Steps:
- Mix the lemon zest, oil, oregano, rosemary, garlic, red pepper flakes, and salt together in a small bowl.
- Rub the mixture over the meat until it is well coated; cover and refrigerate for at least 4 hours but preferably overnight.
- Remove meat from refrigerator at least 30 minutes before sauteing.
- Heat a large skillet over med-high heat; add beef a few pieces at a time and saute until browned on all sides; remove the meat to the insert of a 5- to 7-quart slow cooker.
- Add the wine and beef broth to the skillet and scrape up the browned bits on the bottom of the pan.
- Transfer the liquid to the slow cooker; cover and cook on high for 3 1/2 to 4 hours or on low for 8 hours.
- Remove the beef from the slow cooker and cover with foil.
- Let meat rest for 10-15 minutes.
- Skim off any fat from the sauce, then taste and adjust the seasoning.
- Serve the beef with the sauce spooned over the top.

LEMON GARLIC PARMESAN RIBS
Steps:
- Coat ribs with olive oil and rub with garlic salt and seasonings of preference (paprika, thyme, rosemary). Wrap ribs in foil and bake in oven @ 350 for about 45 min., until meat is tender, not quite falling off the bone. (If you use St. Louis or regular ribs time in the oven will be longer) Grill ribs over medium-low heat, watch closely. Baste ribs with melted butter and the juice of 2-3 lemons as needed. Approximate cooking time is 45-60 minutes. Just before removing ribs from grill dust with parmesan cheese.

- Pound out chicken tenders with a meat mallet until very thin. Remove membranes.
- Set up a breading station with 3 shallow dishes. Combine flour, 1/4 cup and 2 tablespoons Parmesan cheese, garlic, salt, paprika, granulated onion, and pepper in the first bowl; mix until well combined. Whip eggs and remaining Parmesan cheese together in the second dish. Pour panko bread crumbs into the third dish.
- Heat oil in a skillet over medium high heat until oil reaches 350 degrees F (175 degrees C).
- Dredge chicken tenders in flour mixture, shaking off excess flour. Then dip tenders into egg mixture, and finally into panko bread crumbs, pressing to make sure panko adheres.
- Pan-fry chicken tenders in the hot oil until browned, about 90 seconds on each side. Remove tenders to a lined drip tray to drain excess fat before serving.
