Sharp cheddar cheese combined with tender onions and it 's a quick bread that goes great with green salads.

1 ½ cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons margarine
½ cup shredded sharp Cheddar cheese
½ cup finely diced onion
1 tablespoon margarine
1 egg
½ cup milk
½ cup shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Grease one 8 inch round or one 8x8 inch square pan.
  • Combine flour, baking powder and salt, cut in 2 tablespoons of the butter until mixture is crumbly. Stir in 1/2 cup of the grated cheese. Make a well in the center of the mixture.
  • Fry the onion in 1 tablespoon of the butter or margarine until clear and golden. Set aside.
  • In a small bowl beat the egg and stir in the milk and the cooked onion. Pour egg mixture into the well in the flour mixture. Stir until just moistened. You will have a soft dough. Pat dough into the prepared pan. Sprinkle remaining 1/2 cup grated cheese over top.
  • Bake at 400 degrees F (205 degrees C) for 25 minutes. Serve hot. Makes about 6 servings.

2 tablespoons butter
3 medium onions, coarsely chopped
1 teaspoon white sugar
½ teaspoon paprika
1 tablespoon white vinegar
1 cup chicken broth
1 slice dark rye bread, torn into pieces
salt and pepper to taste

Steps:

  • Melt the butter in a large skillet over medium heat. Add onions, cook and stir until lightly browned. Sprinkle in the sugar, and continue cooking until onions are deep golden brown, about 10 minutes. Stir in the chicken broth and vinegar and season with paprika. Mix in the bread until dissolved. Bring to a boil, then simmer over low heat for 3 minutes.
  • Transfer the mixture to a blender or food processor, and blend until smooth. Serve with pork or beef.

This thick white sauce makes the perfect accompaniment to roast chicken or turkey- flavour with cloves, bay and anise

25g butter
1 large onion , very finely chopped
1 tsp thyme leaf
1 bay leaf
600ml whole milk
1 star anise
pinch ground cloves
100g good-quality white bread , crusts removed, chopped into chunks
2 heaped tbsp crème fraîche

Steps:

  • Heat the butter in medium pan until just starting to sizzle. Cook the onion over a very low heat with the thyme and bay for 15-20 mins until soft and just lightly golden. Pour the milk into the pan, add the star anise and ground cloves, season and bring to the boil. Turn off the heat and leave to infuse for at least 10 mins. Can be done the night before.
  • Remove the star anise and bay, and add the bread chunks to the pan. Bring back to the boil, then remove from the heat and blitz using a hand blender. Return to the heat, stir in the crème fraîche and simmer gently for 2 mins until thickened. Can be made ahead and reheated with a splash more milk. Tip into a bowl, sprinkle with cracked pepper, and add the bay leaf, if you like.

2 tablespoons butter
2 cups shredded swiss cheese
1 (10 1/2 ounce) can cream of chicken soup
1/2 cup milk
1 tablespoon soy sauce
1/2 teaspoon pepper
8 slices French bread, buttered both sides

Steps:

  • Preheat oven to 350 degrees.
  • Cook onions in butter for 15 minutes until real soft.
  • Arrange onions in greased 12x7 pan for baking.
  • Sprinkle cheese over entire top.
  • Blend soup, milk, soy sauce and pepper.
  • Pour over cheese and onions and mix slightly.
  • Arrange bread over top.
  • Bake uncovered for 40 minutes.

They love the skillet bread for the flavor, and I love it because it keeps them in the kitchen to chat while I prepare the rest of dinner! 2 teaspoons caraway seeds
1 tablespoon olive oil
1 large onion, chopped
1/4 teaspoon salt
1 cup shredded sharp cheddar cheese
1/2 cup butter, melted
1 tube (16.3 ounces) large refrigerated buttermilk biscuits
1 tablespoon minced fresh thyme, optional

Steps:

  • Preheat oven to 350°. In a 10-in. cast-iron or other ovenproof skillet, toast caraway seeds until fragrant, about 1 minute. Remove and set aside. In the same skillet, heat oil over medium heat. Add onion; cook and stir until softened, 5-6 minutes. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally. Stir in salt; remove from the heat and cool slightly. Sprinkle cheese over onions in skillet. Place melted butter and caraway seeds in a shallow bowl. Cut each biscuit into fourths. Dip biscuit pieces in butter mixture; place in a single layer over onion mixture in skillet. Bake until puffed and golden brown, 20-25 minutes. Cool in skillet 5 minutes before inverting onto a serving plate. If desired, sprinkle with thyme. Serve warm.
