Steps:

  • In a small saucepan, combine 2 cups water, sugar and lime leaves over medium heat. Bring to a boil, lower the heat and simmer for 10 minutes. Set aside to cool. Refrigerate until cold. Fill each of 4 glasses with 1/2 cup of the syrup, 2 tablespoons lemon juice and 1/2 cup club soda. Stir. Add ice and serve.

2/3 cup chilled heavy cream
1/4 cup sugar
3 (2- by 1 1/4-inch) fresh or frozen makrut lime leaves
1 1/2 teaspoons finely grated fresh lime zest
3/4 teaspoon unflavored gelatin (from a 1/4-ounce envelope)
1 tablespoon water
1/2 teaspoon fresh lime juice
1 cup plain whole-milk yogurt
For honeydew water
3 cups (1-inch) pieces honeydew flesh (2 pounds)
2 tablespoons Midori (melon liqueur)
1 tablespoon fresh lime juice
1 teaspoon unflavored gelatin
1 tablespoon water
2 tablespoons sugar
Garnish: 4 fresh green shiso leaves
Accompaniment: chile lime tuiles

Steps:

  • Make mousse:
  • Stir together 1/3 cup cream, sugar, lime leaves, zest, and a pinch of salt in a small heavy saucepan and bring to a bare simmer over moderately low heat, stirring until sugar is dissolved. Remove from heat and let steep, covered, 25 minutes.
  • Sprinkle gelatin over water and lime juice in a bowl and let soften 1 minute. Return cream mixture to a simmer, then pour through a very fine sieve into gelatin, pressing on and discarding solids. Stir until gelatin is dissolved, about 1 minute. Gradually add yogurt, whisking, and chill, covered, 30 minutes. (Mixture will not be gelled.)
  • Beat remaining 1/3 cup cream in a chilled bowl with whisk until it just holds soft peaks. Fold into yogurt mixture and chill, covered, at least 8 hours. (Mousse will be softly set.)
  • Make honeydew water:
  • Blend honeydew, Midori, lime juice, and a pinch of salt in a blender at high speed until smooth, about 1 minute. Pour through a fine sieve lined with dampened cheesecloth into a bowl. Let drain, undisturbed, 30 minutes, then discard foam remaining in cheesecloth.
  • Sprinkle gelatin over water in a small saucepan and let soften 1 minute. Add 2 tablespoons melon juice and sugar, then cook over low heat, stirring, until gelatin and sugar are dissolved, 1 to 2 minutes. Gradually whisk in 1 1/8 cups melon juice (reserve remainder for another use if desired), then transfer to a bowl and chill, covered, at least 8 hours. (Honeydew water will be barely set.)
  • Assemble dessert:
  • Spoon honeydew water onto 4 dessert plates and top with shiso leaves. Spoon mousse onto leaves.

6 egg yolks
1 1/4 cups sugar
1/3 cup lime juice
2 ounces Tequila
1 1/2 cups heavy cream
1 tablespoon lime zes

Steps:

  • In a nonreactive metal bowl combine yolks, sugar and lime juice. Place bowl over a pan of simmering water and begin to whisk. Be sure bowl is not touching water. Continue to whisk until the mixture reaches a temperature of 166 degrees (on a candy thermometer). Place bowl on standup mixer, or use hand held beaters, and beat until mixture is cool and thick, about 5 minutes. Add Tequila and beat until combined.
  • In a separate bowl beat cream and zest until they form stiff peaks. Fold cream into yolk mixture. Pour mixture into freezable container. Cover, place in freezer and allow to freeze overnight.
  • Scoop frozen mousse into decorative dishes and garnish with fresh raspberries.

Makrut Lime Meringue Cakes With Lime-Scented Papaya image

Meringue has long been a byproduct of other desserts, an economical way to use up leftover egg whites. This recipe comes from Pichet Ong, the former pastry chef at Spice Market. Mr. Ong whipped egg whites with a small amount of confectioners' sugar and powdered makrut lime leaves (made by drying them in the microwave, then mashing them through a sieve). He opted for small, loose piles of meringue and used a spoon to form a well at the center, as you would for mashed potatoes, and baked them using the same method as the torte. Into the well he spooned a tart lime custard (which he also makes in the microwave - he likes the microwave) and a papaya salad seasoned with Thai chilies and crunchy flakes of Maldon sea salt. "The sweetness is not a problem when your palate is pulled in different directions," he added. The meringue cushions all of the strong flavors, and the leftover egg yolks are used in the custard. 4 large eggs, separated
1/4 teaspoon cream of tartar
1 cup sugar
3/4 teaspoon vanilla extract
1/2 cup plus 1 1/2 tablespoons lime juice
1/2 cup heavy cream
1/2 teaspoon salt
2 tablespoons butter
1 1/2 cups finely diced (1/4 inch) papaya
1 teaspoon lime zest
1/4 teaspoon minced Thai chili
Maldon sea salt
4 fresh makrut lime leaves or the finely grated zest of 1 lime

