MARINATED ROAST LEG OF LAMB - GRILLED THEN ROASTED
Fresh herbs and a citrus style marinade make this a fresh and tender Leg of Lamb. Grilled to sear and then oven roasted for best tenderness.

- Take a good sized boneless leg of lamb and bring to room temperature. It will generally come with a elasticized net. Remove the wrap and retain. Spread out the lamb like you were going to butterfly it. But, you're not going to butterfly. Remove all fat from the lamb. Especially the outside layer and also any fat from the inside. Removing the fat will help to remove the wild taste from the lamb. Salt and pepper inside and outside then, add the herbs to the inside like a stuffing. Put the lamb back into original oval shape. Tie with cooking twine to keep the herbs inside, if necessary. Coat with a high heat vegetable oil. In a small bowl, combine remaining ingredients and stir to evenly distribute. Place lamb in a gallon size sealable bag and pour liquid mixture over the lamb. Make sure to evenly distribute over the lamb. Refrigerate for 2-4 hours. Remove from fridge and allow to come to room temperature (30 minutes). Remove twine and herbs from the inside of the meat and discard. Lay the meat flat for cooking. Preheat grill to sear at 450 degrees F. Grill until there is a good sear on both sides of the meat; approximately 10 minutes per side. Do not overcook just do a sear. Preheat oven to 300 degrees F when ready to place meat on grill. Place meat on a grilling rack and cook in moderate oven for around 30 - 45 minutes more or until a meat thermometer inserted into the middle of the roast reads 120-125 degrees for rare after resting; or 130-135 degrees for medium rare after resting. Watch the thermometer! If the meat reaches 130 - 135 then turn off the smoker and let the meat rest until close to dinner time. Lamb is best served at no more than medium. If not grilling sear meat in hot skillet coated with high heat vegetable oil for 10-15 minutes then into oven to 300 for an additional using instructions from the above paragraph.

GRILLED MARINATED LEG OF LAMB
Steps:
- Combine oil, lemon juice, garlic, oregano, salt, and pepper in sealable plastic bag. Add lamb and seal bag, pressing out air. Turn bag to coat lamb, then put bag in a shallow baking pan and marinate, chilled, turning bag over occasionally, at least 8 hours.
- Bring lamb to room temperature, about 1 hour, before grilling.
- Prepare grill for cooking over direct heat with medium-hot charcoal (moderate heat for gas); see Grilling Procedure.
- Remove lamb from marinade (discard marinade) and run 3 or 4 skewers lengthwise through lamb about 2 inches apart. Grill on a lightly oiled grill rack, covered only if using gas grill, turning over occasionally and, if necessary, moving around on grill to avoid flare-ups, until thermometer registers 125 to 128°F, 8 to 14 minutes total for medium-rare.
- Transfer lamb to a cutting board and remove skewers. Let lamb stand, loosely covered with foil, 20 minutes. (Internal temperature will rise to 135°F while meat stands.) Cut across the grain into slices.

- Combine the yogurt, olive oil, lemon zest and juice, rosemary, salt, and pepper in a large non-reactive bowl. Add the lamb, making sure it is covered with marinade. Marinate in the refrigerator, covered, overnight or for up to 3 days.
- Bring the lamb to room temperature. Prepare a charcoal grill with hot coals. Scrape the marinade off the lamb, wipe the meat with paper towels, and season it generously with salt and pepper. Brush the grill with oil to keep the lamb from sticking, and grill on both sides until the internal temperature is 120 to 125 degrees for rare. This will take 40 minutes to 1 hour, depending on how hot the grill is.
- Remove the lamb to a cutting board, cover with aluminum foil, and allow to rest for 20 minutes. Then slice and serve.

- Sprinkle with the sugar, and then top with the raspberries.
- Bake for 20 to 25 minutes, until tender.
- Heat the broiler and place the fruit about 5 inches below the heat and broil for 5 to 8 minutes, until the berries release some of their juices.
- Remove from the broiler and sprinkle with orange juice.
- Serve warm, at room temperature, or chilled over grilled lamb.

DELICIOUS SIMPLE MARINADE FOR ROAST LEG OF LAMB
This was a recipe that I originally got from allrecipes.com and have since modified. It is very simple and quick to make, but it yields one of the most delicious tasting roasts I've ever had. Be prepared for people to ask for seconds!

- Mix together all the ingredients. Taste and make adjustments to seasoning according to taste.
- Using a sharp knife, make several small slits into the leg of lamb to allow marinade to penetrate. Thoroughly baste the leg of lamb in the marinade.
- Place the lamb, along with the marinade, in a dish big enough to hold the meat. Pour the remaining marinade over it, and place in the refrigerator.
- Allow to marinate overnight, turning once. Baste meat once more before putting into the oven to roast.

- Combine garlic, rosemary, salt and pepper in small bowl. Mash with fork to form coarse paste. Place lamb in shallow baking dish. Spread half of garlic paste over each side. Cover and refrigerate at least 2 hours or overnight. Bring to room temperature before cooking.
- Prepare barbecue (medium-high heat). Grill lamb until brown and crusty on outside and thermometer inserted into thickest part registers 130ºF for medium-rare, turning occasionally, about 25 minutes. Let stand 10 minutes. Cut on diagonal into thin slices and serve.
- Variation:.
- Add 2/3 cup red wine, 1/4 cup red wine vinegar, and 3/4 cup olive oil to the marinade. Refrigerate overnight.

- In a small bowl, combine the honey, mustard, rosemary, ground black pepper, lemon zest and garlic. Mix well and apply to the lamb. Cover and marinate in the refrigerator overnight.

- Spread the lamb on a work surface. With a boning or paring knife, cut between the muscles and separate them using your fingers. Trim away any excess fat and gristle.

- Prep. Start the day before if you can by removing as much of the thick fat cap on the surface as possible and all the silverskin underneath. Remove the bones, or not. Your choice.
- Now gash the surface by stabbing it repeatedly about 1/2" deep and 1" apart or run a sharp blade across the surface in a checkerboard pattern making squares 1 to 2" wide. Click here to read more about the technique of gashing. Sprinkle the salt all over the meat going lighter in the thinner areas. This is called dry brining. Click here to learn more about the concept. Now use butcher string and tie the whole floppy mess into as much of a log shape as possible so it will cook evenly. Your string and knots are going to look sloppy, and you may have problems with loose flaps of meat on the ends, but get them tucked in. I've been known to use toothpicks, and even turkey lacers (shown here). Put it in a pan, and leave it in the fridge overnight.
- Make the Dolly's Lamb Rub And Paste and swab the paste all over the meat and deep into the gashes.
- Fire up. Preheat the cooker in a 2-zone setup so the indirect side is about 225°F. I know a lot of recipes call for higher temps, but I'm here to tell you, this cut performs much better at low temps so the tough connective tissues and copious fat can liquefy (read more about this concept in my article about meat science). If you have a digital thermometer with a probe that can be left in, insert it now. If you are cooking bone-in, make sure your thermometer probe is about 1" away from the bone in the thickest piece of the meat. If you wish to add some smoke flavor, add a small amount of dry wood now, perhaps a handful, depending on your cooker. The more ventilation the more wood.
