My Dad is diabetic, but loves peanut butter cookies. I was playing around with some recipes to make a sugar-free version. This is what I came up with.

2 cups smooth natural peanut butter
2 cups granular no-calorie sucralose sweetener (e.g., Splenda ®)
2 large eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • Thoroughly mix together the peanut butter, sucralose, and eggs in a bowl. Drop mixture by spoonfuls onto the prepared baking sheet.
  • Bake in the preheated oven until center appears dry, about 8 minutes.

1/2 cup Splenda granular (or use Sugar Twin)
1 1/2 teaspoons baking powder
2/3 cup creamy natural-style peanut butter
1/4 cup vegetable oil or 1/4 cup canola oil
1 egg
2 tablespoons water
1 teaspoon vanilla

Steps:

  • Set oven to 375 degrees.
  • Grease a cookie sheet.
  • In a bowl combine flour, Splenda or Sugar Twin and baking powder.
  • Add in peanut butter, oil, egg, water and vanilla; mix well to combine.
  • Shape into 1-inch balls and place on the cookie sheet.
  • Flatten each cookie with a fork.
  • Bake for about 10-12 minutes, or until lightly browned.

1 ½ cups all-purpose flour
½ cup unsweetened cocoa powder
½ teaspoon baking soda
½ cup white sugar
½ cup packed brown sugar
½ cup soft margarine
¼ cup peanut butter
1 teaspoon vanilla extract
1 egg
¾ cup confectioners' sugar
¾ cup peanut butter

Steps:

  • In small bowl blend flour, cocoa and baking soda. Mix until well blended.
  • In large bowl beat white and brown sugars, butter or margarine and 1/4 cup peanut butter, until light and fluffy. Add vanilla and egg, beat. Stir in flour mixture until blended. Set aside.
  • To make Filling: Combine confectioner's sugar and 3/4 cup peanut butter. Blend well.
  • Roll filling into 30 1-inch balls. For each cookie, with floured hands, shape about 1 tablespoon of dough around 1 peanut butter ball, covering completely. Place 2 inches apart on an ungreased cookie sheet. Flatten with glass dipped in white sugar.
  • Bake at 375 degrees F (190 degrees C) for 7-9 minutes. When cookies are done, they should be set and slightly cracked.

1 cup Splenda (use a sugar alternative that measures 1:1 with sugar)
1 Egg

Steps:

  • Preheat your oven to 325 and prep your cookie pans/sheets for nonstick. I like to use parchment paper.
  • In a mixing bowl, mix together the peanut butter, sugar alternative and egg. Mix until blended.
  • Using a tablespoon, drop spoonfuls of cookie batter on to the prepped baking sheet. Leave at least 1/2" between cookie edges.Bake your cookies for 8-10 minutes. Do not over-bake. These cookies are better when not burnt.

My grandpa developed Diabetes and he loves my Peanut Butter Cookie Pie (Recipe #444359). Now I can use this cookie recipe and use sugar free and/or low sugar other ingredients and still make this for him! .

1 cup peanut butter (crunchy or creamy)
1 1/3 cups sugar substitute, such as splenda
1 egg
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • In a large mixing bowl combine peanut butter, 1 cup Splenda, egg, and vanilla.
  • Stir well.
  • Roll dough into balls about the size of walnuts, or however big you want your cookies to be.
  • Place on a prepared cookie sheet.
  • With a fork dipped in remaining Splenda, press a criss cross design on each cookie.
  • Bake at 350F for 12 minutes.
  • Let cool slightly before removing from cookie sheet.

1/2 cup butter, softened
1/4 cup creamy peanut butter
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 cup baking cocoa
1/2 teaspoon baking soda
FILLING:
1 cup confectioners' sugar
3/4 cup creamy peanut butter

Steps:

  • Preheat oven to 375°. In a large bowl, cream butter, peanut butter and sugars until blended. Beat in egg and vanilla. In another bowl, whisk flour, cocoa and baking soda; gradually beat into creamed mixture., For filling, in a small bowl, beat confectioners' sugar and peanut butter. Shape into 30 balls. Wrap tablespoons of chocolate dough around filling to cover completely. Place 2 in. apart on ungreased baking sheets. Flatten slightly with bottom of a glass dipped in sugar., Bake 7-9 minutes or until set and slightly cracked. Cool on pans 2 minutes. Remove to wire racks to cool. Store in airtight containers.
