Shrimp with mango salsa is a zesty dish made from scratch with fresh ingredients. It's the perfect lunch or dinner recipe for hot summer days.

3/4 cup fresh cilantro leaves, packed
3/4 cup fresh basil leaves
1 green onion, roughly chopped (green + white parts)
2 garlic cloves
4 Tbsp. olive oil, plus extra for cooking shrimp
2 Tbsp. fresh lemon juice
2 Tbsp. fresh lime juice
1/2 tsp. kosher salt
Freshly ground black pepper, to taste
1 1/2 lbs. large shrimp (31/40), deveined and peeled
Rice, for serving
2 ripe mangoes, diced
1 avocado, pitted and diced
1/2 red bell pepper, seeded and diced (about 1/2 cup)
3 green onions, chopped (about 1/3 cup)
1/4 cup chopped cilantro
1 jalapeño, seeded and minced
2-4 Tbsp. fresh lime juice
Kosher salt and freshly ground black pepper, to taste

Steps:

  • In a bowl of a food processor, combine cilantro, basil, green onions, garlic, 2 tablespoons of olive oil, lemon juice, lime juice, salt, and pepper. Pulse until the mixture is smooth.
  • Place the shrimp into a large ziploc bag and pour the marinade, tossing to coat. Marinate in refrigerator for 30 minutes. While shrimp is marinating, prepare your salsa.
  • Heat a large sauté pan over medium/high heat. When the pan is hot, add oil and swirl to coat. Remove the shrimp from the marinade with a pair of thongs and add to the pan. Sauté for about 3 minutes or until thoroughly cooked.
  • Serve over cooked rice with a side of mango salsa.
  • In a medium bowl, combine mangoes, avocado, red bell pepper, scallions, cilantro, and jalapeño. Drizzle with lime juice, season with salt and pepper, and mix well. Let stand at room temperature for about 10 minutes before serving.

2 large mangoes, peeled, pitted and finely diced
Juice of 2 limes
1 jalapeno, seeded and finely diced
1/2 red onion, finely diced
1 1/2 pounds colossal shrimp, peeled and deveined
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
Plantain chips, for serving

Steps:

  • Toss together the cilantro, mangoes, lime juice, jalapeno and red onions in a medium bowl. Divide half of the mixture among 4 glasses with a wide mouth, reserving the remaining half to top with.
  • Meanwhile, preheat a grill or grill pan to medium-high heat.
  • Add the shrimp to a large bowl and toss with the oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Grill the shrimp on each side until opaque and slightly charred, 1 to 2 minutes.
  • Add the shrimp to the 4 glasses with the salsa and top with the remaining salsa. Garnish with a plantain chip.

1 bunch basil, washed
1 cup olive oil
1 cup barbecue sauce
1/2 cup pureed mango (from one cup of chunks)
2 pounds large shrimp, peeled and devined
6 ears fresh sweet corn
1 small bunch cilantro washed
pinch of salt
pinch ugar
1 tablespoon butter

Steps:

  • Soak skewers in cold water. Combine basil and oil in blender and puree until smooth. Let oil steep for 1 hour. Strasin through a fine strainer and set aside. Combine barbecue sauce and mango puree and set aside. Divide shrimp into 4 portions and thread onto skewers. Take corn kernels off cob with a knife and place in a mixing bowl. Toss corn with cilantro and season woth salt, pepper and sugar. Grill shrimp pm skewers until pink about 3 minutes on each side. Brush with the barbecue sauce, mango sauce. Meanwhile heat butter in saucepan and saute the corn mixture on medium heat, until heated through. Place hot corn in center of plate. Top with shrimp and decorate around the corn with basil oil.

I recently saw this recipe for mango salsa made on an episode of The Barefoot Contessa. This particular show was featuring "healthy" recipes for a change, and this version of a mango salsa simmered on the stove top, then finished with fresh herbs sounded quite good. The original recipe had seared tuna steaks served over the salsa, but I chose to mix in some sauted shrimp as well. Also, on the show, Ina Garten uses fresh mint leaves, but I prefer to use a mix of fresh cilantro and basil, just to be different.

1 tablespoon olive oil
2 diced yellow onions (about 1-1 1/2 cups)
1 1/2 teaspoons minced garlic
2 teaspoons minced fresh ginger
2 ripe mangoes, peeled, seeded and diced
1/3 cup freshly squeezed orange juice
2 teaspoons light brown sugar
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1 -2 teaspoon minced jalapeno pepper, to taste
2 teaspoons basil (your choice) or 2 teaspoons mint (your choice)
1 1/2 lbs shrimp or 2 tuna steaks

Steps:

  • Saute olive oil, onions, and ginger in a large saute pan over medium low heat for about 10 minutes, or until the onions are soft and translucent.
  • Add minced garlic and cook for another couple minutes.
  • Next, add the diced mangos and simmer over low heat for another 10 minutes.
  • Ad orange juice, brown sugar, salt, pepper and jalapeno.
  • Simmer on low for another 10 minutes or until orange juice is reduced, stirring occasionally.
  • Remove from heat and add the fresh herb of your choice (cilantro, basil or mint).
  • For shrimp: Peel and devein shrimp, and toss with salt and pepper to taste.
  • Saute in a pan over medium high heat until pink about 7-10 minutes.
  • For tuna: preheat saute pan over high heat.
  • Season tuna steaks with salt and pepper on both sides.
  • Sear steaks for 2-3 minutes on both sides, until outside is browned, but the inside is still rare.
  • Serve with mango salsa!

1 cup millet
Salt
2 tablespoons neutral oil
4 ears fresh corn, shucked, with kernels stripped off cobs
1 tablespoon cumin seeds
Freshly ground black pepper
8 ounces peeled shrimp, roughly chopped
1 small red onion, chopped
1 mango or 2 peaches, peeled and chopped
4 cups arugula
1/2 cup basil, chopped
Juice of 2 limes
3 tablespoons olive oil

Steps:

  • Put the millet and a large pinch salt in a medium saucepan with water to cover by about an inch. Bring to a boil, then adjust the heat so the mixture bubbles gently. Cook, stirring occasionally until the millet is tender, 20 to 30 minutes. Add water if necessary to keep the grains covered; if any liquid remains by the time the millet is tender, strain it out.
  • While the millet cooks, put 1 tablespoon neutral oil in a large skillet over high heat. When hot, add the kernels and cook, shaking the pan occasionally. Keep the corn in a flat layer until all of the corn kernels are deeply browned (or even lightly charred) on at least one side. Add the cumin seeds and cook, stirring, until fragrant, about a minute. Sprinkle with salt and pepper, transfer to a serving bowl and wipe out the skillet.
  • Put the remaining tablespoon of neutral oil in the skillet. When it's hot, add the shrimp, sprinkle with salt and pepper, and cook, stirring occasionally, until the shrimp are pink all over and just cooked through, 2 to 3 minutes. Add them to the bowl with the corn.
  • When the millet is tender, add it to the bowl along with the onion, mango or peach, arugula, basil, lime juice and olive oil. Taste and adjust the seasoning. Serve warm or at room temperature.
