1 cup graham cracker crumbs
3 tablespoons sugar
1 pinch cinnamon
5 tablespoons melted butter
3 large eggs
1/2 cup key lime juice (measure 1/2-cup exactly)
1 (14 ounce) can sweetened condensed milk
2 drops green food coloring (can use more)
1 pinch salt
1 pinch cream of tartar
1 1/2 cups whipping cream, unwhipped (or use Cool Whip frozen topping, thawed)
confectioners' sugar (to taste)
1 lime, thinly sliced

Steps:

  • Set oven to 325°F.
  • For the crust; in a bowl mix together graham cracker crumbs with sugar and cinnamon; add in melted butter and mix to combine completely.
  • Press into a 9-inch pie plate.
  • Bake crust for 5 minutes; remove and cool completely.
  • Separate 3 eggs, then place the whites into a mixing bowl.
  • Reserve the yolks in another bowl; to the yolks add in 1 whole egg, lime juice, sweetened condensed milk; mix until smooth and completely combined, then mix in food colouring until combined.
  • Using an electric mixer beat egg whites with salt and cream of tartar until stiff but not dry; fold the beaten whites in the lime mixture.
  • Pour the filling into the partially baked pie crust.
  • Bake at 325°F for 10-15 minutes or until just set.
  • Let cool at room temperature then place in freezer for a minimum of 5 hours (or overnight).
  • Just before serving whip cream with confectioners' sugar (to taste).
  • Serve the pie decorated sweetened whipped cream and lime slices.

1 cup graham cracker crumbs from about 8 (2 1/4-inch by 4 3/4-inch) crackers
1 cup honey-nut cereal crumbs, such as crushed Honey Nut Cheerios
1/4 cup packed light brown sugar
7 tablespoons salted sweet cream butter, melted
1/2 teaspoon ground cardamom
For the filling:
6 large egg yolks
1 (14-ounce) can sweetened condensed milk
1 cup vanilla ice cream, softened
1/2 cup fresh or bottled Key lime juice
To serve:
1 cup heavy cream
3 tablespoons confectioners' sugar
Special Equipment
9-inch pie plate, nonstick vegetable-oil spray, stand mixer fitted with the whisk attachment

Steps:

  • Make the graham cracker and cereal crust:
  • Arrange a rack in the middle of the oven and preheat to 350°F.
  • Spray a 9-inch pie plate liberally with nonstick vegetable-oil spray.
  • In a medium bowl, stir together the graham cracker crumbs, honey-nut cereal crumbs, and brown sugar. Drizzle with the melted butter and stir until well combined. Press the mixture evenly onto the bottom and up the sides of the prepared pie plate and refrigerate for 30 minutes.
  • Make the filling:

It's described as low in fat, sugar and fuss, doesn't get any easier than that and would be a good desert for my Mom who is a diabetic. Diabetic exchanges reported as 1 starch, 1 fruit and 1 fat. Finally got around to making this and for a light version it's very good, fluffy and tart and pretty simple. A nice treat for those warm summer evenings. I couldn't find the prepared graham crust so used recipe#338535 and made it with splenda and it turned out great.
