- Bring the orange juice and cranberries to a boil in a large pot until the berries just begin to burst. Strain the juice through a fine mesh sieve and let cool to room temperature.
- Pour 2 to 3 tablespoons of the juice into each of 4 flutes. Top with the champagne and garnish with frozen cranberries.

- Preheat oven to 350 degrees F (175 degrees C). Prepare cookie sheets by lining with parchment paper. In a medium bowl, toss together the golden raisins and dark raisins with the whiskey; set aside.
- In a large bowl, cream together the sugar and butter. Add the eggs one at a time, mix until light and fluffy. Sift together the flour, baking soda, cinnamon, and nutmeg; stir into the creamed mixture. Stir in the walnuts, pecans, cherries, and finally, the raisin and whiskey mixture.
- Drop cookies by rounded tablespoonfuls onto the prepared baking sheet about 2 inches apart. Bake in the preheated oven for 10 minutes. Cool on the baking sheet for 1 minute before removing to cool on wire racks.

- Preheat oven to 350 degrees F (175 degrees C). Prepare cookie sheets by lining with parchment paper. In a medium bowl, toss together the golden raisins and dark raisins with the whiskey; set aside.

- Tip onto a floured surface and knead for a few minutes until the dough is smooth. Cover in cling film and leave to rest in the fridge for 30 minutes.
- When ready to roll, cut a 4 inch chunk of dough off the main ball (it doesn't need to be precise). Roll the dough into a sausage shape with your fingers, then lay on the surface and flatten with a rolling pin until you have an oblong shape. (If not using a pasta machine, roll as think as possible with your rolling pin, and cut to shape with a sharp knife.)
- Flour the pasta roller and set it to the widest setting and feed the dough piece through. Then lay it flat on the surface, and fold each side inwards on itself. Roll to flatten with a rolling pin and feed it through the pasta machine again. Repeat the fold and roll once more.
