- 1. To make the marinade you combine brown sugar, vanilla, bourbon, and water. Put in a plastic baggie.
- 2. Then peel and slice your peaches about 1/4" thin and add to the marinade. Make sure all the peaches are in the marinade. Refrigerate for about 30 minutes or longer if you can do this ahead of time.
- 3. Make sure you oil your grill sheet or pan. Remove the peaches from the marinade. You don't have to save this unless you want to drink it ;). Put them on the grill sheet, put the tray on a medium heat side of the grill.
- 4. Grill them, turning once, until warmed through. About 7-8 minutes per side.
- 5. I add the peaches to some strawberries and blueberries. Slice angel food cake and top with Cool Whip. I hope you enjoy this as much as we do.
GRILLED PEACHES
Steps:
- Right before cooking, slice the peaches along the seam and pit them. Coat them in oil for cooking, being sure to give them a thick, even coating. I prefer to toss them in a gallon size Ziplock bag along with the oil and gently rub the oil into the peach. This reduces mess, which is critical when you might be in the backyard, far from access to a sink. Don't use extra virgin olive oil, as the smoke point is lower and may cause the peaches to taste burnt and smoky. Grill the peaches skin side up for 5-6 minutes. When they begin to sizzle and shine, turn them over onto their skin and cook for another 6-7 minutes, or until they soften and lose a little bit of their shape. Serve immediately, with or without a garnish of whipped cream or ice cream. If you don't have room to eat all the peaches you've grilled, they can be reheated in the microwave for about 30 seconds, and they still taste great the second time around.

BALSAMIC-MARINATED PORK CHOPS & GRILLED PEACHES

Steps:
- In a small bowl, whisk together vinegar, oil, honey and rosemary.
- Reserve 2 Tbs. and add the rest to a 1-gallon zip-top bag.
- Add pork to bag and refrigerate for 1 hour, turning occasionally.
- Preheat broiler to high or coat a grill pan with cooking spray and heat to medium-high over stove.
- Remove pork from fridge, discard marinating liquid and season pork with salt and pepper.
- Broil pork or cook in grill pan until pork is opaque throughout and feels firm to the touch. About 5-6 minutes per side.
- Meanwhile, cook peaches under broiler or in a grill pan over medium heat until tender and juicy, 3-5 minutes.
- Transfer to plate, season with salt and pepper and brush with reserved marinade.
- To serve, place a pork chop on each of 4 plates and top with 2 peach halves. Garnish with thyme leaves.
