MAPLE DIJON GLAZED RAINBOW CARROTS
These easy rainbow carrots are roasted and drizzled with a sweet and tangy maple dijon glaze. Serve sprinkled with fresh herbs for an extra pop of flavor!

Steps:
- Preheat oven to 425 degrees.
- In a small bowl mix maple syrup, stone ground mustard, dijon mustard, garlic powder, and salt.
- Add carrots to a 13×9 inch baking dish. Pour half of the maple dijon mixture to the carrots. Using your hands toss the carrots to coat with sauce.
- Bake for 20-25 minutes, or until carrots are tender.
- Remove carrots from the oven. Top with the remaining sauce. Garnish with diced chives. (optional: fresh thyme as well)
- Serve.

- Peel the carrots and chop off the tops if desired. I left part of the green bits on because I like the way it looks, but totally up to you! Add to a large baking dish or tray. If your carrots are big (mine were pretty thin so I kept them whole) slice them into strips.

- Preheat the oven to 425. Slice your rainbow carrots in half and place them on a baking sheet. Drizzle the olive oil on top. Add salt and pepper. Roast them for 25-30 minutes or until fork tender.
- In a small bowl, add the dijon mustard, maple syrup, and a pinch of salt. Mix until combined. Taste to adjust seasoning. Want it sweeter? Add more maple syrup? Want it more tangy? Add more dijon mustard. If the sauce needs to be thinned out, add a splash of water and mix well.
- Once the carrots are done roasting, place them on a large plate or serving tray and drizzle them with the sauce. Add chopped parsley if desired for garnish. Serve while warm!
