending with potatoes. Bring milk and l cup of cream to simmer and pour to just cover vegetables. Dribble the remaining cream over the surface and dot with thin shavings of butter. Place dish on sheet pan and bake for about 50-60 minutes until the liquid has been almost totally absorbed, the potatoes give no resistance to a knife point and the surface is delectably brown.
