1 green pepper, minced
1 onion, minced
1 can chicken with rice soup
1 can tomato soup or possibly 1 can Zesty tomato soup or possibly 1 can Italian tomato soup
1 can water

Steps:

  • SAUCE: Heat butter in skillet. Add in green pepper and onion. Cook till tender. Stir in chicken with rice soup, tomato soup and water. Heat to boiling. Then turn down heat and simmer sauce, stirring occasionally. While the sauce cooks, make the meatballs. MEATBALLS: Beat egg in bowl. Add in remaining ingredients and mix well. Shape meat into balls about the size of ping-pong balls. Drop balls into simmering sauce and cook slowly about 1 hour, or possibly till sauce has thickened.

1/4 cup evaporated milk
1 teaspoon salt

Steps:

  • Melt butter in skillet. Add green pepper and onion and cook until tender.
  • Stir in soups and water. Heat to boiling. Then turn down heat and simmer sauce, stirring occasionally.
  • While this sauce cooks, make meatballs. Beat egg slightly in bowl. Add ground beef, bread, evaporated milk and salt and mix well.
  • Shape meat into balls about the size of ping-pong balls.
  • Drop balls into simmering sauce and cook slowly about 1 hour, or until sauce has thickened.

1/2 cup panko bread crumbs
1/4 cup whole milk
1 pound ground beef
1 pound ground pork
1 onion, finely chopped
1/2 stick butter, softened
2 large eggs
1/2 cup chopped parsley leaves
Kosher salt
Freshly ground black pepper
Olive oil, for frying

Steps:

  • Soak the bread crumbs in the milk while you prepare the other ingredients.
  • Put the beef and pork into a large bowl. Add the onion, butter, eggs, and parsley and season well with salt and pepper. Put the soaked bread crumbs into the bowl and mix it all together well with your (clean) hands. Form the mixture into meatballs about the size of ping pong balls.
  • Heat about 1/4-inch of oil in a skillet over medium heat. Fry the meatballs until they are browned on all sides and cooked through, about 15 minutes.

1 head fresh broccoli, cut into florets
2 (3 ounce) packages chicken flavored ramen noodles
1 cup slivered almonds
1 cup unsalted sunflower seeds
½ cup white sugar
¼ cup apple cider vinegar
½ cup vegetable oil
1 teaspoon soy sauce

Steps:

  • In a large bowl, toss together the coleslaw mix, green onions and broccoli. Set aside.
  • Melt the butter in a large skillet over medium heat. Crumble the ramen noodles into a bowl, and mix with the almonds and sunflower seeds. Sprinkle the seasoning packets over all. Add to the skillet; cook and stir until noodles and nuts are toasted, about 8 minutes.
  • In a jar with a tight fitting lid, combine the sugar, vinegar, oil and soy sauce. Seal, and shake vigorously to blend.
  • Just before serving, combine the slaw mixture with the nuts and noodles. Pour the dressing over all, and stir briefly to coat.

2 tablespoons extra-virgin olive oil
1 small yellow onion, finely chopped
5 slices white bread, crusts removed and torn into pieces (about 3 cups)
1 cup whole milk
1 pound ground chuck beef
1 pound ground pork
1 pound ground veal
1 pound whole-milk ricotta
1/2 cup grated Parmesan cheese, plus more for garnish
1/3 cup chopped flat leaf parsley
1 tablespoon chopped oregano
2 teaspoons salt
1/2 teaspoon ground black pepper
2 quarts Basic Italian Tomato Sauce, or other Italian tomato sauce

Steps:

  • Heat olive oil in a skillet. Add onion, cooking until soft but not colored, about 5 minutes. Transfer to a large bowl and cool slightly.
  • Combine bread and milk in a bowl to soak for 5 minutes. Squeeze excess milk from bread and finely chop. Add chopped bread to the bowl with onions. Add all the remaining ingredients except the tomato sauce. Gently fold with hands to incorporate ingredients, but do not overmix or meatballs will be tough.
  • Bring tomato sauce to a simmer in a large deep-sided skillet. Pinch 1/4 cup of the meat mixture and gently form a ball with wet hands. Drop the meatballs, as they are formed, directly into the sauce. Cover and simmer, stirring carefully a few times until meatballs are cooked through, about 30 minutes. 1 garlic clove, minced
1/2 cup finely grated Parmigiano-Reggiano or pecorino Romano cheese
3 tablespoons finely chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
Coarse salt and freshly ground pepper
1 1/2 slices white bread, torn into small pieces (1 cup packed)
1/4 cup whole milk
Basic Red Sauce
Extra-virgin olive oil, for frying (about 3 tablespoons)

Steps:

  • Mix together beef and pork using your hands. Stir in garlic, cheese, parsley, eggs, and 1 1/4 teaspoons salt; season with pepper. Soak bread in milk for 5 minutes, and then stir into meat mixture. Lightly dampen hands, and roll mixture into 1 1/2-inch balls, transferring to a rimmed baking sheet as you work. Refrigerate for 1 hour.
  • Bring sauce to a gentle simmer in a medium pot. Meanwhile, heat oil in a heavy medium skillet over medium-high heat. Working in batches, fry meatballs, shaking skillet occasionally, until brown all over, about 6 minutes, and transfer to sauce. Simmer until meatballs are cooked through, about 10 minutes. (Test doneness by cutting 1 meatball open.)

  • Add a little oil to a pan on medium-high heat and cook the onions and garlic until they are deeply caramelized.
  • Add in the oregano, parsley, basil, red pepper flakes, tomato paste, and tomato sauce.
  • Stir the mixture and bring to a simmer for 5 minutes.
  • Add the meatballs and coat them with the sauce.
  • Sprinkle with Parmesan cheese, poke with toothpicks, and serve!
