Maori Bread image

From Riana Mahe. Adapted from Sam Choy's Polynesian Kitchen. As a substitute for a deep pot, this will sometimes be baked in a large coffee can, using foil as a lid. Prep time includes rising time.

1 tablespoon yeast
1 1/2 cups warm water
1 cup sugar
4 cups flour

Steps:

  • Combine yeast, water and sugar in a large mixing bowl.
  • Add all the flour at once.
  • Mix well.
  • Knead a few minutes until smooth and elastic.
  • Grease a deep pot with a lid.
  • Place dough in pot and cover.
  • Let rise for 1 hour, or until doubled in size.
  • Preheat oven to 350°F.
  • Bake, covered, for 45 minutes.
  • Remove lid and bake an additional 15 minutes.
  • Remove from oven and take bread out of pot.
  • Serve hot with honey-citrus butter.

Takakau (Maori Bread) image

Real Takakau has no rising agent (i.e. Baking Powder) just flour and water. This recipe is quite large in the quantity of flour used. It can be prepared and baked 35 minutes before a main meal is served. Or serve hot or cold with butter, jam and a cup of tea.

5 cups flour
5 teaspoons baking powder
1 pint approximately milk

Steps:

  • Pre-heat oven to 400F (200F)
  • Sift flour and Baking Powder into a large bowl.
  • Make a well in the center and pour in milk, combine mixture together.
  • Turn out onto a floured bench and knead gently with floured hands.
  • Roll to a flat round shape
  • Ideally lightly flour a round pizza tray and knead dough into the tray and to the inside of the edges.
  • Bake for approximately 30 minutes or until golden brown.
  • Serve hot and/or allow to cool. Leftovers when cooled can be covered with a damp tea-towel and/or stored in an airtight container.

Paraoa Parai - Fried Bread Recipe - (3.8/5) image

2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1-1/2 tablespoons lard, melted (butter may be substituted)
1/2 cup warm water
1/4 cup room temperature milk
4 cups oil for deep frying

Steps:

  • 1) Combine flour, baking powder and salt in a large bowl. Set aside. 2) Combine water, milk and lard or butter in a large measuring cup. 3) Slowly add liquids to flour and mix just until dough forms a ball. Knead in the bowl, about 10 times, to form a smooth ball that is not sticky. A small amount of flour may be added if needed. Cover dough with a damp towel or plastic wrap and let sit for 30 minutes. 4) Heat oil in a deep fryer or a high-sided pan. If using an electric pan set thermostat to 350 degrees F. 5) Divided dough into 8 approximately equal pieces. Pat on a floured board or with floured hands to form circles about 5 to 6-inches in diameter. Place dough, a piece at a time, into hot oil and cook for 2 minutes per side. Drain on paper towels. Repeat until all dough is used. Yield: 8 pieces.
