CHILI-CUMIN FRIED FISH
Steps:
- Sprinkle fish fillets generously on all sides with coarse salt; let stand 30 minutes. Rinse fish to remove salt and pat dry with paper towels.
- Place eggs and matzo meal in separate large shallow bowls. Mix chili powder, cumin, black pepper and 1/2 teaspoon coarse salt in small bowl to blend. Sprinkle fish generously with chili powder mixture. Dip fish into eggs, then into matzo meal, coating completely. Transfer fish to waxed paper.
- Heat 1/4 cup oil in heavy large skillet over medium-high heat. Working in batches, fry fish in single layer until just opaque in center and golden brown, adding more oil if necessary, about 5 minutes per side. Transfer fish to paper towels and drain.
- Arrange fish on platter. Garnish with lemon wedges and cilantro sprigs.
MATZO MEAL COATED FISH FILLETS
I wonder if posting this recipe is completely pointless since everyone in the world who's ever bought a box of matzo meal already knows how to make this but just in case someone in some far corner of the universe doesn't here's a delicious way to make fried fish which is made this way all year round but especially on Passover.

Steps:
- Dip fillets in egg and then both sides in matzoh meal which has been mixed with spices and parsley.
- Fry in pan with hot oil over a medium flame.
- When good and crispy on both sides remove and serve with lemon.
- Enjoy!

- Batter the egg with the oil.
- Pass the fish through the egg and then through the milled flax seed, until it is well coated with it.
- Cook on both sides at low flame.
- Serve immediately when they are crispy, add the side dishes of broccoli and brown rice.
