Marinated Mozzarella Tomato Salad image

The most delicious summer salad! This marinated mozzarella tomato salad is quite possibly the best summer salad I've ever eaten! Loaded with garlic and herb marinated mozzarella, ripe summer tomatoes, fresh basil, and a healthy drizzle of balsamic glaze!

⅓ cup basil, chopped or torn
½ cup extra virgin olive oil
2 teaspoons lemon juice
2 small cloves garlic (or 1 large), grated
¾ teaspoon Maldon salt
¼ - ½ teaspoon red pepper flakes
2 (8-ounce) pearl mozzarella (small ball sized)
1 ½ pounds cherry tomatoes (or quartered plum tomatoes)
Prepared balsamic glaze (store-bought or homemade, see notes)

Steps:

  • MARINATE: Combine the olive oil, lemon juice, grated garlic, salt, red pepper flakes in a bowl and stir until mixed. Add 1 -2 torn basil leaves to the mix along with the mozzarella. Cover and allow to sit at room temperature for at least 1 hour and if possible, cover and refrigerate for 24-36 hours.
  • TOMATOES: An hour before serving, add the tomatoes to a medium bowl. Remove the mozzarella from the marinade and add to the tomatoes (don't toss out the oil!) Add the torn basil leaves, along with another big pinch of Malden salt and drizzle roughly 2 tablespoons of the oil on top and toss to combine. Allow the salad to marinate for 1 hour before serving. Taste and adjust with additional marinade oil or salt if the salad needs it before serving. Drizzle with homemade balsamic glaze and serve!

1 small shallot, minced
8 ounces dried fusilli

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the tomatoes, mozzarella and basil to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

Salt and black pepper
3/4 cup olives, such as Moroccan or niçoise
1/4 cup extra-virgin olive oil

Pinch of dried oregano
Pinch of red-pepper flakes
1 pound fresh mozzarella, cut into ¼-inch slices

  • Put cherry tomatoes in a large bowl. Season with salt and pepper. Add the olives and toss.

8 figs, stalks trimmed
4 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil, plus extra for drizzling
1 lemon, finely grated zest and juice
1 tablespoon fresh thyme, chopped
1 tablespoon mint leaf, chopped
10 ounces mozzarella cheese
2 ounces salad leaves
salt and pepper

Steps:

  • Cut each fig lengthways into four wedges. Make a marinade by whisking the vinegar, oil and lemon juice with salt and pepper to taste.
  • Stand the fig wedges up in the middle of a large shallow serving dish, keeping them close together.
  • Scatter the lemon zest and thyme on top, then drizzle with the marinade. Leave to stand at room temperature for 30 minutes.

When I eat it on its own, I sometimes add about a cup of any chunked, cold sausage (I suggest pepperoni or a lighter summer sausage). Any pasta is fine, but I like the orzo's size.

1 ½ cups cubed fresh mozzarella cheese
