APPLE BREAD
I am lucky enough to live in a small community whose school district still allows us to send home-baked goods with our children. My daughter is in 7th grade now, but her classmates still beg her to have her mom send this special treat. It's a beautiful quick bread your family, friends, and all the neighbor children will love.

Steps:
- Preheat oven to 300 degrees F (150 degrees C). Prepare 2 loaf pans (8 1/2x4 1/2-inch loaf pans) with cooking spray.
- Mix flour, baking soda, salt, walnuts, and apples in a large bowl. Whisk oil, sugar, eggs, and cinnamon together in a small bowl; add to flour mixture and mix until just moistened. Evenly divide mixture between prepared loaf pans.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, about 90 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

APPLE BREAD
Steps:
- Preheat oven to 350 degrees F. Grease an 8 ½ x 4 ½ -inch loaf pan.
- In a large mixing bowl, cream together butter and brown sugar. Beat in egg, vanilla extract, lemon juice and applesauce.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, ginger and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Gently fold in apples, raisins and walnuts, if using.
- Transfer batter to the prepared loaf pan.
- In a small bowl, stir together the granulated sugar and cinnamon for the topping. Sprinkle on top of the batter. Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for about 10 minutes; transfer to a wire rack to cool completely.

APPLE-ALMOND-COCONUT QUICK BREAD WITH LEMON GLAZE
An easy to make quick bread gets the addition of shredded coconut, almond and apple and then topped with a lemon glaze.

Steps:
- Preheat the oven to 350 degrees F. Lightly brush one 9-by-5-by-3-inch loaf pan or three 6-by-3-by-2-inch mini loaf pans with melted butter and set aside.
- Combine the flour, granulated sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a medium bowl. Add the coconut and almonds and toss together. Set aside.
- Whisk together the melted butter, yogurt, vanilla extract, eggs and grated zest if using in a small bowl. Stir in the shredded apples. Fold this mixture into the dry ingredients until just incorporated.
- Transfer the batter to the prepared loaf pan(s). Tap the bottom on a hard surface a few times and smooth the top. Bake until a toothpick inserted in the center comes out clean, 55 to 60 minutes for the regular and 35 to 40 minutes for the minis. Transfer to a wire rack to cool for 30 minutes, then turn the bread out and let cool completely on the rack.
- Whisk together the confectioners' sugar, milk and lemon zest and juice in a small bowl.
- Pour the glaze over the bread and allow to set at room temperature, 15 to 20 minutes. Store in an airtight container for up to 1 week.
LEMON APPLE BREAD
Steps:
- Butter two 8 x 4" loaf pans, dust lightly with flour and shak out excess. Preheat oven to 350 and position rack in center. In food processor combine first seven ingredients and mix for 10 seconds. Remove and set aside. In same work bowl, combine apples and lemon peel and pulse 3 times to chop coarsely. Add sugar and eggs and blend one minute. Add butter, lemon juice and vanilla extract and mix 1 minute longer. Add dry ingredients and pulse until combined. Do not overmix. Spoon batter into prepared pans and bake until browned, about 40-45 minutes. Cool in pans 10 minutes and turn out onto rack to cool completely.
KIDS CAN BAKE: APPLE BREAD
For this bread that's chock-full of apples, don't stray too far from the McIntosh variety they soften just enough without completely disappearing. For little kids: Let them help mix up the apples. For big kids: Teach them how to peel an apple and sift dry ingredients.

- Work the apples, sugar and lemon zest together in a large bowl with your hands until the sugar feels like wet sand. Let the mixture sit, tossing occasionally, for 30 minutes (the sugar will have started to melt but will still be gritty).
- Meanwhile, preheat the oven to 350 degrees F. Generously coat a 10-by-5-by-3-inch loaf pan with cooking spray. Sift the flour, baking soda, cinnamon, nutmeg and salt together onto a large piece of parchment. Whisk together the oil, eggs and vanilla in a medium bowl.
- Once the apples are ready, add the flour mixture to them, and fold until combined. Pour in the oil mixture, and fold until just combined (it's OK if there are a few lumps). Pour the batter into the prepared loaf pan. Tap the pan on the counter a few times to settle and even out the batter.
- Bake the bread until the top is golden brown and bounces back when pressed (if you insert a toothpick into the center, it's OK if there are a few crumbs), 55 to 60 minutes. Let cool in the pan on a cooling rack until cool enough to handle. Invert the bread out of the pan, and serve warm or at room temperature.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan.
- Mix together flour, baking powder, soda, salt and nuts.
- In a large bowl, beat margarine, sugar and 1 egg until smooth. Beat in second egg, and stir in vanilla. Stir in shredded apples. Pour flour mixture into batter; stir just until moistened. Spread into prepared pan.

- Grease and flour-dust a 4 1/2 by 8 1/2-inch loaf pan; preheat oven to 350°.
- In a large bowl, stir together flour, sugar, baking powder, and salt; in a small bowl, beat eggs with milk, oil and lemon peel.
- Add egg mixture to flour mixture; stir just until blended and spread batter in prepared loaf pan.
