Leek-Vegetable Fritters With Lemon Cream image

Number Of Ingredients 13

2 pounds leeks, pale green and white parts only (or use 1 pound leeks and 1 pound cooked vegetables like carrots, potatoes, summer squash, beets, zucchini)
Salt
2 scallions, trimmed, halved lengthwise and thinly sliced
1/4 cup all-purpose flour
1 teaspoon baking powder
Freshly ground black pepper
Pinch cayenne
1 egg
Vegetable oil, for frying
1/2 cup sour cream
1 tablespoon freshly squeezed lemon juice
Pinch freshly grated lemon zest
Salt

Steps:

  • Fill sink with cold water. Halve leeks lengthwise, then swish gently in water, fanning out layers to loosen any grit. Slice crosswise into 1/4-inch strips. (If using cooked vegetables, slice into 1/4-inch strips and add to bowl in Step 3.)
  • Bring a pot of salted water to a boil and cook leeks 3 to 4 minutes, until softened but not limp. Drain and wring dry in a towel.
  • Transfer leeks to a large bowl and add scallions. In another bowl, whisk together flour, 1 teaspoon salt, baking powder, a few grinds of black pepper and cayenne. Add to leeks and stir. Add egg and stir.
  • Heat oven to 200 degrees. In a large heavy skillet, heat 2 tablespoons oil over medium heat until shimmering. Drop heaping tablespoons of leek mixture into skillet and lightly flatten with the back of a spatula. Cook until golden brown, about 3 minutes; if cooking too quickly, lower the heat. Flip fritters and cook until golden on the other side, another 3 minutes. Drain on paper towels and transfer to oven.
  • Repeat with remaining leek mixture, adding oil and adjusting heat as needed.
  • When fritters are cooked, make cream: whisk all ingredients together and season to taste with salt. Serve warm fritters in stacks, with a dollop of cream on top.

12 cups chopped leeks (white and pale green parts only; about 10 medium)
3/4 cup (or more) panko (Japanese breadcrumbs)*
2 large eggs, beaten to blend
1/4 cup fresh lemon juice plus lemon wedges for garnish
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 1/2 cups chopped walnuts
Vegetable oil (for frying)
*Available in the Asian foods section of some supermarkets and at Asian markets.

Steps:

  • Cook leeks in large saucepan of boiling salted water until just tender, about 8 minutes. Drain very well and cool. Working in batches, wrap leeks in kitchen towels and squeeze out all liquid. Place leeks in processor and blend to coarse paste. Transfer leeks to large bowl. Add 3/4 cup panko, eggs, lemon juice, baking powder, salt, and pepper; blend well. Mix in nuts. Add more panko by tablespoonfuls if mixture is very moist.
  • Shape 3 tablespoons leek-walnut mixture into 1/2-inch-thick patty. Place on plastic-lined baking sheet. Repeat with remaining mixture. Do ahead Can be made 1 day ahead. Cover patties with plastic and refrigerate.
  • Preheat oven to 300°F. Line baking sheet with several layers of paper towels. Pour oil into large saucepan to depth of 1 inch. Attach deep-fry thermometer to side of pan and heat oil to 350°F. Working in batches, fry patties until golden brown, about 4 minutes per side. Transfer fritters to prepared baking sheet to drain. Place baking sheet in oven to keep fritters warm.
  • Divide fritters among plates. Garnish with lemon wedges and serve.

½ cup beer
¼ cup milk
1 tablespoon butter, melted
1 egg, beaten
½ cup whole wheat flour
½ cup all-purpose flour

¼ teaspoon white sugar
ground black pepper, to taste
1 pinch dried basil, or to taste
1 pinch dried thyme, or to taste
1 (12 ounce) can whole kernel corn, drained
½ cup shredded Cheddar cheese
1 cup vegetable oil, or as needed

Steps:

  • Heat 1 tablespoon vegetable oil in a skillet over medium heat; cook and stir leeks until slightly browned, about 5 minutes.
  • Stir beer, milk, butter, and egg together in a bowl. Whisk whole wheat flour, all-purpose flour, baking powder, salt, sugar, black pepper, basil, and thyme into beer mixture until batter is smooth. Fold corn, Cheddar cheese, and leeks into batter.
  • Heat about 2 tablespoons vegetable oil in a large pan over medium heat. Drop large spoonfuls batter into the hot oil and fry until golden, 3 to 5 minutes. Add 2 more tablespoons oil to skillet and flip fritters; fry until other side is golden, 3 to 5 minutes. Remove fritters with a slotted spoon and place on a paper towel-lined plate. Repeat with remaining batter and oil.

3 leeks (1 lb total trimmed weight)
5 shallots, finely chopped
2/3 cup olive oil
1 red chili pepper, seeded and sliced
1/2 cup parsley, finely chopped
3/4 teaspoon ground coriander
1 teaspoon ground cumin
1/4 teaspoon ground turmeric
1/4 teaspoon ground cinnamon
1 teaspoon sugar
1/2 teaspoon salt
1 egg white
1 tablespoon baking powder
3/4 cup plus 1 tbsp self-raising flour
4 1/2 tablespoons unsalted butter, melted
2/3 cup milk
1 egg
1/2 cup Greek yogurt
1/2 cup sour cream
2 cups cilantro leaves, chopped
1/2 cup fresh parsley leaves, chopped
2 garlic cloves, crushed
2 tablespoons lemon juice
3 tablespoons olive oil
1/2 teaspoon salt

