1/4 cup finely chopped onion
4 tablespoons butter
1 to 1 1/3 pounds cooked lobster meat, cut into 1/2-inch chunks
1/4 cup sherry wine, preferably medium-dry,(recommended: amontillado)
1/4 cup lobster stock, optional, but desirable
1 1/4 cups light cream or half-and-half
1/4 teaspoon paprika
Salt and freshly ground black pepper
4 teaspoons minced fresh chives

Steps:

  • In a medium-size deep skillet or heavy saucepan, cook the onion in the butter over medium heat until softened and translucent, about 3 minutes. Add the cooked lobster meat and toss to coat with the butter. Pour in the sherry and bring to a boil. Add the lobster stock, if you have it, and boil until the liquid is reduced by half. Add the light cream and paprika. Season with salt and pepper, to taste. Bring just to a boil. Immediately ladle into soup plates and garnish with the chives. Serve at once.

Number Of Ingredients 13

4 1 1/4- to 1 1/2-pound live lobsters
3 tablespoons olive oil
1 medium onion, finely chopped
2 medium Hungarian yellow wax peppers or 1 large green bell pepper, finely chopped
1 1/2 pounds plum tomatoes, seeded, finely chopped
5 tablespoons minced fresh parsley
1 bay leaf
1/4 teaspoon dried thyme
Pinch of sugar
1/4 cup brandy
1 8-ounce bottle clam juice
1 cup water
3 garlic cloves, minced

Steps:

  • Working in batches and using tongs, lower lobsters into large stockpot of rapidly boiling water. Boil 5 minutes. Using tongs, transfer lobsters to platter. Cool completely.
  • Working over bowl to catch juices from lobsters and using kitchen shears, cut tails from lobsters. Cut each tail into 3 rounds. Split open lobster heads and bodies; remove tomalley (green liver) and reserve (about 2 tablespoons total). Divide each large claw into 2 pieces, cutting 1 side open for easy removal of claw meat. Set aside lobster pieces and juices.
  • Heat 3 tablespoons oil in heavy large deep skillet or pot over medium-high heat. Add onion and peppers; sauté until slightly softened, about 5 minutes. Add tomatoes, 2 tablespoons minced fresh parsley, bay leaf, thyme, and pinch of sugar. Sprinkle with salt. Bring to boil. Reduce heat and simmer until mixture thickens, about 20 minutes. Add brandy and simmer 2 minutes. Add all reserved lobster pieces and juices to skillet; simmer 5 minutes. Mix in clam juice and 1 cup water. Bring to boil. Reduce heat, cover and simmer 10 minutes longer.
  • Add reserved tomalley, 2 tablespoons minced fresh parsley, and minced garlic to skillet with lobster and simmer uncovered 5 minutes. Transfer lobster pieces to bowl. Transfer sauce to blender and puree until smooth, thinning with more water if desired. Season sauce to taste with salt and pepper. Transfer sauce to serving bowl. Top with lobster pieces. Sprinkle with remaining 1 tablespoon parsley and serve.

6 live 1-pound lobsters
8 ounces (2 sticks) unsalted butter
1 cup dry Sherry (either amantillado or fino), plus 1/2 cup
6 cups whole milk
2 cups heavy cream
1/4 teaspoon paprika
Salt
Freshly ground black pepper
Chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Plunge the lobsters head first into the boiling water, in batches, if necessary, and cook, covered, for 5 minutes. Transfer the lobsters with tongs to a large bowl filled with ice water to cool. When the lobsters are cool enough to handle, crack the shells, remove the tail and claw meat, and coarsely chop. Reserve the shells. Tightly cover the meat and refrigerate.
  • In a large Dutch oven, melt 4 ounces (1 stick) of butter over medium-high heat. Add the shells and cook, stirring, until they turn bright red, 2 to 3 minutes. Add 1 cup of the Sherry and bring to a boil. Cook until reduced by half, about 3 minutes. Add the milk, cream, paprika, salt, and pepper, and return to the boil. Reduce the heat to medium-low and simmer until slightly thickened, 15 to 20 minutes. Remove from the heat and let cool. Cover and refrigerate at least 6 hours or overnight for the flavors to develop.
  • Remove the milk and shell mixture from the refrigerator and strain into a clean container through a fine mesh strainer. Set aside. In a large, heavy pot, melt the remaining 4 ounces (1 stick) of butter over medium-high heat. Add the chopped lobster meat and cook, stirring, until lightly colored, 2 to 3 minutes. Add the remaining 1/2 cup of Sherry and increase the heat to high. Cook, stirring, to deglaze the pan and until reduced by half. Add the strained milk mixture and bring to a low boil. Simmer, stirring, until heated through.
  • Remove from the heat and adjust the seasoning, to taste. Spoon into bowls and garnish with chopped fresh parsley. Serve immediately.

