BROCCOLI SALAD



Broccoli Salad image

Crispy, crunchy, subtly sweet, and a bit salty, too, this Broccoli Salad delivers big on texture and flavor!

Number Of Ingredients 9

6 cups small broccoli florets
½ cup celery, sliced
½ cup dried cranberries
½ cup cooked and crumbled bacon (about 8 slices)
3 green onions, sliced
3/4 cup mayonnaise
1/4 cup honey
1 tablespoon fresh lemon juice
½ cup honey roasted sliced almonds

Steps:

  • In a large mixing bowl, combine the broccoli florets, sliced celery, dried cranberries, crumbled bacon and sliced green onions.
  • In a small bowl, stir together the mayonnaise, honey, and lemon juice. Pour over broccoli mixture, tossing gently to coat.
  • Stir in almonds just before serving.
  • Serve and enjoy!

Steps:

  • For the dressing: Whisk together the mayo, sugar and vinegar in a large bowl.
  • For the salad mix: Toss the broccoli, cheese, pecans, cranberries, green onions and bacon in a large bowl. Fold in the dressing until mixed thoroughly. Enjoy.

My cousin makes this recipe for all family gatherings. I was craving this salad and since we are on lockdown due to the Coronavirus (and there are no family get-togethers), I decided to make a smaller batch. This was just enough for 2 servings each for hubby and myself.

5 slices bacon
1 head broccoli, cut into bite-sized pieces
½ cup raisins
¼ cup chopped green onions
3 tablespoons sunflower seeds
½ cup mayonnaise
¼ cup white sugar
3 tablespoons apple cider vinegar

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble once cool enough to handle.
  • Combine bacon, broccoli, raisins, green onions, and sunflower seeds in a large bowl.
  • Stir mayonnaise, sugar, and apple cider vinegar together. Pour over broccoli mixture and toss until well combined.

Very different from the usual broccoli salad with sunflower seeds and raisins. I have no idea where this recipe originally came from we have been making it in our family for at least 25 years, and each time I bring it to pot-lucks or cookouts I am always asked for the recipe. I usually serve it with our Thanksgiving meal also just to have something fresh and crunchy. I hope you enjoy it too.

1 -2 head broccoli, washed and chopped stems,leaves and leaves all,if the stems are large,slice them thinner and then cu
1 cup celery, sliced on the diagonal
1/2 cup sliced ripe olives, drained
1 (8 ounce) can sliced water chestnuts, drained
1 (4 ounce) jar mushrooms, drained,do not substitute fresh
1 (5/8 ounce) package Good Seasonings Italian salad dressing mix
1 (16 ounce) bottle Italian salad dressing

Steps:

  • Open the liquid salad dressing and pour the dry mix into it.
  • You may have to poke the powder down with the tip of a knife to allow it to be mixed completely.
  • Re-cap and shake to mix.
  • Put all the remaining ingredients in a large bowl.
  • Pour the salad dressing over all and stir gently.
  • Cover with plastic wrap and chill at least 12 hours, and overnight is okay.
  • Give it a stir once or twice when you think about it.

2 heads broccoli, cut into florets
1 head cauliflower, cut into florets
1 medium carrot, shredded
¼ medium red onion, minced
5 slices cooked and crumbled bacon
1 cup mayonnaise
¼ cup red wine vinegar
1 tablespoon cayenne pepper sauce (such as Frank's® RedHot®)
½ teaspoon garlic powder
salt and ground black pepper to taste

Steps:

  • Bring a large pot of water to a boil. Add broccoli and cauliflower florets to the boiling water and cook for 3 minutes. Drain, then transfer florets to a bowl of ice water to cool.
  • Whisk mayonnaise, vinegar, pepper sauce, garlic powder, salt, and pepper for dressing together in a bowl.
  • Remove florets from the ice water and put on paper towels to dry.
  • When ready to serve, transfer florets to a large bowl. Mix in carrot, onion, and bacon. Pour in dressing and toss until well distributed. Let rest for 5 minutes before serving.