Steps:

  • Heat oven to 425 degrees. Line a baking sheet with parchment paper.
  • Place the makrut lime leaves or lime zest in a bowl, and microwave for 30 seconds. Repeat until the leaves are curled and brittle or the zest is dry and crumbly. Finely chop the leaves, if using. Set aside a large pinch of chopped leaves or zest, then sift the remaining leaves or zest with the confectioners' sugar, pushing them through the sifter.
  • In a mixer, whisk the egg whites on medium speed until they form soft peaks. Add the cream of tartar, then gradually add 1/2 cup of the sugar and continue whisking until the peaks are firm and glossy. By hand, fold in 1/4 teaspoon of the vanilla and the confectioners'-sugar mixture.
  • Drop 6 grapefruit-size dollops of meringue onto the baking sheet. Create a well in the center of each mound. Press the remaining makrut lime leaves (or lime zest) through a sifter to dust the meringue tops. Put the baking sheet in the oven, close the door and turn off the heat. Leave for 4 hours.
  • In the top of a double boiler set over simmering water, whisk together 1/2 cup lime juice, 1/2 cup sugar, cream, egg yolks, salt and 1/2 teaspoon vanilla until the mixture is thick enough to coat the back of a spoon. Remove from heat, and whisk in the butter. Cover and cool.
  • Just before serving, mix the papaya, remaining lime juice, 1 teaspoon lime zest and chili. Place a meringue on each of 6 plates. Spoon about 1 1/2 tablespoons custard into the well of each meringue, and top with papaya. Sprinkle with a pinch of Maldon sea salt.

5 tablespoons unsalted butter, cut into pieces
3 tablespoons light corn syrup
1/3 cup all-purpose flour
3/4 teaspoon ancho chile powder
2 teaspoons finely grated fresh lime zest
1 tablespoon fresh lime juice
4 (12-inch-long) wooden spoons or 12- by 1/2-inch wooden dowels; parchment paper

Steps:

  • Bring sugar, butter, and corn syrup to a boil in a 1-quart heavy saucepan over moderate heat, stirring, then boil 1 minute. Remove from heat and stir in remaining ingredients until smooth. Cool dough to room temperature.
  • Preheat oven to 350°F. Place wooden spoons parallel to each other 2 inches apart on a metal rack.
  • Roll a level teaspoon of dough into a ball, then into a log. Arrange 3 logs about 3 inches apart on a parchment-lined baking sheet, then pinch and stretch each to form an 8- to 9-inch-long strip (about 1/8 inch wide).
  • Bake in middle of oven until flat and golden, 7 to 9 minutes. While first sheet is baking, form remaining strips on more sheets of parchment. Slide parchment paper with baked cookies from sheet to a rack and cool cookies 30 seconds. Working quickly, slide a long thin metal spatula under each cookie and drape across spoon handles to form a wavy shape. (If cookies harden on paper before being draped, slide them back onto hot baking sheet for a moment to soften.) Bake and drape remaining cookies in same manner.

2 large limes

5 tablespoons heavy cream
1/4 cup sweetened flaked coconut
4 lime slices

Steps:

  • Using a microplane zester, remove zest from limes and set aside.
  • Squeeze and strain juice from limes into a small bowl and set aside.
  • Heat the water in a saucepan until steaming (do not boil).
  • Whisk in the flour, cornstarch, salt, and 2 cups sugar.
  • Cook, stirring constantly, until lightly thickened.
  • Separate egg white from egg yolks and set each aside.
  • Whisk together the egg yolks with the lime zest and vanilla.
  • Using a small ladle, add a small amount of heated mixture to egg yolks, stirring briskly to temper.
  • Do this a couple more times, then gradually stir the egg yolk mixture into the saucepan, whisking briskly as you do so.

  • Sprinkle each dessert with about 1 tbsp shredded coconut.
  • Cut each lime slice almost in half, stopping cutting just at the edge of the peel on one side.
  • Dip lime slices into granulated sugar, if desired, and shake off excess.
  • Twist cut sides of lime into two opposite directions and lay on top of mousse.
  • Chill for 2-3 hours or until firm and set, before serving.
