8 large mushrooms, quartered
1 large zucchini, quartered
1 large green bell pepper, cut into pieces
1 large red onion, cut into pieces

Steps:

  • Preheat an outdoor grill for high heat.
  • Stir olive oil, balsamic vinegar, lemon juice, rosemary, and oregano together in a bowl.
  • Place mushrooms, zucchini, bell pepper, and onion in a deep grill-safe pan and brush with the oil mixture.
  • Place the pan on the preheated grill and cook until tender, turning once, 10 to 15 minutes.

1 1/4 cups nonfat plain Greek yogurt
1 clove garlic, finely grated
1 tablespoon chopped fresh parsley
1 1/2 teaspoons dried oregano
8 bone-in chicken thighs, skin removed
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil, plus more for brushing
1 large eggplant, quartered lengthwise
1 teaspoon smoked paprika
8 baguette slices
3 medium tomatoes, quartered

Steps:

  • Preheat a grill to medium high. Mix the yogurt, garlic, parsley and oregano in a bowl. In a separate bowl, toss the chicken with 1/4 cup of the yogurt mixture, 1/2 teaspoon salt, and pepper to taste. Stir the olive oil into the remaining yogurt mixture and set aside.
  • Brush the cut sides of the eggplant with olive oil and sprinkle with salt and the smoked paprika. Brush the bread with olive oil.
  • Brush the grill grates with olive oil. Grill the chicken, turning once, until cooked through and a thermometer inserted into the thickest part registers 160 degrees F, 15 to 20 minutes. Meanwhile, grill the eggplant, skin-side down, until softened, about 15 minutes; turn and continue cooking until tender, about 5 more minutes. Grill the tomatoes and bread, turning once, until marked, 2 to 3 minutes.
  • Serve the chicken, eggplant, tomatoes and bread with the yogurt sauce.

1 red pepper , deseeded and quartered
1 aubergine , sliced lengthways
2 courgettes , sliced lengthways
2 tbsp olive oil
410g can haricot bean , rinsed
1 garlic clove , crushed
100ml vegetable stock
1 tbsp chopped coriander
lemon wedges, to serve

Steps:

  • Heat the grill. Arrange the vegetables over a grill pan and brush lightly with oil. Grill until lightly browned, turn them over, brush again with oil, then grill until tender.
  • Meanwhile, put the beans in a small pan with the garlic and stock. Bring to the boil, then simmer, uncovered, for 10 mins. Mash roughly with a potato masher, adding a little water or more stock if the mash seems too dry. Divide the veg and mash between 2 plates, drizzle over any leftover oil and sprinkle with black pepper and coriander. Add a lemon wedge to each plate and serve.

16 jumbo shrimps, peeled and deveined
1 1/2 pounds fresh tuna, in 16 1 1/2-inch cubes
Juice of 1 lemon
3 tablespoons extra-virgin olive oil
1/2 teaspoon ground cumin
1 teaspoon finely minced fresh coriander
Salt and freshly ground black pepper
2 chorizo sausages
2 sweet red peppers, cut in 24 1 1/2-inch squares
1 lemon, quartered

Steps:

  • Put the shrimp and tuna in a shallow dish. Beat the lemon and oil together with the cumin and coriander. Season with salt and pepper and pour over the seafood, turning the seafood to coat it. Put in the refrigerator to marinate 30 minutes.
  • Put 16 12-inch wooden skewers in water to soak.
  • Saute the chorizo in a skillet until lightly browned. Remove from the skillet and set aside to cool. Cut in quarters.
  • Preheat a grill. Holding two skewers about half an inch apart, thread each pair of skewers with a shrimp, a piece of pepper, a piece of tuna, a piece of chorizo, piece of tuna, a piece of pepper and a shrimp. Repeat, threading eight skewers.
  • Grill the brochettes until the shrimp are cooked and lightly charred and the tuna is cooked on the outside but still rare within, about 10 minutes. Serve at once with lemon wedges.

3 tablespoons lemon juice
3 tablespoons chopped fresh parsley
1 tablespoon chopped fresh or 1 teaspoon dried rosemary leaves
2 teaspoons chopped fresh or 1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
1/4 teaspoon pepper
2 large cloves garlic, finely chopped
4 fresh Italian sausages (about 1 lb)
1/2 cup water
1 small onion, chopped (1/4 cup)
4 boneless skinless chicken breasts or thighs (about 1 1/4 lb)
1-lb beef boneless top sirloin steak, about 1 inch thick

Steps:

  • In small bowl, mix all Herbed Lemon Oil ingredients. Cover and let stand at least 1 hour to blend flavors.
  • In 2-quart microwavable casserole, place sausages, water and onion. Cover and microwave on High 5 minutes; rearrange sausages. Re-cover and microwave on Medium (50%) 5 to 7 minutes or until sausages are no longer pink in center. Remove sausages; discard onion and water.
  • Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Brush all sides of chicken, beef and sausages with oil mixture.
  • Grill meats uncovered over medium heat, brushing frequently with oil mixture and turning occasionally, for the following times: Grill beef 5 minutes. Add chicken and continue grilling. Grill beef 12 to 16 minutes or to desired doneness. Grill chicken 15 to 20 minutes or until juice is clear when center of thickest part is cut (170°). Add cooked sausages during the last 5 to 10 minutes of girlling to brown.
