Fresh lemongrass is featured in many Southeast Asian dishes, and can be found in Asian markets and in the produce section of some grocery stores. Steeping the lemongrass stalks in rice wine vinegar produes an intensely flavored vinegar that is really good with cucumbers. Also great with Asian noodle dishes. The vinegar requires very little time to make and holds for months in the refrigerator. Leave the lemongrass stalks in the jar, discarding them as you use up the vinegar. 1/4 lb fresh lemongrass, stalks
3 cups rice vinegar

Steps:

  • Trim the dried outer leaves and uper stem from the lemongrass. Cut the stalks into 3" lengths and cut each section in half lengthwise to expose the flavorful core.
  • Bring the vinegar to a boil in a nonreactive saucepan. Place the lemongrass in a quart jar with a lid that seals well and pour the boiling vinegar over it. Allow the vinegar to cool, cover the jar, and steep for 2-3 days before using.
  • Enjoy!

2 cups rice vinegar (available at Asian markets and some supermarkets)

Steps:

  • Slice thin the bottom 8 inches of the lemongrass stalks, put the sliced lemongrass in a very clean 1-quart glass jar, and bruise it with a wooden spoon. Add the vinegar and let the mixture steep, covered with the lid, in a cool dark place for at least 4 days and up to 2 weeks, depending on the strength desired. Strain the vinegar through a fine sieve into a glass pitcher, discarding the lemongrass slices, pour it into 2 very clean 1/2-pint glass jars, and seal the jars with the lids.

We enjoy these tasty meatballs served over a bowl of rice or wrapped in lettuce cups. They're balanced with flavors of spicy, salty, tangy, and sweet, and also make wonderful appetizers. Leftover meatballs may be stored in the freezer in a resealable plastic bag.

1 pound lean ground pork
¼ cup panko bread crumbs
1 large shallot, minced
2 tablespoons lemongrass paste (such as Gourmet Garden®)
1 tablespoon finely chopped mint
1 tablespoon fish sauce
1 tablespoon brown sugar
2 cloves garlic, crushed
1 teaspoon finely grated ginger root
¼ teaspoon salt
¼ cup water
3 tablespoons fish sauce
2 tablespoons fresh lime juice
1 tablespoon white sugar, or more to taste
1 teaspoon rice vinegar
1 small Thai chile pepper, minced
1 small garlic clove, finely chopped

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with parchment paper and set aside.
  • Combine ground pork, bread crumbs, shallot, lemongrass paste, mint, fish sauce, brown sugar, garlic, ginger root, and salt in a large bowl. Using a 1-tablespoon cookie scoop, shape mixture into meatballs, and place on the prepared baking sheet.
  • Bake in the preheated oven until meatballs are no longer pink in the center and cooked through, about 15 minutes.
  • Meanwhile, prepare the dipping sauce by mixing water, fish sauce, lime juice, sugar, Thai chile, and garlic in a small bowl.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place meatballs under the hot broiler just until the tops start to turn brown to get a little color and crispness, about 2 minutes. Serve with the dipping sauce.

1/2 cup rice vinegar
2 tablespoons sugar
1/4 cup water
1/4 cup Asian fish sauce (nam pla)
1/4 cup fresh lime juice
2 tablespoons finely minced lemongrass bulb
1 makrut lime leaf, shredded fine (optional; sold in Asian markets)
2 teaspoons minced fresh coriander leaves
1 teaspoon minced scallion
2 tiny Thai red "bird" chilies, or other fresh red chilies, sliced (or to taste)

Steps:

  • Combine the vinegar, sugar, water, fish sauce and lime juice in a small, nonreactive saucepan. Bring just to a boil; then, add the lemongrass and the lime leaf and simmer for 30 seconds.
  • Remove from heat, and place the saucepan in a bowl of ice and water to chill it until it is room temperature, about 10 minutes.
  • Stir in the cilantro, scallions and chilies to taste.
