1 lb small whole mushroom
1 tablespoon salt
1 quart water
1/3 cup oil
1/4 cup white wine vinegar
1 small onion, chopped
1/2 teaspoon peppercorn
1 bay leaf
1 teaspoon salt
1 pinch crushed red pepper flakes

Steps:

  • Dissolve 1 tablespoons salt in water;
  • Add mushrooms, soaking for 10 minutes.
  • Drain mushrooms and discard liquid.
  • In saucepan, combine salad oil, vinegar, onion, peppercorns, bay leaf, 1 teaspoons salt, and red pepper; Add mushrooms.
  • Bring to boil, simmering for 5 minutes or until mushrooms are tender.
  • Cool completely.
  • Place in glass bowl or jar and place in refrigerate overnight to blend spices.

For the mushroom lover. Here's a really nice appetizer for dinner parties. Always goes over well with my guests. I mooched this recipe off a close friend.

1 teaspoon garlic, chopped
1 medium onion, sliced
3 tablespoons olive oil
1/3 cup beef broth
1/2 hot red pepper flakes
2 -3 whole cloves
2 tablespoons tomato sauce
salt and pepper, to taste
1/2 lb small white mushroom

Steps:

  • Sauté garlic, onion in oil about 10 minute until onion is soft.
  • Add broth, pepper flakes, cloves and tomato sauce and boil 3 minutes. Simmer covered for a half hour, stirring occasionally.
  • Add salt and pepper.
  • Pour mixture over the whole mushrooms and marinate overnight in refrigerator.
  • Stir a few times while marinating.

  • Combine all ingredients and marinate for an hour or more in the refrigerator.
  • Place the mushrooms on a grill or in a lightly oiled pan and roll around until lightly browned.
  • Serve hot.

I was craving some marinated mushrooms one day and found that the deli mushrooms were a bit overpriced, so I made my own. If you like the flavor of fresh herbs, this is for you.

8 ounces fresh mushrooms
10 basil leaves
10 oregano leaves
5 sprigs thyme leaves
1 garlic clove
1/2 red pepper
2 tablespoons white vinegar
5 tablespoons oil
1 teaspoon sugar
salt and pepper

Steps:

  • Place cleaned mushrooms in a sealable container. Chop herbs and mince the garlic. Slice the red pepper into thin strips. Whisk together remaining ingredients. Combine all with the mushrooms. Let cool overnight in fridge.
  • If using dried herbs, I would suggest 1/2 teaspoons each of the basil and oregano and 1/4 tsp of thyme.