2 large lobsters, about 4 pounds total, cooked; or approximately 4 cups of lobster meat
4 to 6 tablespoons butter
6 cups milk
2 cups heavy cream
Kosher salt, to taste
Freshly ground black pepper, to taste
Paprika, to taste
Dry sherry , as desired, optional
Fresh parsley or green onions, chopped, for garnish

Steps:

  • Gather the ingredients.
  • Remove meat from steamed lobsters and cut into cubes, or cube the already deshelled lobster meat.
  • Pan-fry meat in a generous amount of butter (4 to 6 tablespoons) until lightly browned. Be careful not to burn butter.
  • In a separate pan, heat up milk, being careful not to boil it.
  • Add lobster meat to hot milk and cook slowly for 5 to 10 minutes.
  • Stir in heavy cream and bring it nearly to a boil but not over. Lower heat.
  • Add salt and pepper to taste and a little paprika for color. If desired, stir in a dash of sherry for extra flavor.
  • Garnish with chopped parsley or sliced green onions .

2 cups dry white wine
three 1 1/4-pound live lobsters
4 large carrots
2 onions, quartered
1 cup packed freshlovage leaves or celery leaves
2 bay leaves
3/4 teaspoon dried thyme, crumbled
1/2 cup packed fresh parsley sprigs, washed and spun dry
1/4 teaspoon whole black peppercorns
1 cup finely chopped shallot
4 tablespoons unsalted butter
1 tablespoon all-purpose flour
a 28- to 32-ounce can tomatoes, drained and chopped
1 cup heavy cream

Steps:

  • In a 10- to 12-quart kettle bring 8 quarts water and 1 1/2 cups wine to a boil. Plunge lobsters into liquid headfirst and return liquid to a boil. Simmer lobsters, covered, 12 minutes. Have ready a bowl of ice and cold water. With tongs plunge lobsters immediately into bowl of ice water to stop cooking and reserve cooking liquid.
  • Working over a bowl to catch juices, twist off tails and claws and reserve juices. Discard head sacs. Reserve tomalley and any roe if desired and remove meat from tails and claws, reserving shells. Cut meat into bite-size pieces and chill, covered, in a bowl.
  • Chop 2 carrots and add to reserved cooking liquid with reserved lobster juices, reserved tomalley and roe if using, reserved shells, onions, 1/2 cup lovage or celery leaves, bay leaves, thyme, parsley, and peppercorns. Simmer stock gently, uncovered, skimming froth occasionally, 1 1/4 hours.
  • Pour stock through a large sieve into a large bowl and transfer to cleaned kettle. Boil stock until reduced to about 7 cups and return to bowl.
  • Finely chop remaining 2 carrots and in a 5- to 6-quart kettle cook with shallot in butter over moderately low heat, stirring occasionally, until crisp-tender. Sprinkle flour over mixture and cook, stirring, 3 minutes, but do not brown vegetables. Add remaining 1/2 cup wine and boil, stirring, until most of wine is evaporated. Add tomatoes and stock and simmer, covered, 10 minutes. Stir in cream and salt and pepper to taste and cook stew, stirring occasionally, until heated through. Stew and lobster meat may be prepared 2 days ahead and chilled, covered. Reheat stew before proceeding.
  • Finely chop remaining 1/2 cup lovage or celery leaves and stir into stew with lobster meat. Cook stew, stirring, until just heated through.

