Steps:
- Prepare a grill for high heat.
- Season the salmon fillets with salt and pepper and drizzle with olive oil.
- Whisk together the mayonnaise, mustard, olive oil, garlic, lemon juice, tarragon, salt and pepper; set aside.
- Lightly oil the grill grate. Cook the salmon on the grill until the fish flakes easily with a fork, 5 to 10 minutes. Place on a serving plate and top with the prepared sauce.

- Combine 3 tablespoons oil and rosemary; drizzle over salmon. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 10-12 minutes or until fish flakes easily with a fork., Meanwhile, in a small microwave-safe bowl, combine garlic and remaining oil. Microwave, uncovered, on high for 20-30 seconds or until softened; transfer to a blender. Add the remaining ingredients. Cover and process until blended. Serve with salmon.

- Combine salmon, onion, bread crumbs, green bell pepper, 3 cloves garlic, egg, soy sauce, 1 teaspoon lemon juice, and salt in a large bowl; mix until evenly blended. Shape salmon mixture into eight patties.

LEMON MAYONAISE GRILLED SALMON

- wash salmon and remove any skin if you don't like it. Lay the salmon on a suqare piece of aluminum foil with enough excess on each side to be able to fold as a handle. mix Hellman's Mayonaise and the juice of one lemon in a small bowl salt and pepper the salmon then with a spoon, dab the mayonaise and lemon mixture on the salmon and spread it until the fish is completely covered. (You will enjoy it if it is liberally spread on the fish) fold the foil into a package with the excess as a handle. Place on the grill (white hot coals) for 5 minutes, the set aside, open package, turn salmon over and pour remaining mayonaise and lemon juice on the uncooked side. Return to grill for another 3-4 minutes or until fish is flakey. It will be tender, tasty and MOIST!
GRILLED SALMON CAKES WITH LEMON MAYONNAISE

- Whisk 1 cup mayonnaise, 2 minced green onions, lemon juice, and grated lemon peel in small bowl to blend. Season lemon mayonnaise to taste with salt and pepper and set aside.
- Combine remaining 4 green onions and chopped parsley in food processor; blend until finely chopped. Add cubed salmon, Dijon mustard, and remaining 1 tablespoon mayonnaise. Using on/off turns, blend until salmon is coarsely chopped. Transfer salmon mixture to large bowl. Mix in breadcrumbs, 3/4 teaspoon salt, and 3/4 teaspoon ground black pepper. With moistened hands and using about 1/3 cupful for each, shape salmon mixture into 8 patties, each about 1/2 inch thick. Brush both sides of salmon cakes with olive oil.
- Prepare barbecue (medium heat). Grill salmon cakes to desired doneness, about 3 minutes per side for medium. Divide patties among 4 plates. Serve lemon mayonnaise alongside.
GRILLED LEMON-SOY SALMON
This is a great quick-cooking entree from Cooking Light magazine. When I grill salmon, I use a fish basket sprayed with cooking spray. It makes it easier to turn over without breaking filets.

- Mix well; add salmon and seal.
- Marinate in refrigerator for 40 minutes, turning once.

- Heat grill to medium-high; brush grates with vegetable oil. Rub both sides of salmon with olive oil. Stir together paprika, brown sugar, 1 teaspoon coarse salt, and 1 teaspoon pepper; rub over both sides of fish.
