4 orange roughy fillets (6 ounces each)
1/3 cup water
1/3 cup lime juice
2 tablespoons honey
1 tablespoon canola oil
1/2 teaspoon dill weed

Steps:

  • Place fillets in a 13x9-in. baking dish. In a small bowl, whisk remaining ingredients until blended. Pour 1/2 cup marinade over fillets; turn to coat. Refrigerate 1 hour. Cover and refrigerate remaining marinade., Preheat broiler. Drain fish, discarding marinade in dish. Place fish on a broiler pan coated with cooking spray. Broil 4-6 in. from heat 4-6 minutes on each side or until fish just begins to flake easily with a fork, basting frequently with reserved marinade.

The citrus-flavored fillets are broiled to a golden brown...then topped with toasted sesame seeds for a fun crunch.

1-1/2 pounds orange roughy or other whitefish fillets
1/2 cup orange juice
1/4 cup ketchup
2 tablespoons canola oil
2 tablespoons reduced-sodium soy sauce
2 tablespoons lemon juice
1/4 teaspoon pepper
1 tablespoon sesame seeds, toasted

Steps:

  • Cut fillets into four pieces if necessary; set side. In a large bowl, combine the orange juice, ketchup, oil, soy sauce, lemon juice and pepper. Remove 1/4 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add fillets. Seal bag and turn to coat; refrigerate for 2 hours, turning once or twice., Drain and discard marinade. Place fillets on a broiler pan coated with cooking spray. Broil 4-6 in. from the heat for 5-6 minutes on each side or until fish flakes easily with a fork, basting occasionally with reserved marinade. Sprinkle with sesame seeds.

⅛ teaspoon pepper

Steps:

  • Heat your grill or grilling pan. In a small bowl, melt the butter and mix it with the lime juice and lime zest. Add the dried parsley, garlic powder, paprika, salt, and pepper.
  • Dip the fillets into the butter mixture or spread the mixture on top of the fillets
  • Grill for 4 minutes on each side once the grill or grill pan is hot (medium-high heat)
