MAHI MAHI WITH MANGO-VANILLA COULIS



Mahi Mahi with Mango-Vanilla Coulis image

1 medium mango, peeled, seeded and cut into 1/2-inch pieces to yield 1 1/4 cups, or 1 1/4 cups frozen and thawed mango pieces
1/2 cup fresh squeezed orange juice
One 2-inch piece ginger, peeled and finely minced
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 vanilla bean, preferably Tahitian
3 tablespoons unsalted butter, at room temperature
1 tablespoon unsalted butter, at room temperature
1 tablespoon extra-virgin olive oil
Four 4-to-6-ounce mahi mahi or halibut fillets, each about 1/2-to-3/4-inch thick
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • For the coulis: Combine the mango, orange juice, 1/4 cup water, ginger, salt and pepper in a blender. Blend until smooth and pour into a small saucepan. Cut the vanilla bean in half lengthwise and scrape the seeds into the saucepan using a paring knife. Add the empty vanilla pods. Bring the mixture to a boil over medium-high heat. Reduce the heat and simmer, about 6 minutes. Remove and discard the vanilla pods. Whisk in the butter until smooth.
  • For the fish: Heat the butter and oil over medium-high heat in a 12-inch nonstick skillet. Sprinkle the fish with the salt and pepper on both sides. Cook the fish until the fish flakes easily with a fork, 6 to 8 minutes on each side.
  • Arrange the fish on a platter and spoon the coulis on top.

1 clove garlic, crushed or to taste

1 tablespoon vegetable oil

Steps:

  • In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
  • Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.
  • Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately.

1 cup jasmine rice
2 cups water
2 tablespoons chopped fresh cilantro leaves
2 scallions, green parts only, chopped
Salt
1 mango
1 teaspoon rice wine vinegar
1/4 cup grapeseed oil
1 lime, juiced
Salt and freshly ground black pepper
1 tablespoon chopped fresh cilantro leaves
1 clove garlic, quartered
1 teaspoon chopped fresh ginger
4 mahi-mahi fillets
1/4 cup grapeseed oil
Salt and freshly ground black pepper
2 scallions, chopped, for garnish

Steps:

  • For the rice: Combine the rice and water together in a large saucepan. Place the pan over medium heat and bring to a boil. Reduce the heat to low and cover the pot. Cook the rice for 20 minutes.
  • For the sauce: Peel the mango and slice the flesh off the pit. Dice the mango flesh.
  • In a large bowl, whisk together the vinegar, oil, and lime juice. Season with salt and pepper. Stir in the mango, cilantro, garlic, and ginger. Set aside.
  • Heat a large, nonstick saute pan over medium-high heat.
  • Rub the fish fillets with the oil, salt, and pepper. Place in the hot pan and sear until golden on 1 side, 3 to 4 minutes.
  • Turn the fish over and cook until cooked through, another 3 to 4 minutes. Be careful not to overcook the fish. You'll know the fish is done when the flesh springs back. Remove the fish to a plate.
  • When the rice is cooked, fluff it with a fork and gently stir in the cilantro and scallions. Season with salt, to taste.
  • Place a mound of rice on each plate. Top with mahi-mahi. Spoon the mango sauce over each fillet and top with chopped scallions. Drizzle the liquid from the mango sauce around the rice.

1/2 cup tamarind pulp (from a pliable block)
1 cup boiling-hot water
3 tablespoons plus 1 teaspoon packed palm or dark brown sugar
2 tablespoons soy sauce
2 tablespoons Asian fish sauce
1 tablespoon fresh lime juice
10 (1- to 1 1/2-inch-thick) pieces mahimahi fillet with skin (6 oz each)
2 tablespoons vegetable oil
1 teaspoon kosher salt

Steps:

  • Soak tamarind pulp in boiling-hot water in a small bowl, stirring occasionally, until softened, about 5 minutes. Pour mixture into a medium-mesh sieve set into a bowl, then force pulp through sieve, discarding seeds and fibers. Add brown sugar, soy sauce, fish sauce, and lime juice, stirring until sugar is dissolved.
  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas).
  • Brush fish all over with oil, then sprinkle with salt. Grill, skin sides down, on lightly oiled grill rack, covered only if using gas grill, until skin is crisp, about 4 minutes. Turn fish over and grill until just cooked through, about 6 minutes more. Brush tamarind sauce all over fish and grill 1 minute.
  • Serve with remaining sauce.

We love mahi mahi. I've probably made every type of recipe for grilled, pan-fried, baked and air-fried mahi mahi. This one hits the mark using items found in your fridge and pantry. It's pan fried and then simmered in a tasty sauce that reduces to a glaze.

4 (5 ounce) mahi mahi fillets
¼ teaspoon garlic powder, or to taste
¼ teaspoon ground paprika, or to taste
½ cup chicken broth
2 tablespoons orange marmalade
2 tablespoons Dijon mustard
cooking spray
salt to taste

Steps:

  • Pat mahi mahi fillets dry with a paper towel. Sprinkle both sides of fish with garlic powder and paprika.
  • Mix chicken broth, marmalade, and mustard together in a small bowl.
  • Spray a medium skillet generously with cooking spray. Heat skillet over medium heat and cook mahi mahi fillets until browned, about 6 minutes. Flip fillets and pour broth mixture into pan. Bring to a rolling simmer and cook until fish is cooked through and sauce has reduced by half, 5 to 10 minutes. Season with salt.