MAINE LOBSTER STEW

Real Maine Lobster Stew has lobster, butter, milk, the roe and tomalley (if there is any), and the reserved liquid from the lobsters. It does not have a whole bunch of other stuff in it. If you make it the Maine-way, you will think that you are there sitting on the wharf eating. Make it a day ahead to enhance the flavor of the stew.

4 fresh lobsters (reserve cooking liquid from lobsters)
6 -8 tablespoons butter
1 pint heavy cream
1 quart whole milk
salt and pepper

Steps:

  • Boil the lobsters for about 18 minutes.
  • Place cooked lobsters on several platters to cool and catch the juices.
  • After they are cool; pick the meat from them.
  • Remove the tomalley (green liver) and the roe (coral) if it is found.
  • After all the meat is picked out, saute the tomalley and roe in 2 tablespoons butter in a heavy cooking pot for three minutes.
  • Add more butter and some of the lobster meat into the pot.
  • Repeat this until all the lobster meat has been sauted for five to ten minutes.
  • Add the cream, the reserved lobster juice from the platters, and the milk.
  • Simmer BUT DO NOT BOIL uncovered on low heat for an hour or two (remember take care not to boil).
  • Add salt and pepper to taste.
  • Make this a day ahead to enhance the flavor and you'll be glad you did.
  • NOTE: A rule of thumb for figuring amounts--4-5 ounces of meat per person; 1/2 stick butter per person; 1 cup half and half per person.

  • Gently heat the milk and cream in a large pot (do not allow to boil).
  • In an iron skillet, combine the melted butter and paprika; heat slowly to make a sauce.
  • Add in the lobster meat to the butter sauce and heat slowly to gently warm the meat.
  • Add the lobster mixture to the hot milk mixture and heat gently for about 1 hour.
  • Add in salt to taste.
  • Taste is much better if refrigerated and reheated the next day.
  • Serve with oyster crackers.

4 tablespoons butter (use leftover melted butter, if any)
Leftover shells from 4 lobsters
Pinch of thyme
Water as needed
1 cup milk
2 cups heavy cream
Salt, white pepper and cayenne pepper, as desired
Leftover lobster meat, as available

Steps:

  • Melt the butter in a deep pot, add the lobster scraps, crush them down well with a potato masher and cook over low heat, stirring constantly, for 5 minutes.
  • Add water to not quite cover, bring to a boil, lower heat to moderate and cook, uncovered and stirring often, for 20 minutes. Strain off broth and discard scraps.
  • Put broth into a deep saucepan and boil hard until it is reduced to 1 cup. Add milk, cream, seasonings and lobster meat and heat through without boiling. Cool quickly and refrigerate for 1 to 2 days to develop flavor. Heat through (without boiling) before serving.

1 hot green pepper like jalapeno, with seeds, minced
2 cloves garlic, peeled and sliced
2 medium leeks, trimmed and sliced crosswise

3 medium sweet potatoes (about 2 pounds), peeled and cubed (about 5 cups)
3 cups dry white wine

Steps:

  • In a deep pot over medium-high flame, heat the olive oil for 1 minute. Add hot pepper and garlic. Cook until the pepper and garlic turn black, about 2 to 3 minutes.
  • Add the leeks and onions and cook for 3 minutes, stirring occasionally. Add the tomatoes, sweet potatoes and 2 cups of the wine. Cook, stirring occasionally, for 4 minutes.
  • Add the lobsters, cover pot, and cook until the lobsters turn pinkish, about 5 minutes. Add the remaining cup of wine to the pot and cook, covered, for 5 more minutes.
  • Remove the lobsters and set aside until cool enough to handle. When cooled, crack the claw shells and the body shell. Return to the pot for 5 more minutes.
  • Transfer the lobsters to a baking sheet with sides. Break off the claws of the lobsters; remove the meat from the body and cut it into bite-size pieces. Return any lobster juices on the sheet to the pot. In large plates or shallow soup bowls, spoon some vegetable mixture over the bottom and place a lobster claw and some body meat on top.