Steps:

  • First make your sauce. Blitz all the sauce ingredients together in a food processor or blender until pale green. Set aside for later.
  • Slice the leeks into 3/4 inch thick pieces, then rinse and drain in a colander. Pour half the olive oil in a medium pan and cook the shallots and leeks on a medium heat for 15 minutes, or until they have softened. Place the mixture in a large bowl, add the chilli, parsley, spices, sugar and salt, then leave to cool.
  • Whisk the egg white to soft peaks in a medium bowl, then gently fold into the cooled leek mixture.
  • In another bowl combine the flour, baking powder, egg, milk and butter to form a batter. Spoon in the vegetable mixture and gently stir to combine.
  • Heat 2 tbsp of oil in a large frying pan on a medium flame. Once hot spoon in half the batter to form four large fritters. Fry for 2-3 minutes on each side, or until golden and crisp. Remove, drain on kitchen towels and keep warm. Repeat with the remaining batter.
  • Serve the fritters warm with the sauce and a side of rocket (or your preferred salad leaves). Any leftover fritters will be delicious eaten cold the next day.

Confit Leeks With Lentils, Lemon and Cream image

Leeks slow-cooked in olive oil star in this hearty vegetarian main of lentils, lemon and herbs. These confit leeks are roasted and softened without browning, slowly releasing their flavor into the oil. The mixture could be spooned over baked potatoes or roasted chicken, but the lentils give the dish heft and bite, and the leek cream makes it extra special. If you can't find French lentils, you can easily substitute other green or beluga lentils, or pearl barley or other grains. Serve this dish warm or at room temperature, and eat alongside some roasted potatoes for a complete meal, if you like.

5 medium leeks (about 2 1/2 pounds/1 kilogram), trimmed and washed, white and light greens cut into 2-centimeter-thick rounds (about 6 cups/620 grams)
10 garlic cloves, peeled
10 fresh thyme sprigs
Kosher salt and black pepper
3/4 cup plus 2 tablespoons/200 milliliters extra-virgin olive oil
3/4 cup/150 grams dried French (Le Puy) lentils, washed
1/3 cup plus 1 tablespoon/100 milliliters heavy cream (double cream)
2 1/4 teaspoons Dijon mustard
5 tablespoons/75 milliliters fresh lemon juice (from 2 medium lemons)
3 tablespoons roughly chopped parsley leaves
3 tablespoons roughly chopped fresh dill leaves
3 tablespoons roughly chopped fresh tarragon leaves

Steps:

  • Heat oven to 180 degrees Celsius/350 degrees Fahrenheit.
  • If necessary, soak and carefully rinse the leek rounds in a large bowl of water to get rid of any excess grit. Drain, then cautiously pat dry, keeping the rounds intact.
  • Add the leeks, garlic, thyme, 1 teaspoon salt and a good grind of pepper to a 12-by-8-inch/30-by-20-centimeter baking dish. Mix gently to combine, then pour the oil on top. Arrange the leeks cut-side up, then cover tightly with foil and bake for 35 minutes.
  • Remove the baking dish from the oven and gently turn the leeks using two forks. Cover again with foil and return to the oven to bake until completely softened, about 35 minutes more. Turn the oven temperature up to 200 degrees Celsius/400 degrees Fahrenheit.
  • As the leeks bake, fill a medium saucepan about two-thirds of the way with water and bring to a boil over high. Add the lentils and cook until just tender but not at all mushy, 12 to 15 minutes. Drain well and set aside.
  • When ready, remove the confit leeks from the oven and transfer a heaping 1/2 cup/100 grams of the cooked leeks plus 5 of the garlic cloves to a bowl for the leek cream. Add the cooked lentils to the remaining leeks in the baking dish along with 1/4 teaspoon salt and a good grind of pepper; mix gently to combine. Cover again with the foil and return to the oven for 15 minutes. Remove the foil and leave to settle for 10 minutes. Discard the thyme sprigs.
  • While the lentils bake with the leeks, make the cream: Add reserved leeks and garlic to a food processor along with the heavy cream, mustard, 1 tablespoon lemon juice and 1/8 teaspoon of salt; blitz until smooth.
  • When ready, stir the remaining 4 tablespoons lemon juice and the chopped herbs into the lentil and leek mixture. Transfer to a rimmed platter and serve with the leek cream in a bowl alongside.

4 medium leeks (between 3/4 inch and 1 1/4 inches in diameter)
2 tablespoons unsalted butter
2 cloves garlic, minced
1/4 cup heavy cream
1/4 cup chicken broth
1/2 teaspoon grated lemon, zest of
1 tablespoon minced fresh parsley
salt
ground black pepper

Steps:

  • Trim leeks about 2 inches beyond the point where the leaves start to darken.
  • Trim the root end and cut the leeks in half length-wise and then crosswise into 1/2-inch pieces.
  • Place the leek pieces in a large bowl filled with cold water and rinse thoroughly.
  • Lift the leeks out of the water (the soil will have sunk to the bottom) and into a colander to drain.
  • Melt the butter in a 12-inch skillet over medium-high heat.
  • Add the leeks and garlic and cook, stirring occasionally, until the leeks start to soften, about 5 minutes.
  • Add the cream, broth and zest.
  • Cover and simmer until the leeks are tender, about 5 minutes.
  • Remove the lid and cook until the braising liquid thickens, about 2 minutes.
  • Sprinkle with parsley, season with salt and pepper to taste.
  • Serve immediately.
